Prior to opening Capitol City Crawfish: Brandon LeGrange earned a degree in Industrial Technology from Louisiana State University (LSU). He worked as a Environmental, Safety and Security Manager for a Medical Air Gas Company for 20 plus years. His strength has always been his people skills. He was hired immediately out of College at the managerial level. Within 5 years he was promoted to corporate level over multiple manufacturing sites. In this new career Brandon’s family experience in the restaurant business and their connections in the seafood suppliers network uniquely provide an advantage over his competitors. Scott Treme, Store Manager, earned a degree in Business Management from Hawaii Pacific University. He is retired Military with over 30 years managerial and Quality Assurance experience.

The LeGrange family has been in the Crawfish Business , since 1958. My Grandparents operated a family restaurant business at Bayou Pigeon , LA. My uncles, Carey and Carlton created and operated Café LeGrange here in Mid City Baton Rouge. Brother Ben is General Manager of Atchafalaya Crawfish Processing . It is in this tradition that we opened Capitol City Crawfish.

Capitol City Crawfish opened on Ash Wednesday 2012, I used my life savings and sold my dream lot to start this business. We built a first class Boiling Room, to the existing building. It was time consuming and expensive to meet all EBR Parish Food Service building codes. Same codes as a restaurant. We are in it for the long haul! Our first year sales exceeded our projections and expectations. Our new season started , in Jan. this year. Sales thus far are up 50% from last year.

Capitol City Crawfish provides the following products. • Live crawfish • Hot Boiled Crawfish and trimmings, eg., boiled seasoned corn, boiled seasoned potatoes, boiled seasoned pork sausage. • Hot Boiled Shrimp • Special Pre – packaged seafood boil seasonings • Frozen pre cooked Crawfish Etouffee • Cold Soft drinks .

Mid City’s quality of life - or joie de vivre - is one of the main reasons we love being in the mid city. The folks enjoy crawfish boils and other traditional Louisiana cooking. Capitol City Crawfish is walking distance from Baton Rouge Community College and is located in the busiest commercial section of MidCity. Capitol City Crawfish is focused attracting customers traveling through / to the busy Government Street corridor and to the Community College area and who would want to pick up live / or boiled crawfish quickly on the way home.

2013 Objectives: Expand our product offerings; Crab meat, Stuffed Crabs, Catfish Filets, Frozen Shrimp, Cajun Foods such as Boudin, Boudin Balls, Crab Claws. Purchasing the necessary display case, will be necessary for this. Introduce a second Crawfish Boiling rig for Crawfish Boil catering. Upgrade our signage for better visibility from the street Add a special private room where a business person can have a small crawfish boil for business meetings with special built boiled crawfish eating tables. We anticipate becoming a year round business versus a seasonal business and adding an additional employee.
