“LET’S FACE IT: IF YOU AND I HAVE THE SAME CAPABILITIES, THE SAME ENERGY, THE SAME STAFF, IF

MUSHROOMSOne of the easiest and healthiest ways to add flavor and aroma to any dish is to include mushrooms. But then there’s the hard part—which kind of mushroom? It’s a question that has perplexed everyone from the ancient Egyptians to today’s Celebrity Chef.

WOODLAND FOODS answers that question by offering more than 20 different varieties of dried mushrooms in more than 100 different formats. The variety ranges from the mainstream Button Mushroom to the exotic Candy Cap. They are practical and cost-effective, as they have a long shelf life compared to fresh. In addition to individual mushroom varieties, we also offer our own custom blends.

BASIC PREPPourhotwateroverdriedmushroomsandsteepuntilfullyrehydrated.Steeping times will vary by type of mushroom. Generally, one ounce of dried mushrooms reconstitutes to four ounces.

Mushrooms add flavor and substance to any dish. They’re great additions to salads, omelets, sauces and soups. Sautéed mushrooms liven up poultry, pork, beef and fish dishes. Add Mushrooms to your grandmother’s treasured pasta sauce recipe or simply mix some Mushrooms into pasta with a little olive oil and parmesan cheese—no sauce required!

MUSHROOM STYLES EXPLAINEDWHOLE: The mushroom’s entire cap and part of its stem are expertly dried to preserve their integrity.

PIECES: Pieces of dried mushrooms in varied sizes and shapes.

SLICED: Whole mushrooms are sliced and then dried.

KIBBLED: Whole mushrooms are dried and then diced.

POWDER: Dried mushrooms are ground into a fine powder. Made from 100% ground mushrooms with no additives or fillers.

NATURALLY OCCURRING UMAMIParmesan cheese has it. So does ketchup… and so do mushrooms, particularly Shiitakes and Porcinis. It’s umami, and it’s changing the way everyone from top chefs to global food manufacturer executives think about food. Americans are taught from an early age that there are four basic tastes: sweet, salty, sour and bitter. Umami, dubbed “the fifth taste,” is one of those elusive sensations that are instantly recognizable when experienced, but hard to categorize. So what describes the allure of chicken noodle soup? Or how the satisfying grittiness of anchovies “finishes” a well-crafted caesar salad? Or the pleasure one gets from the deeply aromatic flavor of sautéed mushrooms against the tongue? To an increasing number of chefs and food industry insiders, the answer is umami, understood and appreciated as “the fifth taste.”

The food industry is embracing umami as part of an effort to deliver highly flavored foods to consumers while also cutting back on fat, salt, sugar and artificial ingredients. At the same time, more consumers are scrutinizing food labels for chemically or artificially produced (or even natural but unhealthy-sounding) ingredients. Since many Americans have claimed sensitivities to Monosodium Glutamate (MSG)—a synthetically manufactured source of umami—numerous studies have been conducted to find out what naturally occurring ingredients can satisfy our “fifth taste.” One way to naturally boost umami levels in your recipes is by incorporating mushrooms. And the savory flavor of rehydrated dried mushrooms are particularly umami-rich!

TRUFFLESMany people consider these tasty, elusive gems true diamonds in the rough. Chefs, in particular, prize these mushrooms. Ask any chef to name the most prestigious ingredient they want to incorporate into their cooking and chances are the answer is truffles.

Throughout history truffles have ranked among the most in-demand food delicacies, prized for their heady aroma and exquisite taste. One legend suggests truffles were sent to Earth as a gift from God, in the form of a lightning bolt. Other legends credit truffles with granting fertility and eternal life to those people lucky enough to indulge in them. All we know for sure is that truffles add an other-worldly flavor to any dish.

BASIC PREPBEANS: Soak dried beans in cool water overnight. Drain, then place in a large pot and cover with fresh, cool water. Bring to boil. Cook 3 minutes then reduce heat and simmer, covered, until tender.

LENTILS: Lentils do not require soaking before cooking. Add lentils to simmering water to cover and cook, skimming any foam from water, until tender.

PEAS: Soak dried whole peas in cool water overnight. (Itisn’tnecessarytosoaksplitpeas.)Drain, thenplaceinalarge pot and cover with fresh, cool water. Bring to boil. Cook 3 minutes then reduce heat and simmer, covered, until tender.

HEIRLOOM BEANSHeirloom crops are the products of a time when the flavor, texture and taste of food were the chief concerns of the people who grew it. Like heirloom tomatoes and heritage breeds of livestock, heirloom beans offer us a direct link to the bounty of the past while ensuring the variety of agricultural products for the future.

We are proud to offer heirloom varieties that have been grown since before the rise of industrial agriculture in the 1950s—some were first grown long before then. We’ve hand selected suppliers from around the world who have grown these exact varieties season after season, generation after generation. All our heirloom varieties are free of genetic modifications and are grown without industrial farming practices and chemical fertilizers.

Our huge range of heirloom varieties means you can find the sizes, flavors, colors and textures you need to perfectly complement your products. Find our complete list of heirloom products on page 112.

Thankfully, times have changed since this hearty, ancient seed was first domesticated more than 8,000 years ago. It’s amazing to think that the plethora of rice varieties available today may have sprung from just two sub-species of that original domesticated rice, grown in two separate parts of Asia.

SUN-DRIED TOMATOESAdding Sun-Dried Tomatoes to a recipe will ramp up the flavor intensity of the dish. Their concentrated flavor will reinvent any traditional recipe that usually calls for fresh tomatoes.

Before they became so prominent on the specialty food scene, Sun-Dried Tomatoes were considered little more than a practical alternative to fresh tomatoes. But today, even with modern canning techniques, sun-drying remains a popular way to preserve tomatoes because of the resulting texture, taste and aroma. Sun-drying removes water from tomatoes, leaving behind nothing but goodness. Their taste is sweeter than fresh because thesugarsareconcentratedintotheflesh.Unlikefreshtomatoes, Sun-Dried Tomatoes will last in airtight containers for more than a year. 46 GRAINS & CORN WOODLANDFOODS.COM

GRAINS & CORNThe cultivation of grains and corn shifted the human race from societies based on hunting and gathering to stable cultures relying on agriculture to supply a steady food source.

Our ancient ancestors probably realize that the corn and whole grains they had begun planting were high in protein and packed with other nutrients. All they knew was that as long as they continued to cultivate these precious commodities, they’d continue to eat well.

Eating well is as important today as it was back then. Modern consumers have their choice of a multitude of varieties of corn and grains, but they have modern concerns about what they eat, too. Never before have so many people been so concerned with the nutritional content of what they eat, hungry for alternatives to conventional wheat flour, or interested in eating only organically grown products.

Our culinary adventurers have traveled the globe to seek out more than 50 heritage varieties of corn and ancient grains that are not only full of vital nutrients, but also offer a stunning array of colors, a vast selection of textures and an incredible assortment of flavors. We’ve sourced organic and conventional suppliers, and even offer a line of gluten-free flours milled from ancient grains. VISIT WOODLANDFOODS.COM

FEATURES & BENEFITS• Grains are high in antioxidants, vitamin B and E, iron and fiber• These healthy staples will last a long time on the shelf• Many cooked whole grains can be frozen for later use because their intact bran layers protect their texture and flavor

SURPRISING USES FOR GRAINS & CORN

• Season cooked grains with cinnamon and sugar for healthy desserts

• Use sweet corn in cakes or custard• Turn soup into a hearty meal with the addition of cooked grains

• Use grain and corn flours for nutrient-rich baking• Mix cooked grain into ground meat to provide

fiber and texture

BASIC PREP

Dried corn should be soaked overnight and then simmered. Grains need only to be simmered. Soaking and simmering times will vary from product to product.

Cooking grains and corn can almost feel like cheating. They’re so easy to prepare and delicious without adding any other food or ingredients. Our suggestion? Cook these grains often! Add extra color and texture to posole with purple corn. Pass on pasta and serve Farro instead as a side dish. Make it a point to cook super grains like Quinoa once a week.

TRADITIONAL COUSCOUS BASIC PREPIn a saucepan, add couscous to two cups of boiling water. Stir and let stand for 5 minutes. Fluff with fork and serve. Yields three cups.

Couscous earns high marks because it’s a quick, easy pasta that comes in two distinct textures—the traditional crumb or the Middle Eastern pearl. Consider making couscous instead of rice or other pastas anytime. Couscous can perk up salads and transform soups into meals. It’s also perfectly matched with our Ras el Hanout in Moroccan dishes or used with our Curries for a simple to prepare weeknight dinner.

Couscous can be used as a creative substitute for traditional pasta, rice—or even breakfast cereal. Bulk up soups with couscous and add more flavor and texture to salads. Couscous goes with everything!

Because couscous absorbs other flavors so well, it’s easy to add flavors as part of the basic preparation. Sprinkle with nuts or raisins. Drizzle a little olive oil into the mix to make a rich, binding texture. For a new take on paella rice, add green peas and paella spices to Couscous.

THE SURPRISING VARIETY OF ASIAN NOODLESOur variety of tastes and textures of Asian Noodles affords diners the opportunity to mix and match noodles to create their own traditional dishes.

CELLOPHANE NOODLES are made of mung beans, so they are gluten-free. They are often called glass noodles because of their transparency. They have a chewy, slightly sticky texture and a mild flavor, and tend to absorb the flavors around them.

LO MEIN NOODLES are made from wheat flour. Their texture is elastic and durable, with a taste and feel similar to spaghetti.

PAD THAI NOODLES are made of rice and are gluten-free. They are similar to fettuccine in texture with a mild, pleasant flavor.

SOBA NOODLES are made from buckwheat flour and have an earthy taste. These thin, chewy noodles are popular in Japanese cuisine. Our Green Tea Soba Noodles are made with powdered green tea for an extra layer of flavor.

RAMEN NOODLES, (sometimes called chuka) are a classic, slightly chewy Japanese noodle often served in rich broth.

UDON NOODLES are made of wheat. They are thick, meaty Noodles, popular in Japanese soups.

SOMEN NOODLES are made of wheat. These thin, white Japanese noodles are often served cold with a dipping sauce.

VERMICELLI RICE STICKS are made of rice, which makes them gluten-free. Like Cellophane Noodles, these mild tasting Noodles absorb surrounding flavors very well.

IF VARIETY IS THE SPICE OF LIFE...

We’ve all heard variety is the spice of life, but what exactly is a “spice,” anyway? This short glossary provides a few quick insights into the varieties of herbs, spices and other flavoring agents we at WOODLAND FOODS are so excited to share with you.

DRIED HERBS are the flavor-packed leaves of herbaceous plants. The drying process helps preserve their flavor, but volatile oils can evaporate over time, so it is essential to maintain a fresh supply of dried herbs. PAGES 64-65

SPICES & SEASONINGS are any part of a plant, other than its leaves, used to season, flavor, preserve or color food. Spices are typically the roots, bark, seeds or even the fruit of plants. PAGES 66-72

SEASONING BLENDS are useful, pre-mixed combinations of herbs, spices and salts. Our blends are designed to evoke the typical flavor profiles of exotic locations or well-known cooking styles. Try our pre-blended varieties or find out about our custom blending program. PAGES 72-74

RUBS are a complex blend of herbs, spices and salts applied directly to foods (typically, but not exclusively meats) prior to cooking. Once applied, rubs are often left to be absorbed for hours at a time. Our staff of trained culinary experts has personally developed our standard rubs and takes great pride in the custom blends created for our customers. PAGE 75

CURRIES are among the most important (and potent!) spice blends in world cuisine. Traditionally curry powder is mixed in small batches according to cherished family recipes by cooks throughout Southeast Asia and along the Pacific Rim. Blended from our own hand selected spices and ingredients, WOODLAND FOODS’ curry powders were inspired by traditional Indian, Japanese, Thai and Vietnamese curries. PAGE 75

PEPPERCORNS are actually berries! True peppercorns are the fruit of the pepper plant (Piper nigrum). Black and white peppercorns come from ripe berries (removing the skins changes final product from black to white). Green peppercorns are simply picked before they are fully ripe. Varieties like Pink and Szechuan peppercorns and the truly exotic Long peppercorns are the fruit of plants and trees other than Piper nigrum. PAGES 76-77

SALT is among the simplest (and most necessary) ways to enhance the flavor of any dish. WOODLAND FOODS is proud to offer exotic specialty salts from all over as well as the smoked and seasoned salts we’ve created ourselves. PAGES 77-79

SUGAR is highly prized for the sweetness it brings to recipes, but also for the complex role they perform in baking. WOODLAND FOODS offers more than 20 specialty and conventional sugars each with its own unique flavor. PAGES 79-80

VANILLA is an invaluable addition to all sorts of baked goods and other recipes. We import our own vanilla beans from Madagascar, Papua New Guinea and Tahiti. Our Vanilla extract is the real stuff (none of that harsh, mass-produced, synthetic stuff you’ll find in the grocery store) created following a painstaking, traditional process that has captured the floral subtleties of the high-quality Vanilla beans we select. 84 VEGETABLES WOODLANDFOODS.COM

VEGETABLESIt’s easy to be overwhelmed by the sheer volume of health, fitness and cooking publications on the newsstand, advocating for the increased consumption of vegetables. And for good reason—vegetables generally contain few calories and little fat along with the relatively large quantities of fiber, vitamins, minerals and— perhaps best of all—flavor. We offer an extensive variety of dried vegetables that provide quick and easy ways to add healthy, tasty vegetables to your recipes.

WOODLANDFOODS.COM 85VEGETABLES

SURPRISING USES FOR DRIED

VEGETABLES • Try substituting dried vegetables for

fresh to reduce moisture in the final dish, like when making veggie burgers.

• Dried vegetables will naturally rehydrate while cooking by absorbing liquid released by other

ingredients such as cooked beans.• Add some vegetables to your breakfast! Blend dried veggies into low-fat cream

cheese (add a touch of milk if it becomes too stiff) to make a great-tasting

spread for toasted bagels.

THINK IN COLOR: A SIMPLE GUIDE TO VEGETABLESThe more color on your plate, the healthier the meal. Acorn squash, red peppers, green spinach—each color vegetable offers its own unique health benefits.

GREEN: Important source of vitamin C, E and K to promote proper blood clotting and strong eyes, bones and dental health.

WHITE: High in dietary fiber, which is an effective weapon against high cholesterol.

ORANGE AND YELLOW: Important source of beta-carotene. This antioxidant converts to vitamin A, a vital nutrient in maintaining healthy eyes, skin and teeth.

PURPLE: Good source of anthocyanins, a powerful phytonutrient linked to healthy immune system and heart function.

RED: High in antioxidants to support strong cell growth and maintenance.

SURPRISING USES FOR DRIED FRUITS

• Add to cake batter• Mix in with freshly popped popcorn• Sauté with ground turkey and chiles

for a sweet and spicy sauce• Garnish hot mulled wine or chilled martinis• Rehydrate dried mango for use in salads for a

quicker, cleaner alternative to fresh mango• Serve on top of baked brie

• Bake into breads

HEALTH BENEFITS OF FRUITSThe only ingredient in fresh fruit missing from dry fruit is water. Most of the fresh fruit nutrients, vitamins, and minerals remain in dried fruit. And just like its fresh counterpart, each individual dried fruit contains its own unique healthy compounds:

APPLES: Good source of phytonutrients and fiber, specifically pectin; a soluble fiber linked to lowering cholesterol and regulating blood sugar.

APRICOTS: Rich in potassium and sodium; also high in fiber and iron.

BLUEBERRIES AND BLACKBERRIES: Contain Anthocyanins, antioxidants found in dark fruits that help fight free radicals that contribute to disease.

CHERRIES: Higher levels of antioxidants than many other fruits, also contains beta-carotene and folic acid.

FIGS: Retains all the potency of fresh figs and is high in iron and potassium.

MANGO: Healthy source of omega 3 and 6 fatty acids to support a healthy immune system.

RAISINS: Fat-free, cholesterol-free and high in fiber.

“MY FAVORITE THING IS WATCHING PEOPLE ENJOY... FOOD. I GET

SORT OF AN INSANE AMOUNT OF PLEASURE OUT OF THAT.”

NUTS & SEEDSMany people consider nuts and seeds nature’s perfect food. They grow in plentiful abundance, and their natural design keeps their delicious, meaty kernels safely ensconced inside a rough outer casing. Nuts and seeds are also packed with nutrients such as complex carbohydrates, unsaturated fat, vitamins, minerals and fiber. WOODLAND FOODS offers more than 50 nut and seed variants in numerous preparations including toasted, roasted, smoked, flavored, blanched and au naturelle.

Milled nuts and seeds retain much of the wholesome goodness of whole nuts and seeds. WOODLAND FOODS expertly processes nuts and seeds into nut meals and flours. They are great additions to baked goods like breads, crackers and sweets, whether baked in the product or used as crunchy toppings. Nut meals and flours are also gaining popularity as the basis for gluten-free alternatives to traditional wheat flours.

Coconutsareamongthemostversatile(andmostwidelyused)agriculturalproductsevercultivated. There’sausefor every part of the plant, from the roots of the trees to the husks of the nuts. WOODLAND FOODS offers dried coconut products in several shapes and sizes, in sweetened and unsweetened varieties.

110 ORGANICS WOODLANDFOODS.COM

ORGANICSIn the technology-driven fast-paced world we live in, a paradigm is shifting. People are slowing down. They’re looking to reconnect with nature by embracing the outdoors, choosing to practice Yoga over playing video games, and incorporating natural, organic foods into their diet.

WOODLAND FOODS applauds this trend and lends its support by offering numerous USDA organic ingredients. Our Organics are nurtured with sun, water, shade and fertile soil. They grow healthy and strong without the use of pesticides, herbicides and artificial fertilizers. We’re constantly discovering new organic products, so this list continues to grow.
