Mental Health Awareness
Mental Illness is more prevalent than most think. It has been reported that one in five Americans experience some form of mental illness in their lifetime. Mental illnesses are as real as other physical illnesses and they can be treated. By acting early and effectively many of the mental illnesses can be prevented from progressing or even occurring in the first place. Education and awareness are essential parts of eliminating the mental health stigma. Mental Illness does not discriminate. It effects all ages, races, cultures and genders. Come learn more about breaking down the stigma and be a part of open discussions on mental health issues in your community.
All are welcomed to attend this lesson presented by Kay Denniston, Bourbon County Family and Consumer Sciences agent, on August 16, 2018 beginning at 10:00a.m. at the Fayette County Extension Service.

Specialty Clubs focus on learning, developing and preserving a specific skill, interest or activity. There is a deliberate focus on sharing members’ skills with others to strengthen the community. Participants do not have to be an expert - as the objective is to learn. During the monthly meetings, members work on personal projects, participate in group projects and learn new techniques and methods from fellow members. Specialty clubs meet at the Fayette County Extension Office. You are welcome to join us at anytime.

Driver Safety Course could
earn you a discount on your
automobile insurance
premiums for three to five years, and you will be a better
driver. The AARP Smart Driver Safety Course will be
held on October 16, 2018 from 10:00 a.m. to 2:00 p.m. at
the Fayette County Extension Office, 1140 Harry Sykes
Way, Lexington. The AARP Smart Driver Safety Program
is a classroom course for drivers aged 50 and over. The
course identifies many of the changes which occur as we
age and suggests strategies for accommodating those
changes for safer driving. Participants who complete the
course will receive a certificate which many car insurance
agencies honor with a discount. A small fee covers course
expenses: $15.00 for AARP members, $20.00 for
non-members. Feel free to bring a sack lunch if you would
like, the class will continue through the lunch hour.
Seating is limited. Pre-register by calling the Fayette County Extension Office at 859-257-5582.
Tex-Mex Quinoa Salad
Ingredients: 2-3 ears shucked corn 1 cup quinoa, uncooked 1 (15 ounce) can black beans, drained and rinsed 1 cup fresh spinach, chopped 1 cup cilantro, chopped 1 cup cherry tomatoes, halved 8-10 green onions, thinly sliced 1/2 cup feta cheese crumbles 1 small jalapeno, seeded, deveined, minced --- Dressing: 1/2 cup lime juice 1 1/2 tablespoons red wine vinegar 2 tablespoons olive oil 1 teaspoon ground cumin 1 teaspoon chili powder 1 teaspoon honey Salt and pepper to taste
Yield: 8, 1 cup servings
Directions: Fill a large saucepan with water and bring to boil, add corn and cook for 5 minutes or until tender. Cool. Cut corn from cob using a sharp knife. Cook quinoa according to package direc-tions. Whisk together dressing ingredients in a small bowl. Set aside. When quinoa has cooled, add dressing and stir to coat. In a large bowl combine remaining ingredients and add to the quinoa mixture. Cool in refrigerator and serve.
Nutritional Analysis: 220 calories, 7 g fat, 1.5 saturated fat, 5 mg cholesterol, 250 mg sodium, 32 g carbohydrate, 5 g fiber, 4 g sugars, 9 g protein

2018 Kentucky Proud Evening
The University Press of Kentucky is celebrating its 75th anniversary with company. The Fayette County Cooperative Extension of the University of Kentucky College of Agriculture, Food and Environment has partnered with The University Press of Kentucky on Kentucky Proud Evenings, a series of monthly author talks. These events will occur at 6:00 pm at the Fayette County Extension Office, 1140 Harry Sykes Way, Lexington. Plate it Up! Kentucky Proud food samples will be available for those attending. Reserve your spot at a talk by calling the Fayette County Extension Office (859-257-5582). Copies of the book being discussed will be available for sale at the events. Monday, August 13: Bob Thompson, Hitchhiker: Stories from the Kentucky Homefront. Thompson offers readers homegrown tales that interweave ghosts of the past with real and imagined worlds and range from growing up in Western Kentucky to following the footsteps of Hemingway and the Lost Generation across Europe.
This events will be a great opportunity to learn more about the amazing works that will be discussed while attendees enjoy the wonderful local food samples that will be provided. No preparation, reading ahead, or money is required to discover more about the many and various topics covered in these books and talks, only curiosity and the desire to go. These monthly author talks are a fun and enriching way to spend an evening that you will not want to miss.

Gardens are beginning to bear the fruits of your labor. Soon, it will be time to start thinking about preserving some of that excess produce for winter months. Safety is of utmost importance for those of us preserving food because improperly home canned food can lead to foodborne illness.
Bacteria, yeasts and molds can grow quickly on fresh fruits and vegetables. Oxygen and enzymes that can cause food to spoil are found all over and inside produce. Safe home canning methods help prevent the growth of these harmful bacteria, yeast and molds; remove excess oxygen from the food; destroy spoilage enzymes; and allow for year-round enjoyment of the foods from your garden.
Despite what you may find on the Internet or social media, there are only two acceptable methods for home canning safe, quality products--the boiling water canner method and the pressure canner method. The type of food you are preserving will dictate which method to use. Boiling water canners can be used on foods that are naturally high in acid, like most fruits. Pressure canners must be used for all fresh vegetables, meat and poultry. Both methods, when used properly, can prevent botulism, a deadly form of food poisoning associated with canned food.
You can safely process foods that are naturally high in acid or foods that have been acidified with lemon juice or vinegar (like pickles, salsa and relishes) in a boiling water bath canner. The acid prevents the growth of harmful bacteria in these foods. However, vegetables, meats and poultry do not contain enough acid to prevent bacterial growth. For these foods temperatures between 240 and 250 degrees Fahrenheit are necessary to prevent the growth of bacteria. Temperatures this high can only be reached using a pressure canner. Therefore, you must process all vegetables and other low acid foods in a pressure canner.
Be sure to use up-to-date equipment that’s in proper working condition. It’s never a good idea to purchase a pressure canner at a yard sale or flea market as replacement parts and manufacturer’s instructions may not be available. Pressure canners made after 1997 are designed with more safety features and weigh much less than older canners. Dial gauge pressure canners should have the gauge tested each year. This can be done at your local extension office. It is also important to use only Mason-type canning jars and self-sealing, two-piece lids. Never reuse jars that once contained mayonnaise or other food products as they will crack and break during processing.
Always use research-based recipes to preserve foods. These recipes are available in Cooperative Extension Service home canning publications, the Ball Blue Book Guide to Preserving, or the National Center for Home Food Preservation’s website https://nchfp.uga.edu/. Follow each recipe exactly as written. Do not make additions or changes unless options are provided in the recipe. Not following the recipe precisely or using a recipe that is not research-based, may result in sickness.
