We focus on using fresh, in-season and local product. Chef Craig Flinn looks first to Nova Scotia for our ingredient base, then to the rest of the Maritimes to create our Canadian Bistro menus.     Fid Cakes & Beet Quickle Fid, Resto, Chef Dennis Johnston

    14 oz (400 g) salt cod1.75 pound (800 g) cooked baked potato (no skins) 1 tsp (5 ml) garlic (pure)5 turns of a pepper mill13 cup (75 ml) olive oil1 pound (500 g) Panko bread crumbs2 cups (500 ml) egg whites2 cups (500 g) all-purpose flour

    Soak the salt cod overnight in cold water in the refrigerator. Remove the salt cod from the water and put into a pot with cold water. Bring the cod to the boil for a few minutes and drain the water. Make sure to remove all bones from the cod. Mix the cooked potato and the cooked cod together with a hand-held mixer. While mixing, add the olive oil to make a relatively workable consistency. (Not too loose.) Add pepper and garlic. Form small rounds that are inch (2 cm) high and 1 inches (4 cm) in diameter. Lightly dust the cakes with flour, dip into the egg whites and then the bread crumbs. Fry in clarified butter to obtain slight coloration on each side and roast in the oven for 4 minutes at 475F (245C).

    Beet Quickle2 beets boiled, peeled and diced into small dice2 tsp (10 ml) rice vinegar1 tsp (5 ml) sugar20 leaves of fresh cilantro

    Mix the beets, vinegar and sugar together. Mix approximately 2 oz (60 g) of the beet mixture with some fresh cilantro leaves and mold on a plate. Place the Fid cakes as seen in the photo and garnish.

    Roasted Nova Scotia Leg of Lamb with Potato Fricassee Brooklyn Warehouse, Chef Graeme RuppelFor 6-8 people

    1 leg of lamb (bone out) 2 cloves garlic, thinly sliced 4 sprigs rosemary, bruised with blunt side of knife salt and pepper

    Push the garlic and rosemary into the cavity of the leg. Season the surface of the leg liberally with salt and pepper. Place in a roasting pan and then into a 300F (180C) oven. Roast for 2 hours. Finish the lamb under the broiler for about 15 minutes until the surface is nicely browned (a meat thermometer inserted in the thickest part should read 125F (50C) for medium rare). Remove from oven and allow to rest for at least 15 minutes before slicing.

    Potato Fricassee pound (115 g) bacon, cut into strips1 tbsp (15 ml) butter2 pounds (900 g) new potatoes, cut into chunks cup (125 ml) white wine8 cups (2 L) chicken stock pound (225 g) green beans

    Cut bacon into small strips. Cook the bacon, keeping the fat and reserving the bacon for another use. Add potatoes to bacon fat, stirring the potatoes until coated. Add white wine, and cook out the alcohol. Add chicken stock to cover the potatoes. Cover and cook over med-low heat for 1 hour, until potatoes are tender. Add the green beans to the pot, stir and cook for 5 minutes more or until the green beans are tender. Serve with the lamb, garnished with a sprig of rosemary (optional).

    Salsa1 pint ( L) fresh strawberries, cut in chunks2 tbsp (30 ml) fresh chopped cilantro3 tbsp (45 ml) olive oil tsp (2 ml) coarse sea salt tsp (2 ml) freshly ground pepperJuice of lemon, lime and medium-size orange

    Mix all ingredients together, and refrigerate for 15 to 20 minutes. Makes 2 cups (500 ml) or 6 generous servings

    Halibut Filet2 tbsp (30 ml) olive oil6x8 oz (200-225 g) fresh halibut filets (1 per person)

    In a frying pan, heat oil on high; sear halibut for 2 minutes on each side. Place halibut in a 350F (175C) oven for 5 minutes. Top with chilled salsa and serve immediately.

    Toss all Slaw ingredients together and season to taste. Toss all Salsa ingredients together and season to taste. For lobster, heat butter or olive oil in a large saut pan over medium-high heat. Add well-rinsed lobster and season lightly. Saut until cooked through, about 5 minutes. Add garlic and lime juice or vinegar and saut one minute more. To assemble, spoon lobster into tortillas, top with salsa and slaw, roll and enjoy!

    Jonagold Apple, Asparagus and Goat Cheese Salad with Maple Vinaigrette Scotian Gold Cooperative LimitedFor 4-6 people

    2 cloves garlic, minced1 tsp (5 mL) Dijon mustard tsp (1 mL) coarse salt tsp (1 mL) milled pepper cup (180 ml) olive oil4 tbsp (60 mL) maple syrup4 tbsp (60 ml) white wine vinegar4 Jonagold apples1 bunch of asparagus, woody ends removed2 oz (60g) crumbled goat cheese

    In a large bowl whisk garlic, mustard, salt, pepper, olive oil, maple and vinegar until creamy.

    Core apples, leaving peel on, then cut into chunks. Blanch asparagus and cut on the bias into one-inch pieces. Toss the apples and asparagus with the vinaigrette and top with crumbled goat cheese.

    If you prefer, you can plate the asparagus apples and goat cheese and serve the dressing drizzled on top.

    Benjamin Bridge is an innovative sparkling wine house on the south-facing slopes of the picturesque Gaspereau Valley, where owners Gerry McConnell and Dara Gordon have been growing grapes since the turn of the millennium. They are working with an international team of winemakers to produce Mthode Classique sparkling wines. Early tastings show these wines as nothing short of spectacular, with striking flavours and the brilliant acidity that is characteristic of Nova Scotia wines. An inaugural limited release is planned for 2010. Other limited edition wines by Benjamin Bridge include their hit NOVA 7 along with BOREALIS, TAURUS and NEXUS.

    Benjamin Bridge Vineyards is a working winery, currently not open to the public. Our wines are available for purchase in Nova Scotia at select NSLC stores and select private wine stores.

    2 free-range eggs1 tbsp (15 ml) chives2 tbsp (30 ml) milk3.5 oz (100 g) Nova Scotia lobster meat1 cup (250 ml) local and wild mushrooms 2 oz (60 ml) Domaine de Grand Pr 41 Fortified White Wine* 1 oz (30 ml) Domaine de Grand Pr Seyval Blanc** 3 oz (90 ml) heavy creamshaved Old Growler Gouda (produced by That Dutchmans Farm)

    SauceSaut mushrooms in 1 tsp (5 ml) butter, add Seyval Blanc, allow to simmer for 30 seconds. Add the fortified wine and bring to a boil, then add cream and reduce by one third. Season to taste with sea salt and white pepper.

    OmeletWhisk together the eggs and milk with a pinch of salt. Cook in a lightly buttered pan until just set. Place the omelette on a plate, fill with the sauce mixture and lobster, garnish with the old Growler Gouda and chives. Serve.
