Farmers Dairy originated back in the 1920s, becoming a cooperative dairy in 1961. Owned by over 200 dairy farmers, Farmers Dairy produces a wide range of dairy and dairy-related products supplying thousands of residential, retail and foodservice customers throughout Nova scotia.

elements on hollis represents the best that Nova scotia has to offer. Through partnerships with the Halifax seaport Farmers’ Market, located practically at our back door, and over 35 other local farmers, fishers and producers, elements on hollis offers menus featuring fresh, local, seasonal and sustainable ingredients. The “eat local” movement has swelled over the past few years; we want to know where our food comes from, to support local producers, and to be responsible to the environment – and our patrons can be sure of those things when you dine at elements on hollis.

Traditional “Fisherman’s cove” just down the street and only 20 minutes from Halifax – if you’re willing to make the trip, you’ll want to try our award-winning fishcakes, voted by The Coast readers as Best in Halifax 2011. But the real recognition is our consistent loyalty from local and visiting Maritimers, who say our fishcakes and other traditional menu items taste “just like my mother made.” Our seafood chowder is fresh from scratch and, like all of our soups, gluten-free. Don’t miss our signature all-day, all-local, farm-fresh breakfast. Emma’s, where the food is like a warm hug from the inside out!

in a large, thick-bottomed pot over medium heat, sauté the garlic, fennel and onion in the olive oil. When the fennel and onion are translucent, add the thyme, basil and bay leaf. Wild caraway Restaurant & café

Our experience in restaurants in Australia, London, Ireland and canada has shown us that the best meals are made with the food found literally in our own backyards. Lobster, scallops, goose-tongue greens, humanely raised pork as well as garden vegetables and herbs travel the short distance from our backyard or the harbour across the street to your plate. These tastes, which can be found nowhere else in the world, inspired us to renovate our century home into the Wild caraway Restaurant and café. We provide guests with affordable, delicious, locally sourced meals served in a uniquely colourful setting overlooking the world-famous tides of the Bay of Fundy.

spicy Italian sausage soup The Pork Shop For 4-6 people

1 lb (450 g) hot italian sausage, casings removed1 medium onion, diced3 cloves garlic, minced3 stalks celery, diced3 large carrots, peeled and diced4 cups (1 l) beef broth1 cup (250 ml) nova Scotia red wine 1 28 oz (795 ml) can stewed tomatoes1 cup (250 ml) tomato sauce1 tsp (5 ml) dried oregano1 tsp (5 ml) dried basil1 cup (250 ml) dried pasta such as zitiParmesan cheese for topping

Place a large pot over medium-high heat and sauté the sausage meat. remove the sausage meat and add in the onions, garlic, celery and carrots. if the sausage meat is not overly fatty you may need to add some olive oil at this point. Sauté until everything has begun to soften, about 7 or 8 minutes.

add in the stock, red wine and stewed tomatoes. if the tomatoes are whole, break them up with the back of your spoon. add the oregano and basil. toss the sausage meat back into the pot and let it all come to a boil. reduce to a simmer for about 40 minutes or so, stirring occasionally. add the pasta just 20 minutes before serving, so you don't end up with soggy starchy bits floating around your soup.

Serve garnished with grated Parmesan cheese and some fresh bread.

Grasp the body and twist off the large front legs and claws. Separate the claw from the knuckle.

Break the hinged part off the claw and remove the meat with a fork or pick. Crack the claw with lobster crackers. Be careful to crack the shell only and not damage the meat inside. Knuckle meat can be removed with a lobster fork.

Twist the tail away from the body.

Cut the tail on both sides or grasp it tightly and squeeze until it cracks. Snap off the tail flippers.

Push out the meat in one piece. Peel back the flap on the upper side of the tail to expose the vein, remove and discard the vein.

Unhinge the back from the body and remove the green tomalley. Red roe of the female lobster is extremely tasty and considered a delicacy.

Open the main body section by cracking it apart. The meat in this section can be removed using a fork or pick. Discard the dark sac located between the eyes (since this is not edible). Twist the walking legs from the body. Clench between teeth and nibble meat from legs. The same method can be used to extract meat from the tail flippers.
