We have had another successful year. On this occasion, on behalf of Dora Metal Group, I would like to thank all our customers and partners for the their contribution to development of our company. Year 2011 was marked by dynamic growth of our companies. It also confirmed that high product quality - our point of attention - is es-sential for successful business. Our products operate in most important gastronomic complexes in Poland and worldwide. According to opinion of our partners Culinary Technology Center in Warsaw, after two years of existence, has become one of the best in Eu-rope. We are very happy that through this unique place we can contribu-te to the growth of gastronomy in Poland. The current year is going to be another year of dynamic growth. Nothing is perfect, so in our activity we see a lot of areas for improve-ment. We intend to continue quality policy and good care for our custo-mers.

The ”Fair Play Company 2011” Certificate, gran-ted for the thirteenth time, has proved that DORA ME-TAL consistently continues adopted business policy i.e. meeting customers needs and loyal fulfillment of obliga-tions to suppliers. It has also proved that DORA METAL is positively perceived by business environment, local so-ciety and , what is most important, by its employees. This Certificate opens doors for new profitable business agre-ements as wells enhances the trust of both partners and customers. Being awarded with this Certificate DORA METAL has proved that ethical principles, honesty and so called good practices are present in the business.

“Fair Play Company” Certificate has also been granted to KROMET company. This award has confirmed the policy of the company which is socially responsible and which acts in accordance with generally accepted ethical principles. It is also a clear sign of company relia-bility conveyed to the partners, customers and local so-ciety.

These Certificates have proved that honesty in activity has been noticed and recognized.

It has been a great honor for the President and for the company to join the exclusive body of “Ambassa-dor of Fair Play in business”. This award has been granted for the first time to the personalities of Polish business selected from management of the companies which for many year have been awarded winners of “Fair Play Com-pany” program. These awards inspire to strenuous work and further enhancement of attitudes and behaviors in business.

Gastronomic trade fairs HOST 2011 in Milan

On 21-25.10.2011 the international gastronomic fair HOST 2011 was held in Milan. This was one of the biggest fairs in Europe which ga-thered 1 600 exhibitors and 125 000 visitors on 100 000 m2. Since many years Dora Metal has been selling its products on foreign markets and participates in trade fairs abroad. However in 2011 the company decided for the first time to participate in international trade fair in Milan. This fair proved to be a great success as our pro-ducts enjoyed reasonable interest and the company has ma-naged to establish many new international contacts.

HIGHLIGHTS OF 2011

The visitors were attracted by Bar line devices in par-ticular by the model specially designed to demonstrate the possibility of combining stainless sheet metal, wood and pla-stic which created functional, integral whole with new-style design which can be flexibly adapted to interior decoration. Presented during fair round counter for distribution of cold snacks was to show how the devices can be tailored to individual customer needs by enabling adoption of uni-que styling and shape. We presented also products from cooling devices product line such as: shock cooler, cooling cabinet and ba-nquet cooling cabinet. Shock cooler has been equipped with self-explanatory, user friendly control panel in Polish as well as with increased voltage (400 V) unit enhancing cooler effi-ciency.

The offer presented at the fair included also made by KROMET, modified 700 and 900 lines which are now inte-grated in terms of dimensions and height so they can be fre-ely combined what widens range of devices from which the customer can create any configuration.

On 16-18.11.2011 the gastronomy HoReCa 2011 fair was held in Cracow where Dora Metal was awarded with the main award in gastronomic devices category for BAR line product line. From the very beginning BAR line furniture and de-vices are awarded with many awards and enjoy great inte-rest due to modern solutions application and unlimited de-sign possibilities of products styling.

European Medal for BAR line furniture and equipment On 9.11.2011 Bar Line Furniture and Devices were awarded with 2011 European Medal. European Medal is awarded to those companies and products which meet European standards. This prestigious award is awarded by Business Center Club supported by Ministry of Foreign Affairs and Honorary Patronage of European Economic-Social Committee in Brussels. This is a great distinction recognizing company’s continual ef-forts in searching for innovative solutions for professional gastronomy.

In DORAM Culinary Technology Center in Warsaw alre-ady 11 editions of two- week traineeships for the teachers have been organized within the “Teacher – master of young masters” project financed by European Social Fund – Human Assets Ope-rational Program. The teachers of professional subjects of gastronomic in-dustry from all parts of Poland have participated in this project. They were interested in enhancement of their practical and the-oretical competences in operating of modern gastronomic equ-ipment and devices as well as in up-to-date food processing. The main purpose of the project was to enhance te-aching quality and knowledge of professional teaching staff. Tra-ineeships organized by Dora Metal have great impact on the fu-ture of gastronomic industry due to presenting to the teachers the world class kitchen. The comments of some of the participants reflect tra-ineeships attractiveness.

These are very well organized traineeships with very good time management and with taking full advantage of Cu-linary Technology Center base. Professional although different trainers. Access to expensive and unavailable products and up-to-date machines,devices and equipment used in modern ga-stronomy. Sync group of participants was of great importance. Very good room and board, efficient transportation. Full care and nice atmosphere extended to participants by the organi-zers during the traineeship. In short, these are traineeships I will recommend each gastronomy teacher. I would like to participa-te in the next trainings in Culinary Technology Center.

I believe that the traineeship I have had in the Culinary Technology Center has been very interesting. It has been the greatest “adventure” I have had so far in my professional career. I am happy that I got knowledge from the masters of culinary art. My work with them has given me a lot of satisfaction and enabled me to notice a lot of changes taking place in dish technology in the highest category restaurants. I have become acquainted with up-to-date equipment used in gastronomy. I will be able to bequeath to the young all knowledge I have acquired during this traineeship. I would like to thank the organizers for the care and amiability which were present during the whole traineeship.

Teacher – master of young mastersWe meet the expectations of the teachers

of the gastronomic objects in Poland

I have experienced a lot of emotions and impressions which I can hardly describe. This has been the great traineeship for the teachers. It has enhanced my knowledge and skills. Each day was full of activities and gave me a lot of information. I have learned how to use and operate many up-to-date gastronomic devices. I am fascinated to see molecular kitchen and to taste the dishes prepared with this technology. I was under the im-pression of many tastes of thickened sauces. I am very glad that I could work with fresh and high quality raw materials. Atmo-sphere of work was very nice due to the trainers. It was very im-portant that we could taste and evaluate properly prepared di-shes and desserts. The traineeship has enabled me verification of many things I knew from the books. This has been the best training I have ever participated and I would like to participate in the next trainings/traineeships of this kind in the future.

Culinary Technology CenterFirst edition of „NORGE & FOOD SERVICE CHEFS’ COMPETITION-2011 Norwegian Herring”

On the first day of the culinary competition, 24 semi-finalists prepared the star-ter made of Norwegian herring, egg, cucumber and many other ingredients available on the common table as well as the main dish prepared from fresh herring, apple, groats and other pick-and-mix ingredients.

On the second day of the competition, 6 finalists (Adam Leszczyński, Arkadiusz Kruszik, Damian Kolasa, Dariusz Mikołajczak, Lilianna Filipiak and Michał Piotr Musnicki) prepared recipes which they had sent as qualifying entry.

On 28-29.11.2011 in DORAM Culinary Technology Center in Warsaw the first edition of the „Norwegian herring - NORGE & FOOD SERVICE CHEFS’ COMPETI-TION-2011” was organized together with Fish and Seafood Exportation Norwe-gian Council and Food Service.

The jury consisting of the true stars (Paweł Oszczyk and Robert Trzopek; Maciej Nowak and Geir Skeie from Norway – culina-ry world master – winner of the Bocuse d’Or 2009 competition) awarded the main prize for “The herring with green accent” and “Norwegian herring assisted by Polish products” prepared by Adam Leszczyński. The main prize was the traineeship in the restaurant in Norway run by Geir Skeie himself. Dora Metal Group congratulates all participants and wishes them further successes.

On 2.12.2011 in DORAM Culinary Technology Center another edition of Warsaw Tournament for Gastronomy Schools “ Fish dishes in the Christmas Tradition 2011” was organized by Dora Metal Group and Group of Culinary Schools under the name of Eugeniusz Pijanowski in War-saw.

The main purpose of the tournament was to show the skills in preparation of the Christmas Eve starter with trout as the main ingredient and gourmet main courses from duck breast. In the tournament participated 21 schools from different parts of Poland. Each school was re-presented by two-person team.

The tournament was supervised by the jury consisting of Andrzej Bryk – the chairman, Jacek Grochowina, Jarosław Uściński, Robert Sowa, Mariusz Nowicki, Piotr Szczygielski, Jerzy Pasi-kowski, Patryk Lempke, Mirosław Reszczyk, Xavier Debeni, Maciej Kołodziejczyk.

Three editions of the „Training with Jack Grochowina for cooks” behind us ...

In DORAM Culinary Technology Center three editions of workshops conducted by Jacek Grochowina – known chef and culinary art freak - have been held. The purpose of the training was to show possibilities and technology of the modern kitchen with best possible pro-ducts use.The trainings topics were as follows: I edition – “Dressings and sauces preparation techniques and modern dishes arrangement”,II edition – “ Fish and seafood dishes, preparation techniques and presentation”,III edition – “Meat dishes and sauces, ways of processing and pre-sentation”.The cooks participating in the trainings, first watched the dishes preparation process and used techniques, actively participating in the presentation and then prepared the menu themselves un-der chef’s careful supervision.

After the dishes preparation the discussion was held followed by common tasting combined with learning on how to select the proper wine to specific dish. Menu included i.a.:- grilled calamari and pepper emulsion salad with saffron aioli, - ballontine from octopus and crab with celery variation, - foie gras with orange and carrot, - glazed bacon and spare ribs with apple and parsnip, - saddle of lamb with salsify and artichoke

JACEK GROCHOWINA Former chef of Amber Room restaurant. He worked in Polish Business Council Club as executive sous chef and before, for 5 years, he worked in London in i.a. Ritz Hotel as well as in Dubai with world famous chef Emil Minev in Vu’s restaurant. He is award winner of a couple of awards including: “ Annual Award of Excellence 2008” awarded by British “Academy of Culinary Arts”, II place in Esscofier competition awarded by French Culinary Academy 2006 and bronze medal during international competition in Italy 2010 Andria Qoco. Organizer and jury chairperson of the I edition of young talents Monamour 2010” kitchen competition. Trainer during traineeships “Teacher – master of young masters” and culina-ry workshops for professionals and for pupils of gastronomic schools in Culinary Technology Center. Juror in the best Christmas dish competition organized by Dora Metal and Group of Gastronomic Schools.

Hot Dog Module 000.MHD-1

KROMET Gastronomic Machines and Devices Factory can pride on wide range of devices for food thermal processing. “Hot Dog Module” is the new item in the offer. The main element of the module is the counter manufactured by Dora Metal equipped with two cooling drawers with temperature range from - 2˚C to +10˚C, ideal for storage of se-mi-products. Depending on requirements the module can comprise six-, eight-, ten- or fourteen- rolls grill and contact grill for rolls warming up. Additionally this module has glass case what en-hances hygienic conditions and protection of stored Hot Dogs. This device proves the best in the following places:- petrol stations, - fast food points in supermarkets, - stand alone Fast Foods, - bars with Fast Food dishes.

NEW line 700

Responding to dynamic changes on the market and changing customers needs KROMET has put on the market new 700 line. Well known to the customers 700 line has received new styling which has enhanced its aesthetics and functionality. Changed design has improved ergonomics, operation and maintenance of the 700 line. Due to introduced changes it is also easier to combine devi-ces into technological line. We hope that the newest KROMET offer will meet customers expectations.

NEW PRODUCTSNew tubes for plates distribution

We offer modified version of the tube for plates distribution:- insulated, increased temperature (90-95˚C)- plate diameter adjusting system, - platform (with roller guide) for plates.

New heated plates distributors

Improved distributors enable to:- adjust temperature within the range 30˚C-120˚C, - adjust plate diameter.

High voltage units

In order to meet customers requirements we have introdu-ced high voltageunits (400 V) which have enhanced perfor-mance of our coolers and freezers.

Improved heating banquet cabinets - electronic temperature controller, - temperature setting from 30 to 100˚C, - easiness to move to another place, - big capacity (one cabinet contains 20 containers 1/1 GH), - hygienic interior, - curved inside edges, - hollowed bottom.

Cooling and freezing tables adapted to smaller areas

Having in mind smaller rooms and customers needs we have included into our offer cooling and freezing tables with di-mensions 500x300, which suit perfectly where bigger tables can-not be placed. They can be used as stand alone devices, under top devices or devices for the bars. The offer includes versions with so-lid doors, glass doors and with drawers.

In the standard:- the top made of polyethylene plate, - the table equipped with 6 exposition trays and place for GN containers, - working temperature range with ambient temperature +25˚C and air relative humidity up to 45%, - temperature range from 0 to +10˚C.
