2014 rare & fine wine auction featured winemakermerry edwardsMs. Edwards joins an impressive list of Rare & Fine Wine Auction honored winemakers, including Robert Mondavi, Paul Hobbs, Chuck Wagner, Christian Moueix and others. Just as she blazed the trail for women winemakers in California, Merry is the first female selected as the annual auction’s featured guest.

Merry Edwards is an award-winning winemaker, recently named Outstanding Wine Professional at the 2013 James Beard Awards. Her wines are equally decorated with honors. In 2009, Wine Spectator named the Merry Edwards Sauvignon Blanc Russian River Valley 2007 to its list of Top 100 Wines of the Year, landing the #9 spot with a classic rating of 96 points on a 100-point scale. In 2006, the Merry Edwards Pinot Noir Russian River Valley Klopp Ranch Méthode à l’Ancienne 2003 was ranked #21, with a classic rating of 95 points. Most recently, the Merry Edwards Pinot Noir Russian River Valley Meredith Estate Méthode à l’Ancienne 2010 received an outstanding rating of 92 points, with the Merry Edwards Sauvignon Blanc Russian River Valley 2011 earning an outstanding 91 points.

On behalf of The Wine & Food Foundation of Texas, I would like to welcome you to the 29th Annual Rare and Fine Wine Auction. Thanks to generous friends like you, the Auction has grown into the largest of its kind in the state of Texas, providing guests with the unique opportunity to channel their passion for food and wine to better the health and well-being of our community. All of tonight’s lots have been graciously provided by Foundation members, its Community Partners, fine wine and spirit retailers and distributers, wineries, and local restaurant and chefs. I am grateful to them.

For the second consecutive year, the Foundation has chosen Dell Children’s Medical Center of Central Texas as the charitable benefactor to receive a portion of auction proceeds. After last year’s auction, the Foundation awarded Dell Children’s $60,000, and our support was instrumental in closing out the funding for their much needed third bed tower. For 2014, our contribution will go directly to the Children’s Health Express, a mobile clinic that delivers care (including nutritional programming) to children at area schools. In addition to Dell Children’s Hospital, funds raised through all foundation activities help support local chefs, sommeliers and others in the food and wine industry through educational scholarships, grants and awards.

This year, I am also thrilled to welcome our Featured Winemaker, the award-winning, Merry Edwards. Both Ms. Edwards and her wines have received the highest of industry accolades. In addition to sharing our love of fine wine she also shares our mission to enrich and support the community. We are honored to have her here this evening.

American Viticultural Area (AVA): A delimited, geographical grapegrowing area that has officially been given appellation status by the Alcohol and Tobacco, Tax and Trade Bureau (TTB). Two examples of AVAs are Napa Valley and Sonoma Valley.

Appellation: Defines the area where a wine’s grapes were grown, such as Bordeaux, Gevrey-Chambertin, Alexander Valley or Russian River Valley. Regulations vary widely from country to country. In order to use an appellation on a California wine label, for example, 85 percent of the grapes used to make the wine must be grown in the specified district.

Appellation d’Origine Contrôlée (AOC or A.O.C.): The French system of appellations, begun in the 1930s and considered the wine world’s prototype. To carry an appellation in this system, a wine must follow rules describing the area the grapes are grown in, the varieties used, the ripeness, the alcoholic strength, the vineyard yields and the methods used in growing the grapes and making the wine.

Barbaresco: Nebbiolo-based red wine made in Italy’s Piedmont region.

Barolo: One of Italy’s most important wines, Barolo is made from 100 percent Nebbiolo grapes in Piedmont.

Blanc de Blancs: “White from whites,” meaning a white wine made entirely of white grapes, such as Champagne made only of Chardonnay instead of a mix of white and red grape varieties.

Blanc de Noirs: “White from blacks,” meaning a white wine made of red or black grapes, where the juice is squeezed from the grapes and fermented without skin contact. The wines can have a pale pink hue. This term is used for Champagne that is made entirely from Pinot Noir and/or Pinot Meunier instead of a mix of both red and white grape varieties.

Clos: A French term used to describe a walled vineyard, such as Clos du Vougeot in Burgundy.

Crianza: One of Spain’s quality classifications, it requires that reds are aged for two years, with at least a year in wood, and whites a total of six months.

Cru: Meaning “growth” or “vineyard” in French, this term is often used in quality classifications. In Bordeaux, the highest quality wines are called Premiers Crus and in Burgundy, Grands Crus.

Cuvée: A blend or special lot of wine.

Denominatión de Origen Calificada (D.O.Ca.): Spain’s highest quality classification, created in the early 1990s.

Denominazione di Origine Controllata (D.O.C.): The Italian system for defining wine regions and wine names. In addition, the D.O.C.G. (Denominazione di Origine Controllata Garantita) covers regions willing to submit their wines to tougher requirements, including tasting approval.

Estate-Bottled: A term once used by producers for those wines made from vineyards that they owned and that were contiguous to the winery “estate.” Today it indicates the winery either owns the vineyard or has a long-term lease to purchase the grapes.

Gran Reserva: Gran Reserva, the highest level of Spain’s quality categories, is only made in the best vintages. This distinction requires reds to be aged at least five years with a minimum of two in oak.

Grand Cru: French, literally “great growth,” or the top tier of vineyards and their wines in regions that use the term. For example, in Burgundy, these wines are one step above Premier Cru.

Grand Cru Classé: French term used to categorize vineyards by quality. In Bordeaux’s Médoc region, for example, five levels of Grand Cru Classé were established in 1855.

Grand Vin: The premier cuvée made by a winery. Grand vin, or “great wine,” is an unregulated term frequently used in Bordeaux to indicate that a wine is the best of multiple wines made at a given winery.

Horizontal Tasting: An evaluation of wines from a single vintage; the wines may highlight producers from a single region or the same grape variety from many regions, among other permutations.

Noble Varieties: Considered the classic grape varieties, originating in the Old World, which have the ability to make outstanding wines. Reds include Merlot, Cabernet Sauvignon, Nebbiolo, Pinot Noir, Sangiovese and Syrah (Shiraz in the Southern Hemisphere). Whites include Chardonnay, Chenin Blanc, Gerwürztraminer, Riesling, Sauvignon Blanc and Sémillion.

Old World: The Old World refers to the countries of Europe where winemaking dates back centuries. The Old World was once associated primarily with traditional winemaking techniques, while the New World was known for modern winemaking, though those stereotypes are no longer as accurate.

Reserva: A quality classification in Spain. Red reservas must be aged at least three years, with a minimum of one year in oak.

Riserva: Italian term indicating that the wine has been aged for an extra period of time prior to release.

Sec: French term for dry, not sweet.

Terroir: A term describing the interaction of soil, climate, topography and grape variety in a specific site, imprinting the wine and making each wine from a specific site distinct. Derived from the French word for earth, “terre.”

Varietal: Refers to a wine labeled with a single grape variety. Used predominantly in the United States and Australia, the term “varietal” denotes a wine named after and made from a single grape variety. For example, “The popular varietal is served in many restaurants” and “The herbal aromas of this Sauvignon Blanc are varietally correct.” For varietal bottling, a minimum of 75 percent of that wine must be made from the designated grape variety. The term is frequently misused in reference to a grape variety itself.

Vin de Pays: French quality classification meaning “country wine”; it is one level above vin de table.

Vin de Table: France’s lowest level of wine classification, meaning “table wine.” There are no limits on vineyard yields for wines labeled vin de table, and they do not require a vintage date.

1/2 bottle: .375 litersThis designation refers to a small bottle that holds .375 milliliters of wine, one-half as much as a standard .750 liter bottle.

Bottle: .750 litersThis designation refers to the standard sized bottle that holds .750 milliliters (ml) of wine or 4/5 of a quart. This sized bottle, regardless of whether it has a straight or sloping neck, is used for red, white, rose, and sparkling wines. Sparkling wine bottles appear to be larger than standard bottles because they are made of thicker glass to withstand the pressures of carbonation, but the bottles also hold .750 liters of wine.

Magnum: 1.5 litersThis designation refers to a bottle that holds 1.5 liters of wine, the equivalent of two regular .750 liter bottles. Sparkling wines are sometimes fermented in magnums because this method is believed to lengthen the wine’s life.

Double Magnum or Jeroboam: 3.0 litersThis designation refers to an over-sized bottle that holds 1.5 liters of wine, the equivalent of four regular .750 liter bottles.

Rehoboam: 4.5 liters to 5 liters This designation refers to an over-sized bottle that holds 4.5 to 5 liters of wine, the equivalent of 6 to 6.67 bottles (size variation dependent on date, country and region of origin) regular .750 liter bottles. This bottle is often referred to as a Jeroboam in Bordeaux.

Imperial or Methusalem: 6.0 liters This designation refers to an oversized bottle that holds approximately 6.0 liters of wine, the equivalent of eight regular .750 liter bottles. Methusalem is more commonly used in Champagne and Burgundy and the bottles will typically be of a different shape than the Imperial.

Salmanazar: 9.0 litersThis designation refers to an oversized bottle that holds approximately 9.0 liters of wine, the equivalent of night regular .750 liter bottles (a case).

Case: 9.0 liters, or 12 bottlesThis term refers to a group of 12 regular .750 liters of 4/5 quart bottles of wine. A case may consist of a single varietal and vintage year, or may be a mixed lot of reds, whites, and/or rose with several vintage dates, or of a non-vintage selection.

Magnum Case: 9.0 liters, or 6 double bottlesThis term refers to a group of six 1.5 liter magnum bottles, the equivalent of 12 regular .750 liter bottles of wine.

CONDITIONS OF SALE FOR THE RARE & FINE WINE AUCTION

The printed catalog, as amended by addendums & announcements during the sale, constitutes the entire statement of Wine & Food Foundation relative to the wines listed herein.

The following Conditions of Sale and any glossary contained herein are the complete terms and conditions of which all wines are listed herein shall be offered for sale, sold or purchased. The wines will be offered and sold by Wine & Food Foundation.

1. All wines are sold “as is” and Wine & Food Foundation makes no warranties or representations of any kind or nature with respect to the wines, and in no event shall be responsible or liable for the correctness of the catalog or other description of, nor deemed to have made any representation of assumption of liability with respect hereto.

2. Wine & Food Foundation will provide a good faith estimate of the value of each purchase upon request. Each donor and/or purchaser should consult a tax professional if further guidance is needed.

3. Wine & Food Foundation reserves the right to withdraw any item at any time before actual sale.

4. Unless otherwise announced by the Auctioneer at the time of sale, all bids are per lot as numbered in the printed catalog. After the sale, Wine & Food Foundation’s sale record & invoice shall be conclusive in all respects.

5. Wine & Food Foundation reserves the right to reject a bid from any bidder. The highest bidder acknowledged by the Auctioneer shall be the purchaser. In the event of any dispute between bidders, or in the event of doubt on the part of the Auctioneer as to the validity of any bid, the Auctioneer will have sole and final discretion either to determine the successful bidder or reoffer and resell the Lot. If any dispute arises after the sale, the auctioneer’s sale records shall be conclusive.


6. If the Auctioneer determines that any opening bid is not commensurate with the value of the item offered, he may reject the bid and withdraw item from sale; and if having acknowledged an opening bid, he decides that any advance thereafter is not of sufficient magnitude, he may reject the advance.

7. When Auctioneer declares an item “sold”, the highest bidder shall be deemed to have purchased the offered Lot in accordance with all conditions set forth herein and, there, upon

(a) Assume full risk and responsibility therefore, (b) Will sign a confirmation therefore, and (c) Will pay the full purchase price therefore.

All wines shall be removed from the Premises by the purchaser’s expense immediately after the Auction. The purchaser must be present, with personal identification or must be represented by proxy approved by WINE & FOOD FOUNDATION. If the foregoing conditions or any other applicable conditions herein are not complied with, in addition to other remedies available to WINE & FOOD FOUNDATION by law, including without limitation, the right to hold the purchaser liable for the bid price, WINE & FOOD FOUNDATION at its option may either:

(a) Cancel the sale retaining as liquidated damages all payments made by the purchaser, or (b) Resell the property for the account of and at the risk of the purchaser, either publicly or

privately, & in such event the purchaser shall be liable for the payment of any deficiency plus all costs of resale and incidental damages.

8. All Lots expire one year from date of this auction, unless otherwise indicated in the printed catalog or announced by the Auctioneer at the time of sale. Any Lots not redeemed by that date will be deemed expired and become obsolete therefore. WINE & FOOD FOUNDATION shall not be responsible or liable for refunding or replacing obsolete Lots.

9. All checks for items purchased shall be made payable to The Wine & Food Foundation of Texas. Unless exempted by law from payment thereof, the purchaser may be required to pay Texas state and local retail taxes at the rate applicable at the time of purchase.

Il Caberlot Magnums

In Europe, the tiny production of 200 cases (magnums only) of this coveted cult wine is allocated one or two bottles at a time to private European cellars and selected restaurants. It is the only wine in the world made from a unique clone discovered in Emilia-Romagna in the 1960s. It evokes the aromatics and flavor profiles of Cabernet and Merlot. With your help, we’ve contributed tens of thousands towards the continuing educational development of both chefs and sommeliers throughout the state. Some of the other donations you have helped make possible include the following:
