ABSTRACT ASPEK SISTEM HIGIENE PADA PENERAPAN PRE REQUISITE PROGRAM (PRP) PRODUK LEO SNACK KENTANG DI PT. GARUDAFOOD PUTRA PUTRI JAYA, LAMPUNG Oleh Burmanto Food safety system is used to prevent food from biological contamination, chemical contamination and other objects that interfere and endanger human health. Pre Requisite Program consists of 5 aspects are infrastructure, facilities, production facilities (machinery, equipment and containers), production management, and hygiene systems. Aspects of the infrastructure, facilities, production facilities and production management are parts of the Good Manufacturing Practices (GMP). Hygiene system is part of the Sanitation Standard Operating Procedures (SSOP). Hygiene system is one of aspect in Pre Requisite Program (PRP), which consists of cleaning and sanitation, hygiene and pest control. Hygiene is used to maintain and improve the health of workers and prevent pollution or contamination of the product. Sanitation is an effort or action taken to eliminate the things that cause pollution of the products generated from human, equipment and the environment. Hygiene related to products machinery and equipment, personal, production environments, pest control and securing of food from hazards. Pests are a source of food contamination at high risk. Production environment should be ascertained free from pests. Understanding the suitability and unsuitability is the purpose of this report related to the application of hygiene System Pre Requisite Programs Leo Snack Potato processing in PT. GarudaFood Putra Putri Jaya Lampung. Acctually hygiene system implementation in PT. GarudaFood Putra Putri Jaya Lampung has suited the requirements of Pre Requisite Programs. However Implementation of the hygiene system is still found unsuitability in employee personal hygiene. Workers don’t use work equipment such as mask, hairnet and work shoes or shoe cover as right requirements. The area around finished goods warehouse is dusty. lack of implementation and documentation of cleaning and sanitation systems and The use and handling of toxic materials has not socialized.
