Instant release

PURAC Powder MA offers a sour taste experience that is vastly more intense when compared to fat coated malic acid products. One of the powder’s key advantages is its almost instant flavor release (as shown in Figure 1). At the moment of consumption, the coating itself provides a clean, sour taste, which is followed by ongoing sourness from the malic acid.

the instant release of sourness is achieved by the absence of fat coating. A further benefit of PURAC Powder MA is its ability to maintain flavor stability over a long period of time, as demonstrated in Figure 2. Even after six months, the sour taste of candies sanded with PURAC Powder MA is unmistakeable.
