Procedure:• Combine batter mix with water to make the consistency of pancake batter (not too thick). Add Old Bay seasoning and mix well.• Lightly dust oysters with flour then add to batter mixture. Shallow fry at 350°F, allowing oyster mixture to cook for approximately
5 minutes or until well set. Turn fritter over and continue to cook for 5 more minutes. Allow to drain on a rack and cool. Fritters canbe made in advance and reheated in a 400°F oven for approximately 5 minutes or until hot. Traditionally served on white bread.

(this will help keep the skewer in place).• Combine pancake mix with enough water to create a thin batter. Lightly dust each Oreo in dry pancake mix, then dip in the wet
batter until evenly coated. Gently drop Oreos in the deep fryer until golden brown on bottom side, with tongs flip each cookieover and allow to brown on opposite side.
• Remove cookies from fryer on to paper towels and drain. Plate with a dust of powdered sugar and serve.
Sweet Chili Bacon Swords
Procedure:• Cut a thick slice of bacon and thread on bamboo skewer. Deep fry bacon until
crispy and golden brown.• To make the Sweet Thai glaze: Combine 2 oz. of sriracha sauce and 2 oz. of
agave nectar with 1 tsp. each of fresh chopped garlic and ginger. Add 1 Tbsp. offresh lime juice and 1 Tbsp. of fresh chopped cilantro. Bring sauce to a boil andreduce by half to make a syrup. Coat strained syrup on the bacon and serve warm.

Chocolate Coffee Funnel Cake
Procedure:• Whisk pancake mix with strong coffee or use water and coffee extract. Use half of the
amount of liquid recommended on the box. Add chocolate chips to batter.• Drop balls of dough in the deep fryer and turn until they are golden brown on all sides.
Allow to drain on paper towels and dust with powdered sugar.
