Personal cleanliness:

Shower or bathe before work!

Other Good Personal Hygiene Practices

Hair restraints: Wear a clean hat or other hair restraint when in a prep area. Keep hands out of hair and hair out of food!

Correct Work Attire

Wear clean clothing everyday! If possible, change into work clothes at

work.

Clean Clothing

Remove aprons when leaving prep areas for any reason.

Aprons

Remove jewelry from hands and arms before prepping food or when working around prep areas.

Rings, except for plain band Bracelets, including medical

bracelets

Watches

Jewelry

Your company may also require you to remove other jewelry such as earrings, necklaces, and facial jewelry.

Other Jewelry

DO NOT Eat Drink Chew gum or tobacco When prepping or serving food Working in prep areas Working in areas used to clean utensils and

equipment. Use only designated areas

Other Concerns

If you must taste the food during prepping, it should be placed in a separate dish and tasted with a clean utensil.

Tasting Food

Staff must be REQUIRED to report when they are sick.

When food handlers are sick they may need to be restricted or excluded. (Handout)
