SPIRAL MIXERS

Spiral mixers are designed for large doughs and heavy batters. The arm turns in one direction while the bowl turns in the other direction.

These are large industrial- type mixers capable of handling very heavy loads

DECK OVENS

Conventional oven. The heating coils are present at the top and bottom of each deck. Each deck has it’s own set of controls.Heating is by conduction.

In both types of ovens, entire racks of trays can be wheeled in forbaking.In a ROTARY OVEN, the entire rack rotates inside the oven. Here thefood is in motion, which gives a more even bake, eliminating any hotspots and uneven baking.They are also called MECHANICAL OVENS.

CONVECTION OVENS

Convection ovens contain fans that distribute (convey) the heat throughout theoven, but may cause a distortion while baking batters and soft dough.The food bakes faster at a lower temperature because of the forced heat.
