Ingredients125g rice flour35g plain flour130g granulated sugar

Method : • Sift rice and plain flour.• Add in sugar.• Slowly pour in the coconut milk, stir well till smooth.• Then add in eggs and egg yolks. Whisk well till fluffy. Strain the batter.• Lightly grease moulds with oil and heat over charcoal fire.• Place a laddleful of batter onto the mould, close the mould tightly and bake over half a minute on each side.• When golden, remove and fold into a quarter.• Press lightly to level the surface.
