Berry cones

Van Dyck Sweet or Gluten Free Crepes Fresh Berries Whipped Cream Berry couli Take a crepe and make one cut from the centre to the edge then roll into a cone. Pipe into the cone a small amount of cream* then fill with fresh berries Place on the serving plate and drizzle with berry couli, garnish and serve.

*For a healthier alternative, yoghurt can be used instead of cream.  Skewers  

Hedgehog Delight 6 Van Dyck Sweet or Gluten Free Crepes 1/2 a watermelon Fruit ( bananas, grapes, strawberries, kiwi fruit …) Packet of chocolate mousse Skewers Mix mousse according to instructions and leave in fridge for 15 minutes. Sit crepe flat and cover half with mousse. Roll crepe and slice into bit-sized portions. Fill skewers, alternating fruit with crepe ( 1 crepe per skewer) Push skewer into half a watermelon and decorate on end to make a face. Take 2 grapes and toothpick for the eyes and use half a banana slice for the mouth.

HOT serve Lemon Meringue Crepes

• 10 Van Dyck Sweet or Gluten Free Crepes • 500g Barker’s Lemon Curd • 200g drained, canned pears, chopped • 3 egg whites • 150g Sugar

Spray 10 ramekins with a little oil. Place a Van Dyck sweet crêpe in each ramekin. Mix the Barker’s lemon curd and pears together and place in the crepe. Beat the eggs whites together until fluffy, fold in the sugar gradually until all the sugar has dissolved. Pile on top of the lemon curd. Bake in oven pre– heated to 230°C for 5 to 7 minutes until golden. Serve immediately.
