Ivan Loubier says he had an interest in chocolate long before he reached the Comox Valley. But it wasn’t until he arrived here that his interest turned to into a pas-sion - and into what is now Ivan’s Truffles.Loubier was a chef in Toronto until the “hot kitchen” started to challenge his health. Attracted to the coast, he first arrived in Victoria. But he found a culinary “home” in the Comox Valley. He loves the region’s food culture, and he’s thrilled with the Comox Valley Farmers’ Market. In fact, he credits the Market with inspiring him to develop Ivan’s Truffles.Ivan joined the Comox Valley Farmers’ Market a year ago this month. “There are so many flavours here,” he says, gesturing to various corners of the Market. “Lavender, local honey - they all find their way into the truffles.” He also credits the Market with over 90% of his business. Even the exports to Halifax, Montreal, and Toronto he puts down to tourists who’ve visited the Market. What’s new at Ivan’s Truffles?In early December Ivan will be releasing his new hot chocolate mix. He says it’s something special, quite different from other hot chocolates. But he’s not saying any more. You’ll have to come to the Mar-ket to find out more.

Calling all farm and food lovers: It’s time to raise some funds for our new farmers! For 2 years now the Comox Valley Farmers Market has supported our new farmers with a New Farmer Bursary of $500 awarded in the New Year. Last year, with the generous support of Little Orca Bakery, we were able to give out two bursaries of $500. New farmers often struggle with cash flow early in the season, when income from the market and farm gate sales are low just as the need for seed and equipment purchases are needed and repairs and expansion are needed before the growing season. Funds for the bursary are raised through donations at the market, T-shirt sales and topped up by the Market. Past recipients used these funds to expand production, and install water lines and build hoop houses. Ivan Loubier and his chocolate truffles
INGREDIENTS: 1 lb ground turkey or chicken*1 lime or lemon, zest of1 egg*2 garlic cloves, minced*2 Tbsp fi nely minced green onion2 tsp fi sh sauce 2 Tbsp hot chili garlic sauce or to taste3 Tbsp cornstarch 2 Tbsp fi nely chopped, fresh cilantro1 English cucumber
DIRECTIONS:Place zest in a bowl. Whisk in egg, garlic, onion, chili and fi sh sauces. Crumble in turkey and sprinkle with cilantro and cornstarch. Mix together. Shape into 1-inch balls. Place on a parchment lined baking sheet and bake in 350° F oven, 15-20 minutes or until fi rm to touch. Set in a serving dish. Serve with toothpicks. Option: score cucumber with a fork then slice into rounds. Set one meatball on each cucumber slice. Serve at room temperature.
Chef’s tip: Prepare meatballs ahead of time (don’t bake). Freeze on wax paper lined baking sheet, then place in a Ziploc bag for up to 1month. Bake from frozen, adding 7-8 minutes to cooking time.

Ivan Loubier says he had an interest in chocolate long before he reached the Comox Valley. But it wasn’t until he arrived here that his interest turned to into a pas-sion - and into what is now Ivan’s Truffles.Loubier was a chef in Toronto until the “hot kitchen” started to challenge his health. Attracted to the coast, he first arrived in Victoria. But he found a culinary “home” in the Comox Valley. He loves the region’s food culture, and he’s thrilled with the Comox Valley Farmers’ Market. In fact, he credits the Market with inspiring him to develop Ivan’s Truffles.Ivan joined the Comox Valley Farmers’ Market a year ago this month. “There are so many flavours here,” he says, gesturing to various corners of the Market. “Lavender, local honey - they all find their way into the truffles.” He also credits the Market with over 90% of his business. Even the exports to Halifax, Montreal, and Toronto he puts down to tourists who’ve visited the Market. What’s new at Ivan’s Truffles?In early December Ivan will be releasing his new hot chocolate mix. He says it’s something special, quite different from other hot chocolates. But he’s not saying any more. You’ll have to come to the Mar-ket to find out more.

Calling all farm and food lovers: It’s time to raise some funds for our new farmers! For 2 years now the Comox Valley Farmers Market has supported our new farmers with a New Farmer Bursary of $500 awarded in the New Year. Last year, with the generous support of Little Orca Bakery, we were able to give out two bursaries of $500. New farmers often struggle with cash flow early in the season, when income from the market and farm gate sales are low just as the need for seed and equipment purchases are needed and repairs and expansion are needed before the growing season. Funds for the bursary are raised through donations at the market, T-shirt sales and topped up by the Market. Past recipients used these funds to expand production, and install water lines and build hoop houses. Ivan Loubier and his chocolate truffles
INGREDIENTS: 1 lb ground turkey or chicken*1 lime or lemon, zest of1 egg*2 garlic cloves, minced*2 Tbsp fi nely minced green onion2 tsp fi sh sauce 2 Tbsp hot chili garlic sauce or to taste3 Tbsp cornstarch 2 Tbsp fi nely chopped, fresh cilantro1 English cucumber
DIRECTIONS:Place zest in a bowl. Whisk in egg, garlic, onion, chili and fi sh sauces. Crumble in turkey and sprinkle with cilantro and cornstarch. Mix together. Shape into 1-inch balls. Place on a parchment lined baking sheet and bake in 350° F oven, 15-20 minutes or until fi rm to touch. Set in a serving dish. Serve with toothpicks. Option: score cucumber with a fork then slice into rounds. Set one meatball on each cucumber slice. Serve at room temperature.
Chef’s tip: Prepare meatballs ahead of time (don’t bake). Freeze on wax paper lined baking sheet, then place in a Ziploc bag for up to 1month. Bake from frozen, adding 7-8 minutes to cooking time.
