FROM THE MANAGERSpring is just around the corner and so is a full lineup of Clubevents. The Easter Bunny will make a visit to the Club April 12th.Make plans to bring the entire family and remember little nibblers4 and under eat free.
New carpet, dining chairs and window treatments have been in-stalled on the east side of the Club. A new lunch menu will debutin March along with the introduction of our 25th AnniversaryMenu. Additional details for this Thursday night offering can befound on page six of this newsletter.
Recent improvements to the building include TV’s in the elevators, restripping of theparking garage and new carpet in the garage stairwell area.
When dining at the Club, we always like to know you’re coming. Reservations help usstaff properly and prepare food in sufficient quantities to ensure every member receivesthe service one expects of a fine private club. Even if you’re in the car on the way tobrunch, we’d like the opportunity to have your special table ready and waiting whenyou arrive. A great debate raging in the wine world today is over the differences be-tween wine coming from the New World versus the Old World. Much ofthis arguing quickly becomes obscured by emotions. Wine has the ability tocreate great passions. This in some way is proof of its greatness and impor-tance to humankind. However, beyond the prejudices and rancor this dis-cussion has some valid points of contention.
Old world wines come from the "classic wine making regions" in Europe.New world wines come from everywhere else. The Old World can gen-erally date their origins of wine production back to the Roman Empireand beyond. Spans of time like this simply cannot be replicated by anyother means. Throughout this 2000+ year period growers were able tofigure out which grapes grew best and which areas of land consistently produced the finest qual-ity. When the Roman Empire collapsed many of the vineyards were abandoned and so by naturalselection the grapes which managed to survive became the grapes that are still grown today.
Naturally the growers from these regions-France, Germany, Austria, Italy and Spain have somepride in this history. Many growers are descended from families that have been tilling the soil forgenerations. This type of history has its’ dangers in that it creates a kind of complacency, if it’s notbroke than why fix it kind of thinking. In this regard the advent of New World wines has been apositive influence on the established order as they are compelled to compete with a broader mar-ket and changing tastes.

Pesto is getting to be such a mainstream food in America that youwill find it in many different recipes and in many different applica-tions. Some of the more common types are spinach, cilantro, sun-dried tomato and parsley; and, of course, the traditional is with basil.The name is contracted from Pesta, meaning to pound or to crush.The ancient Romans ate a cheese spread called “moretum” which wasmade from basil. Basil originally came from North Africa, although itwas domesticated in India. Ligurians around Genoa took basil andadapted the recipe we know today by grinding garlic, parsley grated
hard cheese and pine nuts with a little olive oil to form “pesto”. In France, the dishevolved into Pistou, the same pesto recipe but without pine nuts. Let me leave youwith a recipe you can try in your own kitchen. It stores well in your refrigerator for future applications.

3 large garlic cloves
½ cup pine nuts
2 ounces Parmigiano-Reggiano,
coarsely grated (2/3 cup)
1 teaspoon salt
½ teaspoon black pepper
3 cups loosely packed fresh basil
2/3 cup extra-virgin olive oil
½ cup grated cheddar cheese
PREPARATION
With food processor running, drop in
garlic and finely chop. Stop motor
and add nuts, cheese, salt, pepper and
basil, then process until finely
chopped. With motor running, add
oil, blending until incorporated.
