Although restaurants serving vat-roasted chicken are ubiquitous in Jhushan and Lugu areas, each of them has a somewhat distinct approach to their delicacies. So what's the secret behind this tasty chicken dish? To make an excellent vat-roasted chicken -- characterized by crispy skin and a bouncy, tender texture -- it's important to have highly skilled chefs and select high-quality chicken that has an evenly distributed, appropriate amount of fat, succulence and a weight of at least 3 jin (catty). Following the instructions on the ancient recipe passed down, the chef places a gutted chicken along with premium seasonings into an earthen vat, and roasts it over longan-wood fire for 50 minutes. At carefully controlled temperatures -- until its skin takes on a golden amberish tin and the meat becomes pleasantly tender. Fresh from the oven, the tender chicken with crispy skin is simply irresistible!

Rice BranThe Qimiing Rice Bran Store on Jhushan Old Street is the oldest of its kind in the Jhushan area. It fol lows an ancient recipe to provide a daily supply of more t h a n 10 t y p e s o f h a n d m a d e products. including mult igrain bran, Taiwanese pop rice and flour porridge. The store is not merely a rice bran supplier, but is a business with strong heritage background.

Taiwanese MeatballsCurrently operated by its 4th - generation owner, the "Temple Gate Taiwanese Meatballs" on Jhushan Old Street presents a flavorful snack with super-chewy, yam flour-based dough. with pork and bamboo shoot fillings. The meatballs are deep-fried in lard and served with an original dressing. Don't forget to ask for another bowl of refreshing tofu soup for a mind-boggling culinary experience!

Ta i j i Splendor Land has the countr y's most distinctively diverse tea-and-bamboo menus, among other products, insp i red by the two agricultural staples that are already an integral par t of the local l ifestyle. The Nantou County Government collaborated with National Chi Nan University and local residents to promote Taiji Banquets in order to rejuvenate Taiji Splendor Land's culinary heritage.

All visitors to Nantou are highly recommended to try the local delicacies, notably the bamboo-and tea-inspired menu from Jhushan and Lugu areas that features the crispy yam-stuffed dumplings, the ultra-tender, vat-roasted chicken (with crispy skin!) and the immensely tasty bamboo-tube-stuffed rice. The Jhushan Old Street is also a great place to sample authentic snacks such as spring rolls, Taiwanese meatballs and glazed sweet potatoes.

Yam-stuffed DumplingsBest served when steaming hot, this mouth-watering Jhushan specialty combines locally produced yam and bamboo shoots into a chewy dough generously stuffed with tasty fillings, made from either traditionally sweet potatoes or smooth yam paste. The unique, exclusive recipe of yam-paste-and-leaf dumplings requires yam leaves to be blender-processed to ensure a smooth texture, before mixing i t with cooked yam for the f inal product. Diced meat, mushroom and bamboo shoots are seasoned, sauteed, wrapped in the dough and steamed for 10 minutes. Voila! There you have a snack that drives gourmands crazy!
