On behalf of the students at Terlingua CSD, I would like to express our heartfelt thanks for providing the funding to purchase Christmas presents for the students at Terlingua CSD. The sentiment and actions at the Great Peppers’ Meeting that led to the fundraising turned into smiles and delightful giggles of our kiddos as they were handed their presents.

These columns are getting difficult to write. We have less cook offs and few answers as to when we will be able to cook consistently. Planning for major events like

the TICC and the Great Peppers Meeting are all in the infancy stages, both for perfect scenarios and contingency plans.

There have been questions that have started to pop up about points, qualifications, pod cookoffs, etc. Much like the months of April-July of 2020, I am going to ask everyone to BE PATIENT! Now that we are almost a full year into the pandemic, and we are not in completely uncharted waters, we still do not want to rush decisions that can change in an instant.

Over the coming weeks, the Board will confirm a meeting date and location for the Winter Board meeting. A majority of this meeting will address planning best case and worst case scenarios for the TICC, the GPM, Rules changes, and potential rule adjustments that might be necessary. As Keith mentioned in his column last month, once we have a date and location nailed down, we will share that information.

As we continue to move forward as a country and organization, it is important that I continue to stress the importance of

following the recommended health and safety protocols, both at CASI events and in your personal life. Every day it seems we are learning of another cook diagnosed with COVID, or worse, hearing we have lost a longtime friend. Please socially distance, wash your hands often, sanitize judging areas and tables, and if you are questioning whether or not it is safe to have an event, please err on the side of caution.

Finally, in keeping with the theme Keith started last month, I want to announce that I will not be seeking re-election to the Board of Directors. These last eight years have provided a lifetime of memories and friendships that are treasured. It has afforded me the opportunity to learn from some of the smartest business minds that I have met, taught me new skills, and added a gray hair or two. We have weathered this storm of a pandemic together, but it is time for me to go back to being a dad and a chili cook.

If you are interested in running for the Board of Directors, now is the time to act! There will be four Director positions and the Executive Director position up for election this year. Is this a commitment? YES! But when you reach out to any current or past CASI Director, you will also find that it is a rewarding experience. Please take the time to consider lending your talents and expertise to the Organization.

Our team, the Bottom of the Barrel Gang, was formed in 1976. Our first cookoff was Traders Village in April of that year. From the beginning it was a Show Team. I was the only cook on the team, unless you count Dr. John, my dad, who cooked Dead Armadillo Chili in front of our 20 foot long chili stand. But that was part of the show.

It was two years before I even placed in the top ten. When they called my number I was in such shock I just stood there and stared at my number until Richard pushed me to the stage. I just knew they made a mistake.

Then in 1979 I placed first in the Arkansas State Championship. We celebrated in front of the stage for a long time. By the time we made it back to our chili stand every last drop of Dr. John’s chili was gone. It contained pigs feet, pig ears, pig maws, ground meat, chili spices and water. It looked nasty, but obviously the public thought that because I won, that must be the winning chili. Dr. John loved it. We still laugh about my first win to this day. And I miss the fun we had doing show in those days. Every cookoff was an epic event. Now we have 20 cooks on our team, and do very little show. But every

cookoff is still like a family reunion and fun.I love my chili team.

Remember Your First Ever First Place? Cooks share their first time winning experiences and their trophies!

I had always heard about cookoffs, but I had never been to one, but then here I was, hanging out at chili cookoffs and drinking adult beverages. Then on to judging when they needed one and meeting some of the nicest people I had ever met.

I was determined to drive my new friend where ever needed to get her qualified for the big show in Terlingua. It was her dream to get to cook there, had been for many many years and we were going to get there. Well it happened. We went to smaller cookoff later in the year and they needed a cook. I was asked to please cook so everyone didn’t have to go home without points and I immediately agreed. I PLACED! Don’t remember where, third or fourth, something, I don’t remember. Hell, it could have been tenth, it didn’t matter, I placed! Needless to say, I WAS HOOKED. Pole, line, and sinker or should I say “table, pot, and stove!”

I decided to try to qualify right then and there and I almost did. Even though it was that late in the year I ended up with nine points . Four of them was my first ever 1st Place that I got the last day of the chili cooking year at Ol’ Pegs chili cookoff in Amarillo. It was a great night. That was 1991. I cannot believe we have been so blessed as to be allowed to do something we love surrounded by some of the greatest people you would ever want to meet for so long. My first First Place was in 1993 at the Sommerset American Legion post 443. Not only was that my first first place–it was my first time placing and I had been cooking since 1989.Diana Klade

I started on the chili trail in 1991. I was not a cook, but the driver and set up man for Pam Gonzalez and Carol Lilly. I would set them up and they would cook. Carol got started because she was working for Pam at Bekins Van Lines.

Pam was cooking at the time and asked Carol to join her, so I tagged along as driver and set up man. About halfway through 1991, we were at Elks Lodge in Wichita Falls. They didn’t have enough cooks to make it and so we had enough stuff to make another pot. I jumped in and cooked and got Fourth Place that day! I was hooked! I only cooked a few more times in 1991. In 1992, I would cook along with the girls and have the fun they were having. On August 15th, 1992, I won First Place in Hale Center, Texas. That’s all it took. In 2020, I was able to host the “Bite Me CCO” in Terlingua. We took everyone’s temperatures and wore mask and gloves. We kept social distancing.

I was able to cook with my local friends and other friends from the area. I feel very fortunate that I was able to win First Place. I hope very soon that there will be other CCO to participate in. Stay safe and well.Jennifer Hansen

My first, First Place was at the Clear Lake Elks Lodge in Kehma. I think it was about 2008, but that’s a guess.

I do remember dad mixed everything for me and I had joked I needed a win to qualify! They got to Third Place and we started packing up our stuff and stood in the back. Called my number for First Place and couldn’t believe it! I did not go to Terlingua that year, but remember the day well! Kathryn Cavender

I had cooked for many years in the Junior Division in Texas. Once mom and dad had moved to Florida we no longer went to cookoffs. At that time there were no chili cookoffs in Florida. Mom and Dad moved to Tennessee in 1993 and, with Preston and Susie Shaw, started up the Heart of Tennessee Pod.

I stayed behind in Florida getting married and having my daughter, Abbigail. In 2000 I went to Terlingua for the first time. Mom and Dad had told me that you had to be 29 to go Terlingua, clearly BS!

I came back determined to be qualified the next year. I started to compete in Florida. By then the Flop Pod was established in Florida and had cookoffs, mostly in the panhandle. I got my first First Place as an adult in 2003 in Dallas at the Day after TOT CCO. I didn’t get my first First Place in Florida until 2005 in Deland, Florida. I just remember coming out of my chair and jumping with excitement. My first First Place in Florida! Finally!Candi Knight Arevalo

The second time that I cooked, I was cooking at Fort Sam Houston in San Antonio. When it came time for announcements we were standing in a field with a stage that was a good distance from the crowd. The announcer began calling numbers, I kept looking at my number with no luck. By the time they got to Third Place, I thought that I didn’t have a chance. He called the First Place number and low and behold it was mine! I looked at the number, looked at Eldon, looked at the number and back at Eldon, excitedly jumping up and down. I turned to run to the stage and fell flat on my face. Eldon had turned to talk to someone,

so didn’t see that I had fallen. He turned back around and wondered where I was, then realized I was on the ground not too far away, my feet were still moving, but I wasn’t going anywhere. Later Eldon said I looked

like an overturned car on a cartoon with the wheels still turning. Rumor has it that I fell more than once. And at one point the

announcer said, “I don’t think EMS is going to cover this”. HAHAHA! I finally made it to the stage and was SO EXCITED, out of breath and speechless (believe it or not). The announcer asked me my chili’s name and I couldn’t think of it. Then I said “6-Pack Chili”. Eldon shook his head and said it took you more than a 6-pack to get to this point. HAHA!

Later we all celebrated at the cook site. Eldon took my kids and I out for a nice supper that evening. My face was skinned and I ended up with a black eye, needless to say the waitress kept an eye on us the whole time. We think she was probably convinced that there was some spousal abuse going on and Eldon was making up for it. We explained what happened, but I am not sure she bought our story.

When I started planning to cook chili we tried to come up with a chili name. We came up with “12-Pack Chili”. A couple weeks after this incident someone suggested my chili name of “Fall Down Chili”. That name has stuck for 20 plus years. Kim Hiley

From the Champ: Greetings from LouisianaI hope everyone is staying safe

and doing what you feel is best for you and your family. As many of you know, I am the Director of Environmental Health and Safety at Rice University, so I have been working with and developing processes to keep people safe in a research environment for years. I invite everyone to go to my departments’ web site: safety.rice.edu Look under the menu at the training videos on surface contamination, hand washing and the difference between mask and respirators. Remember a mask is only as good as the fit! It takes some vigilance and personal responsibility to keep everyone safe.

I just got back from the Taste of Blanchard in Shreveport, Louisiana. I have attended this cookoff for several years and anytime I can mix cooking and gambling it’s a great combination. My luck at the slot machines

was not as good as my luck at the cookoff. Lots of great cooks as evidenced by the six point spread between 1st–10th Places and a ten point spread between all the chili’s that went to Final

Table. Great support by the community. All public judges; the show trophies were made by the Jr. High Shop class; the embroidery on the chairs was done by a local vendor and the craft show and corn hole tournament was well attended. Somewhere in the back 40

was a BBQ contest. I have several cookkoffs I plan to attend in the next two months, the Central Texas Regional, the Marvin Longabaugh Memorial, Texas Open, Florida State and the Pasadena Pod cookoff.

It would be pretty hard to find anything good that happened in 2020, so I won’t try. However, as we look forward to a rebirth in 2021, it would be a good time for a reset. The lack of cookoff activity offered an opportunity to take a step back

and reflect on how we were doing things. This would be a good time to examine the CASI Rules Book so when things pick up (which I believe they will) in the spring, we will be on top of the judging procedures. The road back will not be easy so we need to make sure we are conducting cookoffs so people will want to come back out to support our charities, and CASI.

The events that have taken place in our country the last couple of months have shown how easy it is to find different meanings from an identical set of circumstances. People will look at a rule and interpret it in a way that suits their

needs. This can be chalked up to human nature and will not change, nor should it; we need that exchange of ideas. Last year I had a discussion with a cook who felt a particular CASI Rule and how it was applied, hurt their situation. It didn’t, but I could easily see how it could be construed in that manner. CASI Rules are not designed to penalize any group of individuals, and I tried in our conversations to emphasize that. The person and I were looking at the same set of circumstances and coming away with different interpretations. Conversations, questions on the rules are a good thing, it keeps us

thinking about them, how they are applied, and if any need changing.

So, make no mistake, ask questions. Our Executive Director is the CASI point of contact. I will also answer clear cut questions, but if they are involved would most likely bring Keith into the discussion.

I think I see a light at the end of this long tunnel, I hope so. I know in my area (the Three-I’s) we are making plans for a fun spring/summer. I am confident we will get through this and CASI will survive.

Everyone is doing a great job creating cookoffs online! There are only a couple of things I need to call to your attention.

When you create a cookoff and you don’t request a box of Trails, cup tickets, or a rule book, you will not receive a packet of forms by regular mail. Your forms will be included in your approval email as a .pdf file. Please print out the forms, and fill in your cookoff date and the cookoff number shown on the approval email.

When submitting cookoff info for me to put into the system, please use the form online or in the Terlingua Trails so all information needed will be

covered. Often email addresses, zip codes and counties are left off. If you are do-ing the input yourself and have a problem, please contact me instead of trying to submit again, especially if you get an error message. Thank you for your support! To meet the cookoff advertising requirement, upcoming cookoffs must be publicized in the Terlingua Trails in the month prior to the event OR be approved and appear on the official calendar 30 days prior to the date of the cookoff.
