Favorite Winter Recipes:Butternut Squash Soup Ingredients: 1 medium onion 3 lbs cubed butternut squash 1 box organic chicken broth 1 stick butter 1 cup apple sauce salt and pepper (to taste) 1/2 pint half-n-half cream Directions: Dice and saute onion in olive oil tiltender. In a large pot, add all ingredients, cover

and let boil until squash is soft and liquid boils off. Use an immersion blender tosmooth out soup. Serve hot with a dollop of creamer.

Split Pea Soup Ingredients: 2 1/4 cups dried split peas 2 quarts cold water 1 1/2 pounds ham bone 2 onions, chopped 1/4 tsp ground black pepper 1/2 teaspoon salt 3 stalks celery, chopped 3 carrots chopped 1 medium potato chopped Directions: simmer peas gently for 2 mins, and then soak for l hour.Once peas are soaked,add ham bone, onion, salt, pepper. Cover, bring to boil and then simmer for 1 1/2hours, stirring occasionally. Remove bone; cut off meat, dice and return meat tosoup. Add celery, carrots and potatoes. Cook slowly, uncovered for 30 to 40minutes, or until vegetables are tender. for a creamer version; use immersion blender.
