Don’t say this. I mean it.

I was going to title this article “Things you should never say to some-one going through a tough time,” but it was too long for a headline. I might also call it, “Stupid things people say to hurting people,” but that seems par-ticularly uncharitable and might actually qualify as something you shouldn’t say to someone.

But let me be clear: words matter. When we are speak-ing to someone who is strug-gling, we can either increase or lighten their burden. And the fact that we meant it to be helpful and our heart was in the right place doesn’t really count for much if we add to their pain through careless words.

Some unhelpful things people say:

“I understand what you’re going through.” Simply put, no, we don’t. We may have had a similar situation, but our situation was not theirs because we are not them. We can’t even under-stand their situation after walking a mile in their moccasins.

Here’s a related one: “That’s just like what hap-pened to my cousin (or pick a relationship).” No, it’s not, for the same reasons.

A variation on the same theme is when we start tell-ing another story, either our own or someone else’s, that we think is more dra-matic than the one being told. Most of us would likely never say to a hurting per-son, “Well, that’s nothing! You should hear this!” We have a little more sensitiv-ity than that (hopefully). But that’s what we com-municate to them when we start another story. Unless they ask for another story,

this conversation is about them.

Here’s another one: “Everything happens for a reason.” No one, let me repeat, NO ONE ever fi nds that helpful when they are in the middle of a tough time. Sometimes people console themselves with the thought that there must be a reason for this, but I’ve yet to meet some-one who wishes someone would tell them that it happened for some vague reason. Unless we know, defi nitively, the reason and can tell them with assur-ance (which we can’t, by the way), this statement is not helpful and may actu-ally come across as an accusation.

And please don’t say, “The Bible says everything happens for a reason.” The fact that the Bible actually doesn’t say that should be sufficient reason for not going there. In fact, play-ing the Bible card right out of the gate (how’s that

for a mixed metaphor) may not be the best way to demonstrate the charac-ter of Jesus and share the gospel.

Furthermore, let’s not throw God under the bus with “God won’t put more on you than you can handle.” There are two problems with that. First and fore-most, the Bible doesn’t say that. Anywhere. Secondly, a drowning person doesn’t need to be thankful they are not wearing cement shoes. They are still drowning and need to be thrown a lifeline.

Having eliminated some of the most common things people say, by identifying them as unhelpful, I should probably tell you some help-ful things. But you are going to have to wait until next week for that.

N o t h i n g is worse than grill-ing a steak, e n j o y i n g the aroma as it cooks and then barely being able to cut through it with your best steak knife.

The issue probably isn’t your skill on the grill. It’s most likely a bad match of cooking method and cut of beef.

The following informa-tion from the Texas Beef Council will equip you with knowledge to prepare the perfect meal packed full of nutrition.

Beef is an excellent source of 10 essential nutrients, including pro-tein, zinc, vitamin B12, vitamin B6 and niacin. On average, a 3-ounce serving of lean beef is about 150 calories.

Lean cuts of beef — those with little marbling and external fat — are bet-ter suited to slow cooking methods, such as smoking.

Slow cooking allows con-nective tissue and muscle fi bers to break down. The

process tenderizes what otherwise would be a tough chew. Those cuts are from the parts of the animal that work the hardest, the muscles used for walking and locomotion.

Generally, those cuts are the round, which is at the hindquarters of the ani-mal, and the chuck and brisket, which are at the front of the animal from the shoulders to the chest.

Cuts of meat from these areas, which would be good for your smoker, include brisket, chuck roast, arm roasts, top and bottom round roasts, tip roasts, eye round roast and bone-less rump roast.

In between the round and the chuck are the middle meats, which are best for grilling. They tend to have a lot of marbling, which are the little white fl ecks of fat throughout a piece of meat. Generally, the more marbling in the meat, the more palatable it will be — fl avorful, tender and juicy. The rib and short loin tend to have the most marbling. The sirloin, which offers lean, tender cuts of meat without much fat, is situ-ated behind the short loin and in front of the round.

Cuts from the rib, short loin and sirloin that would be great on the grill include

bone-in and boneless ribeye steaks, back ribs, strip steak (such as New York or Kan-sas City strip), T-bone steak, porterhouse steak, top sir-loin and tenderloin.

Skirt steaks, which come from the middle part of the animal’s underside, found in the fl ank area, are good quick-skillet muscle cuts best used for fajitas, tacos and in salads.

To gain additional infor-mation on cooking with beef, chicken, pork or fi sh, be sure to attend the Path to the Plate Grilling Workshop scheduled for April 27 and May 4 at the Wise County Fairgrounds.

The event is scheduled to

begin each night at 6 p.m.April 27 will focus on porkand poultry while the May 4th workshop will focus onbeef and fi sh.

Dear Neil: My redtip p h o t i n i a s have brown spots on their leaves and it appears that they are dying. The local store told me it was a fungus and that there was nothing I could do to stop it. It’s all up and down our street. Can you give us insights on what we should do?

That’s Entomosporium fungal leaf spot. It has rav-aged redtip photinias fi rst, and now Indian hawthorns all across America. I’ve seen it in landscapes in the rainforest in Western Wash-ington, and I’ve seen it in desert areas of California. It is all across our state of Texas, and what they told you was correct. There is no fungicide that stops its spread. First you’ll have the brown spots, then pale leaves, then white leaves

that will then scorch and die. Entire branches will die and eventually you’ll have to remove the plants. I wish I had better news, but it’s probably time to switch off to some other type of shrub. Hollies are handsome and very dependable. Nellie R. Stevens is my favorite for a large shrub, also Oakland and Willowleaf in decreas-ing order of size.

Dear Neil: I saw your post about dwarf yaupons showing dead areas of leaves. I wanted share my own observations from here in our neighborhood. I have watched feral cats mark their territories on the dwarf yaupons, and within a short period of days, all the leaves in the sprayed portions turned brown. It seems to affect dwarf yaupons more dramatically than any other plants in our landscapes. I thought that might be of help to your readers.

That’s a terrifi c sugges-tion that is very likely right on target. Thanks!

Dear Neil: I am trying to remove a yaupon holly that is growing beneath a large

oak. I can’t have the stump ground out. I’d like to fi nd some kind of brush killer I could daub onto the cut holly stump to keep it from sprout-ing back, but the products I’m fi nding are intended to be sprayed on. I don’t want to hurt the oak.

Use a broadleafed weed-killer spray (containing 2,4-D), but instead of just paint-ing it onto the cut surface, drill holes into the stump and pour the herbicide in at full strength. Allow it to soak into the wood, then repeat the process. If you’re careful in your drilling, that will keep it all contained within the stump. It should do the job.

Dear Neil: I have a seven-foot-tall fi g tree that blew over in a windstorm two years ago. I tied it upright and it seems to be doing very well, but it still has no root support. Is this going to be a permanent situation?

It should not be. Probe around on the uprooted side of the tree to see if there is any type of debris that would keep its roots from develop-ing normally there – chunks

of concrete, old stump, etc. I suspect you won’t fi nd any-thing, and if that’s the case you probably ought to trim it drastically to remove some of the sailboat effect of the large leaves. Allow it to regrow from close to the ground and it should sta-bilize. Some plants such as lacebark elms and purple-leaf plums are notorious for this bad habit, but I’ve not heard of fi gs having this trouble.

Dear Neil: I planted three green ash trees about three years ago. They lost their leaves prematurely last year, and as things stand now they still have no leaves. Is this the way they normally grow?

While it’s certainly not what you would want from three shade trees, unfortu-nately, it is fairly normal behavior for ash trees. They live hard and short lives, usually due to invasion of ash borers. They should have leafed out weeks ago. It’s time to think about bet-ter species to use to replace them. Sorry for the bad news.

Dear Neil: I have several 30-year-old crape myrtles in my yard. I recently noticed some white things on their trunks. When I probed them they did not move, but they seemed to be burrowing in the tree’s surface. What are they, and how can I get rid of them?

Those are a comparatively new insect to Texas, crape myrtle scale. They were fi rst observed in Richardson in 2004, and for several years were pretty much confi ned to the North Dallas area. More recently, however, they have shown up across more of Texas and the South. I’ve been watching this pest all of that time and I can hon-estly say that it has never killed a crape myrtle. But it has some unsightly habits. It spews out a sticky hon-eydew residue that coats the leaves and stems of the plants. Sooty mold then develops in the honeydew. The black stems are unat-tractive and people get con-cerned about them, but in reality the way to prevent the mold is to prevent the scale in the fi rst place. A soil

drench with Imidaclopridmade around each crape myrtle in early May will usually stop the scales fromfeeding on the plants. Thereis also a predatory lady-bug (black with two orangespots) that will help keeptheir populations reduced. So they’re a nuisance, but not a horrible threat.

Dear Neil: Our pecanswere fi lled with a mold-likesubstance last fall. What canwe do to prevent that thisyear?

Follow the Texas A&MExtension horticulturepecan spray schedules you’ll fi nd online. That was prob-ably hickory shuckwormdamage that kept the ker-nels from fi lling out. The mold formed in the ensuingmonths before the pecansfi nally dropped.

was not as strong as last week’s weaned calf sale, but high prices had good gains. 5-7 weight steers $4/cwt higher; 2-3 weight heifers

had double digit gains. Good demand for the better

cattle. Packer prices were $2-$3 lower refl ecting a backlog of cattle at the plants as spring culling isunderway.
