How to make Napolitano Spaghetti Sauce
• Prep Time: 10 minutes• Cook Time: 30
minutes to 2 hours• Serves: 4-6
Ingredients• 4-5 large clove garlic,
minced• 5 cups fresh tomatoes
(peeled & seeded) OR• —2 28 ounce cans of San
Marzano tomatoes• 1 cup of fresh basil
chopped• 1 tablespoon fresh parsley• pinch of fresh 1 teaspoon
sea salt, preferably gray salt
• Pinch baking soda or sugar, if needed
Directions• Heat the olive oil in a
large pot over moderate heat.
• Add the parsley, basil and garlic and cook briefly to release their fragrance.
• Add the tomatoes, basil and salt
• Puree the tomatoes with an immersion blender or mash them
• Simmer briskly until reduced to a sauce like consistency,
How long do I simmer the sauce?
• The timing will depend on the ripeness and meatiness of your tomatoes and the size of your pot. If the sauce thickens too much before the flavors have developed, add a little water and continue cooking.
• It can simmer 2 hours or so.

• Taste and adjust the seasoning. If the sauce needs a touch of sweetness, add the sugar and cook for 5 more minutes.
• Boil 1 pound of pasta 8-9 minutes. Ladle it with the sauce.
• Sprinkle with a bit of chopped basil and serve!
