A NEW SLANT ON

F or Rachel Allen, as she demonstrates in her Good Food series and accompanying book, home cooking is about making simple, wholesome food that the entire family can enjoy together.

Try some of Rachel Allen's recipes at home...

HOME

COOKING

Crispy prawns with

Chinese noodle stir-fry

It's all about simple pleasures this week,

as we talk to Rachel Allen about her book

Home Cooking and take a peak at some

of the delicious recipes found inside.

400g medium Chinese egg noodles 2 tsp sesame oil 3 tbsp groundnut oil 375g raw, peeled large tiger prawns or about 24 small prawns, split in half lengthways if large. 3 tbsp plain flour 2 cloves of garlic, peeled and finely chopped 2 tsp finely chopped root ginger 1 red chilli, deseeded and finely chopped

1 carrot, peeled and cut into fine strips 110g green beans, topped and tailed and halved 2 tsp dark soy sauce 1 tsp caster sugar Bunch of spring onions, trimmed and cut into strips 110g beansprouts 2 tbsp roughly chopped peanuts, toasted Salt and freshly ground black pepper

Bring a large saucepan of water to the boil with 1 tsp of salt and cook the noodles for 3-4 minutes or following the instructions on the packet until tender. Drain well and return to the pan. Drizzle the sesame oil over and toss to coat. Cover the noodles and set aside in the pan to keep warm. Pour 2 tbsp of the groundnut oil into a wok or large frying pan on a medium-high heat. Season the prawns with salt and pepper and

toss in the flour to coat lightly, shaking off any excess. Fry the prawns for 2-3 minutes until golden and cooked through. Set aside to keep warm, but do not cover. Add the remaining groundnut oil to the wok or frying pan. When hot, add the garlic and ginger and saute; for about 30 seconds until just golden. Tip in the chilli, carrot and beans and saute for a further 3-4 minutes.

Season with the soy sauce and sugar. Add the noodles and all but a handful of each of the spring onions and beansprouts and stir-fry for 1 minute more. To serve, divide the noodle stir-fry between warm plates or bowls. Arrange the prawns on top and sprinkle over the remaining spring onions and beansprouts. Scatter with the toasted peanuts and serve immediately.

Box Bros. Ltd. having served Blackpool and Fylde with a funeral service since 1915 Realised the necessity of Chapels of Re-pose facilities for Poulton-le-Fylde and the surrounding districts. Appropriate prem-ises were purchased in the 1990’s and a complete Funeral Service consisting of Chapels of Repose, private interviewing rooms, offices and accommodation for a resident Funeral Director were made avail-able. Having a resident Funeral Director and Funeral Arranger has resulted in offer-ing a 24 hour a day service to the local community. To maintain the high standard of service offered, Funeral Operators with the neces-sary qualifications are essential. Steve Nicholls and Sandra with nearly 30 years

experience, who hold membership in the British Institute of Funeral Directors and diplomas in Funeral Directing have relo-cated to Poulton-le-Fylde. Said Steve,

“Our past experience of helping fami-lies of all races and religion with funer-als including National and International Repatriations is always available at Sta-tion Road, whether it is through advice or assisting with any queries that may occur. We continued our business ethic of providing a personal, friendly and helpful service, with attention to the individual client's requirements. Specialising in craftsman handmade gold jewellery and offering a comprehensive repair, remodelling, rethreading and valuation service. Our modern jewellery designs include rhodium finished sterling silver, Baltic Amber and Jade. Our handmade Natural Gemstone and Freshwater Cultured Pearl necklets and earrings, (exclusive designs to order) combine quality with fashion to complement the look of today's woman. Thanks to the continued support of our valued customers and to the hard work of my

dedicated colleagues, we moved to our new premises next to the 'New Penny' at 6 Tithebarn Street, on 2nd June 2010, where we welcome familiar friends and new faces. Our investment in Trend's future is a positive investment in the future of Poulton. We believe the village still has much to be proud of and much potential. Several groups are actively working to preserve its traditions, promote its potential and enhance its features. Life for those with a hearing loss set to improve. People with a hearing loss can often misunderstand the spoken word. There are certain sounds people don’t hear very well even if they have a mild hearing loss. In particular, consonant sounds like ‘f’ ‘s’ and ‘sh’ which are quite high pitched are often not heard whatsoever in running speech because most people lose their hearing for high pitched sounds first and those sounds are particularly soft in the first instance. Many vowel sounds are easier to hear because they are powerful, relatively low pitched and of a long duration. Consonants with ‘vowel like’ sounds in them like a ‘b’ or a ‘d’ may be difficult to distinguish from each other because only the low pitched parts of the sound may be heard which means a ‘b’ and a ‘d’ sound essentially the same.

Spare a thought for someone with hearing loss next time you get frustrated and possibly shout because you have been ignored or had to repeat yourself. Shouting won’t necessarily help because as much as you shout ‘s’ or ‘f’ sounds won’t be heard more clearly. Advances in digital hearing aids mean that soft high-pitched sounds are amplified preferentially and a new technology known as ‘frequency compression’ actually makes these sounds audible for people with severe hearing losses by changing the pitch of these sounds. If you, or a relative, would like to know more about how these technologies work or perhaps arrange a free trial call Cleveleys 855205 Tues to Friday 9.30am to 5.00pm. Ask to speak to Gary Waite or Gary Bradshaw.

Volvo S60 On the inside, the car's cabin displays a softer and more sophisticated look. It's also telling that the car's centre console is angled towards the driver - a clear sign that the S60 has been designed to appeal to the keen driver. Elsewhere it's a case of expanding on recent design themes, with the switchgear, ergonomics and seat comfort being that bit better than the competition. For all the S60's newness, some things never change. You will notice more legroom in the back, though. A little better than its predecessor and some rivals, which does much to confirm the S60's position as a versatile choice for executives - there won't be an issue over adults feeling the pinch in the rear. Staying with the sensible aspects of the car, it should come as no surprise to learn that Volvo has ratcheted up the active and passive safety elements of the car. Following on from the XC60, the S60 also comes as standard with City Safety, a system that detects obstacles when driving at low urban speeds and alerts the driver. If no action is taken the car will attempt to brake. We've all been in the situation when, crawling in traffic, a pedestrian steps out in front of you. Now you have a much better chance of avoiding a collision. Select the optional Driver Support pack and you can add to this level of protection with pedestrian detection via front mounted cameras, plus adaptive cruise control and a plethora of driver warning devices and braking assistance that works together with all the active aids to bring the car to a stop (or at least apply maximum braking force at higher speeds) to minimise the consequences of driver inattention or the acts of other road users. The camera and clever computer can even distinguish between adults, children and dogs running across the road. Granted, you hope to never have to use such systems, but they've now reached a stage where they can be trusted, which is testament to Volvo's persistence in the field of car safety.

The engine has been improved to deliver more power and the seemingly impossible reduced fuel consumption and CO2 emissions. The result is a rounded package that is streets ahead of its predecessor on the road, yet delivers a refined, premium-level cabin ambience worthy of comparison with its German rivals. Being a car positioned in the affordable executive sector, it's the S60's 161 horsepower 'D3' diesel that will steal the limelight. Punchy, refined and frugal, its flexible and willing nature compliments the S60's character. The turbo petrol and performance oriented V6 stretch the car's abilities but there's never any suggestion that the car struggles with the extra power. And if you want more performance plus decent economy, the D5 202 horsepower diesel should prove more than adequate. With its high levels of standard equipment, stand-out styling, class-leading safety technology and levels of driver enjoyment and refinement not seen from a Volvo in some time, this second-generation S60 offers the Volvo faithful and new converts a credible alternative to a purchase from the 'Big Three' Germans firms.
