The perfect balance of salty and sweet.
Salted Caramel Popcorn
Ingredients
120g unsalted butter, cut into 3cm cubes2 tablespoon canola oil165g (3/4 cup) popcorn kernels2 cups caster sugar1/2 teaspoon sea salt
Method
Preheat the oven to 170°C. Coat 2 large baking trays with 20g of the butter. Lightly sprinkle the sea salt over the popcorn.
Heat a large pot over a medium-high heat. Add the oil, then the salted popcorn kernels and cover. Cook until the fi rst kernels begin to pop then open the lid so it is slightly ajar. Shake the pot occasionally over the heat as the kernels pop. Once the kernels stop popping immediately transfer to the baking sheets.
Heat a medium sized saucepan over a medium heat. Add the sugar and cook without stirring, tilting the pan to distribute the melted sugar, for about 5
minutes, or until the sugar melts and turns a deep amber colour. Remove the pan from the heat and gradually add the remaining butter, whisking until it melts and has blended into the caramel. Working quickly, drizzle over the popcorn and toss with two wooden spoons to coat.
Bake the coated corn for about 5 mins, or until the caramel begins to melt again. Toss to redistribute the caramel more evenly, and then continue baking for another 5 mins. Toss the caramel corn again then allow to cool completely. They will become crunchy as they cool.

Consisting of a supermarket and shopping strips along North, South and East Concourse, radiating around a central car park which adjoins a large shady reserve that fronts Reserve Road with lawns and picnic tables. Smaller strips can be found at the junction of Keys Street and Beach Road, and two local shopping strips along Balcombe Road.
EDUCATIONThere are three primary schools in the area; Beaumaris Primary School, Beaumaris North Primary School and Stella Maris Primary School (Roman Catholic), plus a variety of early learning centres. Sandringham College’s Beaumaris Campus caters for years 7 to 10.

A team of 40 cyclists are appealing for donations to help support their epic 24 hour bike ride in aid of Sandringham Hospital.
Local businessman Nathan Goss decided to sign up for the ride after both his kids visited the community hospital, and he wanted to do something to give back.
“Everyone deserves the greatest level of care possible when they go to hospital. Its great knowing 100 per cent of donations from this ride will go towards helping the hospital continue to achieve this,” said Nathan.
The PRG 24 Hour charity bike ride team, which includes Sandringham Hospital’s Director of Emergency Adam Bystrzycki and Alfred Health’s Chief Operating Officer Andrew Stripp, will line-up on Saturday 29 August at 12pm for the start in Black Rock. The group will ride in relay along Beach Road between Black Rock and Mordialloc until 12pm on Sunday 30 August.
During the mammoth ride the group will cycle the length of 45,000 buses, climb just under 600 giraffes in height and burn around 13,600 calories – the equivalent of 153 bananas.
