Kathy Sills’s Deep Fried Onion Balls with Cajun Ranch Sauce are a wonderfully

different appetizer for your next party (maybe for the big game?). With 4 tablespoons of red pepper, they do pack a healthy punch! If you’re not a fan of spicy, feel free to adjust the seasonings. These were a unanimous hit with our Kitchen Crew and will be with your friends and family too.

What You Need8 oz. sour cream1 small packet powdered ranch dressing & seasoning mix5 tbsp Cajun seasoning, divided4 1/2 tbsp cayenne pepper, divided2 c self-rising flour1 tsp salt1 tsp black pepper1 egg1 c milk, add more if needed2 bags onion boilers, peeled1 bottle canola oil

Deep Fried Onion Balls w/Cajun Ranch Sauce

Directions• Pour oil into deep fryer and

preheat to 400 degrees.• In a medium bowl, add the sour

cream, ranch packet, 1 tbsp of cajun seasoning, and 1/2 tsp of cayenne pepper, mix well. Chill.• In a medium bowl add the flour,

egg and milk. Mix well.• Add 4 tbsp of cajun seasoning to

the batter.• Add 4 tbsp of cayenne.• Add salt and black pepper. Mix

well.• Take each onion boiler and coat

with batter. • Deep fry 1-2 min.• Drain on paper towel.• Enjoy with cajun ranch sauce!

REQUEST FOR STATEMENT OF QUALIFICATIONS

RFQ - ENGINEERING SERVICESFOR TRANSPORTATION ALTERNATIVE PROGRAM SIDEWALK PROJECT

FOR IMPROVEMENTS TO THE ROAD SYSTEMOF THE CITY OF LOS FRESNOS

The City of Los Fresnos is seeking Engineering and Architectural services for a Transportation Alternative Program (TAP) Sidewalks Project. The TAP SidewalksProject enhances safety through construction designed to improve the bicycle and the pedestrian safety; encourage a healthy and active lifestyle from an early age; enable and encourage children, including those with disabilities, to walk and bicycle to school; and to facilitate projects and activities that will improve safety and reduce traffic, fuel consumption, and air pollution in the vicinity of schools.

This TAP Sidewalks Project is being funded through the Texas Department of Transportation (TxDOT).

RFQ’s shall be addressed to:

Request for Qualifications (RFQ) will be received by Monday February 4, 2016 no later than 11:00 a.m. RFQ’s sent via facsimile shall not be accepted. RFQ’s shall be submitted in an envelope sealed with tape and prominently marked on the lower left hand corner of the envelope with corresponding RFQ title. Overnight mail must also be properly labeled on the outside of the express envelope or package in reference to the RFQ. Any RFQ received after closing date and time will be returned to the firm unopened.
