Physic Gardens of the 1800s were called in to action in an attempt to cultivate the seeds of the ‘Fever-Tree’ to ensure British Troops had a steady supply of malaria-fighting quinine. Unpalatably bitter, ingenious Officers of the British Navy mixed their ‘tonic’ with their ration of gin and

the great British tipple was born.

In partnership with Fever-Tree, the Granary Square Brasserie’s terrace installation celebrates the catalogue of medicinal herbs and plants grown in the Physic Gardens of

old, reimagined in post-industrial Kings Cross.

We invite guests to explore the garden terrace, enjoy our curated selection of Physic Garden G&Ts, or even book in to the Fever-Tree ‘House of Apothecary’ for a gin blending

supper like no other.

Juniper forward with 27 botanicals sourced directly from Kew Gardens including six different types of lavender perfectly complimented by lemon-thyme

and rosemary in the tonic.

Juniper is considered a diuretic and in the 14th century widely used to ‘flush away the ills.’ Lavender is a powerful antioxidant

famous for its calming properties.

47 rare botanicals including jasmine, nettle and lingonberry marry with pimento berry, ginger, Angostura bark in the tonic and

peppermint from Chartreuse.

Jasmine is recommended to promote relaxation and help reduce stress, while peppermint has a calming effect on the body

and is used to ease sore muscles.

Herbaceous but balanced by fresh pear, chamomile, cardamom, lime leaf and

crisp quinine.

Considered to be one of the most ancient and versatile medicinal herbs, dried chamomile flowers have numerous, widespread health benefits thanks to their high level of disease-fighting antioxidants.

Sweet and tart rhubarb collected from the English ‘Rhubarb triangle’, warming gingers from three distinct sources and notes of

raspberry, pink grapefruit and vanilla.

Rhubarb is a rich source of antioxidants, Vitamin K and a good source of fibre,

ginger is a powerful anti-inflamatory.

Inspired by centuries old alcohol free remedies created by Apothecaires. Green, fresh and floral, this is the taste of the English Physic Garden’s of old. Alcohol Free.

Spearmint has long been a popular remedy for digestive upsets, and helps every system in the body to stay healthy and well-functioning while peas are packed full of

vitamins for a healthy heart.

Fever-Tree Mediterranean Tonic water, Kew Gin shaken with lavender, cucumber and muddled lime, served at the table in a Boston shaker, garnished with lemon,

rosemary, and lavender.

H o n e y & S a g e

Fever-Tree Sicilian Lemon Tonic, Warner Edwards Honeybee Gin, Honeywater and muddled Sage, garnished with sage leaves and a Falls Farm honey dipper.

J a s m i n e & P e p p e r m i n t

Fever-Tree Aromatic Tonic Water, Monkey 47 Gin, Chartreuse wash and a Peppermint mist sprayed at the table. Garnished with Jasmine blossom and lemongrass.

C h a m o m i l e & R o s e

Fever-Tree Refreshingly Light Indian Tonic water, Silent Pool Gin, Rose Liqueur, garnished with chamomile, Kaffir lime leaf and rose petals.

R h u b a r b & G i n g e r

Fever-Tree Ginger Ale, Slingsby Rhubarb Gin, Absinthe & vanilla tinctures served at the table, garnished with crystallised ginger and Champagne rhubarb.

Fever-Tree Elderflower Tonic water, Seedlip Garden ‘zero proof ’ spirit, sugar snap peas, Seedlip garden mist sprayed at the table, garnished with spearmint and cucumber ribbon.

Released in partnership with the Royal Horticultural Society, Honeybee gin is delicately floral balancing honey, hibiscus and elderflower. Lemon tonic adds

zest and freshness.

Bee keeping is typical in physic gardens to aid pollination of all the plants and herbs. Honey has a range of soothing properties while Sage is used as

a natural antiseptic.

Hosted in the beautiful private dining room, a series of suppers exploring the medicinal history of the humble gin and tonic.

In homage to the tinctures, spirits and potions created by the Apothecaries of old, guests will be tutored in the art of balancing aromatic distillates, blending their very own gin to take home.

The evening will finish with a dinner and physic garden cocktail.
