Introduction

Reflecting the effect of lockdown and closures on the ginindustry and on the wider hospitality industry, and assomething immediate to offer back to those suffering, wedecided that the Guild would offer up the seminar content freeof charge to all via the Guild websites. Usually the seminarprogramme content is prioritised and is exclusive to Guildmembers for twelve months after delivery.

We had a good response to our June 2020 virtual offering and,with Covid still blighting life late last year, decided that it wasappropriate to ‘get a second round in’. Thanks again to anotherset of speakers who provided further recorded content, whichwe released in November 2020.

All our 2020 content, and indeed our seminar content fromprevious years, remains on the Guild website, as usefulmaterials for review and staff training etc., as part of ourindustry mission to inform, educate, entertain (and sometimesto provoke and question).

Our 2021 panel of speakers covers the usual wide range oftopics of interest, and will, I hope, ensure that there issomething for everyone.

My thanks, on behalf of the Guild, to all our speakers andcontributors.

Thinking caps on for content for the 2022 event (drop me a linewith suggestions and offers). Confidently, we are planning aresumption of our live event and have already booked the RSAin London (where we have hosted several previous Ginposiumevents), so put 10th June 2022 in your diaries. With the Covid cancellation of the IWSC Awards dinner in2020, we made a version of the summary available to IWSCmedal winners as a means of promoting and describing theirbrands, with bars closed and only on-line sales. This provedvery successful and, as a result, this will be rolled out again forthe 2021 medal winners.

For the second year in a row, due toCovid 19, the Gin Guild has beenunable to host its annual ginindustry seminar as a live event. OurJune 2020 speakers did a valiant job,very much at the last minute, whenthe event was cancelled, and, oftenunder difficult circumstances and/orwhen working from home, andrallied round and provided recorded(often self-recorded), content by wayof substitution. Delegates howevermissed the live interplay, thenetworking, not to mention thespecial pleasures of multiple livetastings and samplings, and the postevent gin bar.

Developing a local true London Dry Gin reflecting localbotanicals.

Growing up in the Scottish Highlands, Rachel gained earlyexperience working with a number of local distilleries. Shecompleted a Master’s degree in Chemistry at Heriot-WattUniversity, which included a year’s placement as a ProcessTechnologist at Diageo’s Science and Technical Centre inMenstrie, Stirling. This work mainly focused on processoptimisation of distilled spirits.

Rachel’s current role is as a Flavour and Sensory DevelopmentSpecialist on an InnovateUK funded Knowledge TransferPartnership (KTP), working in partnership with Warner’sDistillery and the University of Nottingham. The aim of thisresearch is to develop a deeper understanding of theinteractions between botanical ingredients in the distilling andpost-distillation processes to improve quality, drive newproduct development and promote consumer engagement forincreased sales.

Rachel is currently undertaking a postgraduate qualification inSensory Science at the University of Nottingham as well asWSET qualifications. Rachel was recently awarded the IWSCAward for Emerging Talent in the Spirits Industry 2021.

Bernadette Pamplin of Under The Ginfluence writes for GinMagazine and Distiller Magazine and works behind the scenesfor the Craft Distilling Expo. She has judged for Gin of the Year,the World Gin Awards, Spirits Business Awards, Gin GuideAwards, IWSC and the American Distilling Institutes Judging ofCraft Spirits, held in San Francisco.

Dr. Anne Brock is Bombay Sapphire’s Master Distiller and aDirector of the Gin Guild. Educated at Oxford University, Anneachieved a PhD in Organic Chemistry from St. Catherine’sCollege and spent four years as lead distiller at a smalldistillery in central London. In September 2017, she joined theBombay Sapphire team at the Laverstoke Mill Distillery inHampshire, bringing with her technical experience and apassion for and in-depth knowledge of the exciting and rapidlyexpanding gin category. Working alongside the Master ofBotanicals, Ivano Tonutti, Anne is responsible for fulfilling theglobal demand for Bombay Sapphire gin, leading the team of16 distillers who produce every drop and bottle of BombaySapphire at Laverstoke, enjoyed around the world.

Dr. Georgia Billing is the General Manager at the City ofLondon Distillery & Bar. She holds a PhD in NutritionResearch. Having grown up in the hospitality business, Georgiahas worked in the bar industry since 2004.

Georgia now incorporates her own handmade ingredients, fromcordials to vermouths, creating unique cocktail experiences forevery customer. Georgia co-founded the Reina Lab., whichproduces bespoke ingredients for cocktail menus andcompetitions, using foraged botanicals wherever possible.Georgia's bitters recipe won her a place in the New Malt Order,an international group of 12 innovative bartenders, whocollectively made the first Bartender's Malt scotch whisky.Georgia was also a top-ten finalist in the Diageo UK WorldClass bartender competition 2018.

Siobhan Feeley started fresh out of college working in TheOliver Conquest (OC), a little pub in the middle of Aldgate thatspecialised in gin. Her knowledge and passion for gin andspirits grew from there and through it she was introduced toIan and Hilary, founders of Sacred Spirits in Highgate, northLondon. She joined them as an Apprentice Distiller, and is nowDistiller and Distillery Manager.

Vanessa Piromallo (ilgin.it) started writing about gin in 2014.She’s the founder and Editor in chief of ilGin.it, the most readItalian website about Gin & Tonic, and a consultant for ginproducers. Her mission is to spread the culture of gin in Italyand to make Italian gins known in the world.

Caroline Childerley launched 'The Gin Queen' in December2013 to share her enthusiasm for gin and the people who make it.

Since then, she has launched Junipalooza Melbourne and Sydneywith her business partners Spirits Society, and her businessThe Ginporium, Australia's First Gin Concierge. She was thefirst Australian member to be inducted into The Gin Guild andin 2020 was named Icons of Gin 'Communicator of the Year'.

Aaron Knoll is a spirit’s historian, botanical spirits expert andauthor. He's written several books on gin including Gin: TheArt and Craft of the Artisan Revival which was named amongthe best gin books of the year by The Guardian and has beentranslated into six languages. Aaron is the founder of The GINis IN— an online resource dedicated to educating consumerson gin, gin flavor and created the first search tool for findinggin based on flavor. He also has served as judge for severalinternational gin competitions including the AmericanDistilling Institute and World Gin Awards. He was inductedinto The Gin Guild as a Rectifier in 2019 for his contributionsas a writer and educator. Aaron currently lives, works, andtastes gin out of Denver, Colorado.

Stephen Gould is co-owner of Golden Moon Distillery andspeakeasy. Patently Different – advances in stilldesign

Distilling from 2016 and officially launched in 2017 by HRHthe Princess Royal, Copper Rivet is Kent's only Grain to GlassDistillery. It is based at (and absorbs the rich history of)Chatham’s Royal Dockyard.

The distillery’s headline gin is Dockyard Gin, crafted throughthe distilleries unique hand-made copper still ‘Janet’.

In March 2020 Copper Rivet Distillery was awarded a patent forits Banik Still, which was developed to enhance macerationand vapour infusion. Developed by and named in honour ofCopper Rivet head distiller Abhi Banik, the still was created toaddress the “limitations of traditional distillation.

Abhishek Banik is the Head Distiller and Technical ProductionManager. Scientific Exploration of Juniper

The Gin Guild has been pushing frontiers in gin in recent years,including the now legendary Gin-Note, but have also beenexploring the analytical and sensory science of gin.

In association with the International Centre for Brewing andDistilling at Heriot Watt University, The Worshipful Companyof Distillers, Krautermix and Beacon Commodities, MathewPauley reviews the latest work exploring juniper, gin sensoryperformance and analytical chemistry and talk about the nextsteps for the research trying to gain greater understanding ofthe link between the gin in your glass and smell of the gin yournose.

The Gin GuildThe Gin Guild was incorporated by The Worshipful Company ofDistillers, one of London’s traditional livery bodies,incorporated by Royal Charter in 1638.

The historical role of The Worshipful Company of Distillerswas to hold key responsibilities for the control and regulationof early gin distillers. It has a unique, historical link to the ginindustry and its historical heart - London. The city remainsfundamentally important to gin as the category becomesprominent across the world.

The Worshipful Company of Distillers aims, via the work of theGin Guild, to provide and facilitate a wider opportunity forthose involved in the gin industry, allowing them to participatein a modern convivial industry forum, whilst reflecting andincluding many of the traditions of the City of London.

The classes of membership are as follows:

• Founder Wardens: The four Founder companiesappoint the four Founder Wardens.

• Warden Rectifiers: This group is limited toproducer/distillers and brand owners (excludingsupermarket own brands and retail off trade, and/orineligible gin styles, and smaller low volume craftdistillers). This is held as a corporate representativeposition (with only one such position in each company).
