ACT School Canteen Buyers’ Guide

About the Healthy Kids AssociationHealthy Kids is a non-profit, non-government health promotion charity. We help schools, canteens and parents by providing nutrition information, resources and services that positively influence healthy food choices and food literacy for school aged kids.

Healthy Kids has a membership base consisting of approximately 1,000 schools, predominantly in NSW and the ACT. We offer nutrition and canteen business advice via our support line, newsletters, biannual Members’ Magazines, and member-only areas of the Healthy Kids website www.healthy-kids.com.au.

The majority of the canteen menu should be made up of GREEN foods.

GREEN foods are mostly fresh foods taken from the five food groups. Commercially-available GREEN items found in this guide are higher in fibre and lower in salt or saturated fat than AMBER foods.

AMBER foods contain some nutritional value, but they also contain additional saturated fat, sugar and salt. Remember that AMBER foods shouldn’t dominate your menu or be available every day, and avoid large serve sizes.

RED foods are not essential for a healthy diet because they are typically high in saturated fat, sugar and salt. RED foods should not be on the canteen menu.

Ingredients• Cooking oil spray• 24 slices of bread, preferably wholemeal or multigrain• 2 medium zucchinis, grated• 1½ cups brown onion, frozen or fresh, diced• 1 cup corn kernels, frozen or canned• 1 cup light tasty cheese, grated, plus extra to sprinkle• 1 cup wholemeal self-raising flour• 1/3 cup (80mL) reduced-fat milk• 6 eggs, extra large

Method1. Preheat fan-forced oven to 200°C. Spray muffin tins with

cooking oil. 2. Remove the crust from each slice of bread and flatten with a

rolling pin. Press one slice of bread into each well of the muffin tin and flatten the bread along the sides and bottom of the well.

3. Add the zucchini, onion, corn, cheese, flour, milk and eggs into a bowl and with a wooden spoon, mix until well combined.

4. Spoon an even amount of the mixture into each bread cup and finish by sprinkling a little cheese on top.

5. Bake for 15-20 minutes, until the frittatas are set in the middle and the bread is golden. Cooking time may be longer if baking multiple tins at once; rotate tins in oven if needed.

6. Remove from oven and leave to cool in tray for 5 minutes before serving.

Brekky Trifle: Layer it up! In a see-through cup, place a layer of fruit (fresh, frozen or canned in juice), add a dollop of reduced-fat yoghurt, a sprinkle of cinnamon and then crumble a handful of cereal on top. Repeat these layers until the cup is full.

5 TOP TIPS TO ENCOURAGE VOLUNTEERSVolunteers can help canteens to run efficiently and generate a healthy profit, but finding and keeping volunteers can be tricky! Here are some top tips for recruiting canteen volunteers:

1. Spread the word. Place an invitation in the school newsletter, on social media, and post signs around the school.

2. Offer short shifts. It can be difficult for some volunteers to give up an entire day. Creating shorter one, two or three-hour shifts (morning and afternoon) will allow more flexibility.

3. Ask for feedback. Why do your current volunteers come back? Why do some people leave? Try to determine what your regular and not so regular volunteers like and don’t like about working in the canteen.

4. Reward your volunteers. At the end of the school year or term, organise a thank you morning tea or other special event so your volunteers know how much they’re appreciated.

5. Organise a class schedule. Create a rotating canteen volunteer schedule where each class is responsible for providing a certain number of volunteers each month.
