plastic bags or plastic wrap. Entry tags must be firmly attached to the

3. NO MIXES to be used unless otherwise stated.
4. NO paper or tin foil liners.
5. All baking entries from Specials will be donated to Optimism Place
and Shelter Link.
6. All Preserves should be in a 250 ml or 500 ml jar unless otherwise
stated. Jars must be sealed with new lids & rings. Entry tags need
to be attached with an elastic or string.
7. PLEASE NOTE: All recipes are located at the end of the Culinary
Arts Section. Use them where it is stated "Recipe Provided".

2019 Stratford Fall Fair Recipes
Class 34
Scones with Cranberry
Ingredients: 2 tbsp. (30 mL) lemon juice
1 cup (250 mL) milk
2 3/4 cups (675 mL) all-purpose flour (approx.)
1/2 cup (125 mL) granulated sugar
1 tbsp. (15 mL) baking powder
1/4 tsp (1 mL) each, baking soda and salt
1/2 cup (125 mL) cold butter, cut into cubes
1 cup (250 mL) fresh or frozen cranberries, cut in half if large
Topping: 2 tsp (10 mL) milk 2 tsp (10 mL) granulated sugar
Directions: Preheat oven to 425°F (220°C). Line 1 or 2, large baking sheets with parchment paper. In glass measuring cup or a bowl, stir lemon juice into milk; set aside. In a large bowl, combine 2-3/4 cups (675 mL) flour, sugar, baking powder, baking soda and salt. Using pastry blender or two knives, cut in butter until mixture is crumbly. Pour in milk mixture; stir with a fork until a soft, sticky dough forms. Turn out onto a floured surface and, with floured hands, gently knead in cranberries, trying to not crush them and adding more flour to prevent sticking as necessary, until dough comes together and cranberries are dispersed. Pat out to a 9-inch (23 cm) circle; cut into 12 wedges. Place on prepared baking sheet, at least 1-inch (2.5 cm) apart.
Topping: Brush tops of scones with milk and sprinkle with sugar. Bake for 15 to 20 min, switching pans on racks halfway if using 2 sheets, or until puffed and golden. Let cool for at least 10 min before serving.

Morning Glory Muffins
Ingredients: 2c. all-purpose flour
2 tsp. baking powder
2 tsp. cinnamon
1 ¼ c. white sugar
½ tsp. salt
2 c. grated carrots
½ c. raisins
½ c. coconut
½ c. nuts
1 apple; peeled, cored and grated
1 c. salad oil
2 tsp. vanilla
3 eggs
Directions: In a bowl combine the first five ingredients, stir in carrots,
raisins, coconut, nuts and apple. In a separate bowl beat salad oil,
vanilla and eggs, then add to other mixture. Spoon batter into well-
greased muffin cups. Fill 2/3 full. Bake at 350°F for 20 minutes.

Sour Cream Raisin Pie
Ingredients: 2 c. sour or sweet cream
1 c. brown sugar
dash of cinnamon
1 c. raisins
½ tsp. vanilla
¼ tsp. salt
2 egg yolks
2 tbsp. corn starch
2 egg whites
Directions: Mix first six ingredients and cook for 15 minutes. Mix egg
yolks with corn starch and add to hot mixture. Pour into cooked shell.
Top with meringue made by beating egg whites until in soft peaks and
adding 4 tsp. white sugar. (Ontario Farmers’ Union Cook Book)

Blueberry Coffee Cake
Ingredients:
Batter: ½ c. butter
1 tsp. vanilla
2 c. all-purpose flour
½ tsp. baking soda
1 ¼ c. sour cream
1 ¼ c. white sugar (divided)
3 eggs
2 tsp. baking powder
½ tsp. salt
2 c. Ontario Blueberries (fresh or frozen)
Topping: 2 tbsp. all-purpose flour
1 tbsp. butter
2 tbsp. almonds, slivered or chopped
½ tsp. cinnamon
Directions: Cream together, thoroughly, butter, 1 c. sugar and vanilla
in a large bowl with an electric mixer. Add eggs, one at a time,
beating until light and fluffy. Combine flour, baking powder, baking
soda and salt. Add flour mixture and sour cream alternately to
creamed mixture ending with flour. (Batter will be thick) Combine
Blueberries with remaining ¼ c. sugar. Spread ½ the batter in a
greased 10” spring form pan. Sprinkle with blueberries and top with
remaining batter.
Topping: Combine topping ingredients and sprinkle over batter. Bake
at 350°F for 50 – 55 minutes. Serve warm or cool.

Gumdrop Fruit Cake
Ingredients: 1 lb. gum drops
1 lb. white raisings
19 oz. can crushed pineapple and juice
1 lb. red & green glazed cherries
¼ c. flour
1 c. white sugar
½ c. butter
3 eggs
1 tsp. salt
2 tsp. baking powder
2 c. flour
1 tsp. vanilla
Directions: Prepare gumdrops: cut them up fine but do not use any
black ones. Combine the first five ingredients in a
bowl and let stand overnight. The next morning cream
butter and sugar, add eggs and beat. Mix in the
remaining ingredients, and finally add the fruit mixture
to it. Turn into a nine inch square greased pan or 2
greased loaf pans. Bake at 275°F for 2 hours or until
done.

Buttermilk Cornbread Muffins
Ingredients: 2 eggs
½ c. all-purpose flour
1 tbsp. granulated sugar
1 tbsp. baking powder
1 tsp. salt
½ c. cold butter cubed
1 ¼ c. buttermilk
Directions: In food processor, combine cornmeal, flour, sugar, baking
powder and salt; add butter. Pulse until crumbly. In small bowl, whisk
eggs with buttermilk; add to food processor. Pulse just until blended.
Put in greased muffins tins. Bake 12-15 min at 375 F (190°C) oven.

Microwave Chocolate Fudge
Ingredients: 1 1/3 c. icing sugar ¼ c. cocoa pinch of salt 2 tbsp. milk ¼ tsp. vanilla ¼ c. butter
Directions: Stir sugar, cocoa, salt, milk and vanilla together until partially blended in a microwave dish. (Mixture is too stiff to thoroughly blend in all the dry ingredients.) Put butter on top of ingredients in center of dish. Microwave at HIGH for 2 minutes or until dish feels warm on bottom. Stir vigorously until smooth. Pour into waxed paper lined 8 X $ X 3 dish. Chill 1 hour in refrigerator. Cut into squares.

Easy Milk Caramels
Ingredients: 2 c. sugar
1 c. light corn syrup
3 c. milk 1⁄4 c. butter 1⁄2 tsp. salt
1 tsp. vanilla extract
Directions: Heat the sugar with syrup in 1 cup of milk. Stir until dissolved. Then cook to 118 to 120 °C (244 to 248 °F) or firm ball stage. Stir occasionally, slowly adding the 2nd cup of milk. Repeat cooking process. Add remaining milk, butter & salt. Cook to 118 to 120 °C (244 to 248 °F) (until a ball in cold water is firm as desired for firmness in caramels). Remove from heat; add in the vanilla extract. Immediately pour into a buttered pan. Let cool before cutting into squares. (THE CANADIAN LIVING TEST KITCHEN)

Ingredients: 8 c. homogenized milk
½ tsp. salt
1/3 c. white vinegar
Directions: In large heavy-bottomed saucepan, heat milk with salt over low heat, stirring often, until instant-read thermometer reads 203°F, about 40 minutes. Add vinegar; slowly stir 3 times. Remove from heat. Let stand for 20 minutes. Line fine-mesh sieve with 2 layers of damp cheesecloth. Using slotted spoon, gently skim off curds and place in sieve. Let drain for 30 minutes. Boiled Salad Dressing
Ingredients: ½ c. white sugar
1 tbsp. flour
2 eggs
½ tsp. salt
¾ c. vinegar
½ c. milk
1 tsp. dry mustard
2 tsp. butter
¼ tsp. soda
Directions: Mix together the dry ingredients. Add beaten eggs and
milk. Gradually add vinegar. Cook over medium low heat, stirring
constantly, until thick. Remove from heat and add butter and soda.
Seal while hot.

7. All doilies and centrepieces must be mounted on complimentary
coloured cardboard and secured in two places with thread.

base prior to entry
9. A quilt with a hanging sleeve will not be disqualified.
10. A quilt winning best of show at another fair may not be shown
While the Directors will take every precaution under the
circumstances to secure the safety of the articles sent to the
exhibition, the Owners themselves must take the risk of
exhibiting, should any article be accidentally damaged, lost or
stolen, the Directors will give all assistance in their power
towards the recovery, but will not make any payment for the
value of thereof.
A copyright design cannot be displayed in a public setting (Fair)
without permission from the owner of the copyright. When the owner
of the copyright has granted permission the exhibit will be displayed
and labelled appropriately. those without permission cannot be judged

Community Service Challenge
Receiving Blankets for the Maternal-Child Unit at Stratford
General Hospital - pastel colours only.
No entry tag fee or judging. Please attach your name and address on
an entry tag.
This class is open to individuals, organizations or clubs.
All entries will become the property of the Stratford & District
Agricultural Society which will distribute the blankets to Stratford
General Hospital.
Blankets may be dropped off Wednesday September 18th, 2019 at
the Community Hall when entries are being received.
One is great - more is better, as these blankets are used in the
Homecraft 2019 Prize Book Stratford and District Agricultural Society

Special Care Nursery at the hospital and are sent home with the
parents. They use about 25 to 30 blankets in one month.
Directions
1. It is recommended fabric be pre-washed.
2. Cut 2 pieces of flannelette 31" x 31". Place one layer on top of the
other, right sides together and stitch 5/8" seam around, leaving 6"
opening for turning.
3. Trim one layer of seam to 1/2" to grade edges. Cut corners off
diagonally. Turn right side out through 6" opening. Press so stitching
line is at the very edge. Slip stitch 6" opening.
4. Stabilize edge (eg. machine stitch 1/2" from edge. etc.)
5. Flatten blanket and machine stitch 15" square in centre of fabric to
make it more secure.

OAAS Photo Competition
Rules for 2019/2020
Contest Objectives
1. To help publicize the activities of all Agricultural Societies and fairs
in the OAAS.
2. To create real pride in the creation of well-kept grounds and
buildings.
3. To encourage more attractive staging of exhibitions and displays.
4. To educate and provide a source of PRIDE in a community's
development.
5. To communicate new ideas to other Fairs.
6. To contribute to a library of images for OAAS promotions.
Rules and Guidelines:
1. Competition is open to each and every Agricultural Society.
2. Each society may submit a CD of images, identifying each image by
the category # only.
3. Pictures must be taken in the current year.
4. Photographers from your society must be volunteers or visitors.
Images from hired Photographers cannot be submitted.
5. Absolutely no digital image enhancing allowed. All enhanced photos
will be disqualified.
6. Please do not use tape on CD's.
7. Judging will be done by a committee approved by the chairman.
8. Prize winning images will be shown and awards presented at the
2020 OAAS Convention.
9. Prize money will be mailed to the winners following the convention.
10. CD's will not be returned.
11. All 1st place images will become property of the OAAS.
12. All entries must be mailed by your Society to the OAAS. No
electronic submissions will be accepted.

Glossary of Terms
Digital imaging is the art of making digital photographs, or artwork
through the use of a digital camera or image capture device, or by
scanning a print and saving as an image file.
Please Note: Many fairs throughout the province offer this contest to
their fair visitors/exhibitors, in order to create entries for the OAAS
contest. This is encouraged and a great idea, as it helps promote your
fair. Just remember, submit only one entry per category to the OAAS
competition on behalf of your Society. Ask your photographers to send
their images to your Society. One CD must be prepared by your
Society and sent to the OAAS by the deadline.
Submitting images from your fair's photo contest? If it's a print, scan it
to a JPEG file. If it's a digital image, simply burn it to a CD with the rest
of your Society's photo entries.
