Vegan Chocolate Ice-cream

This is a delicious dairy free ice-cream with no refined sugars.I use three forms of chocolate becauseit adds a rich full chocolate flavour. Italso has beneficial fats in the form ofcashew nuts and Udo’s ChoiceUltimate oil blend. I use organicingredients because they taste sogood.

Ingredients1 tablespoon organic cocoa powder2 teaspoons ground organic cacao(nibs) powder½ oz (15g) grated raw or organic darkchocolate2 tablespoons organic crushed cashewnuts4 ½ oz (130g) organic tofu¾ cup Rice Dream organic vanilla ricemilk1 tablespoon Udo’s Choice Ultimate oilblend¼ cup organic sugar free soya milk½ tsp organic sugar free vanillaextract

Pinch sea salt¼ organic vanilla pod1 tablespoon organic light agave1 tablespoon xylitol

MethodGrate the chocolate and smash thetofu with a fork in a plate. In a foodbag smash the cashew nuts with arolling pin. Put them in a beaker for ahand held blender.Add the cocoa powder, cacao nibspowder, vanilla rice milk, vanillaextract, sea salt, vanilla pod, lightagave and xylitol to the mixture.Blend together until very smooth.Add the Udo’s Choice Ultimate oilblend and soya milk and blend forabout 10 seconds. Taste for sweetness.Add a little more agave if it is notsweet enough for you.Pour the ingredients into an ice-cream maker which has been frozenovernight. It should be ready to eat inabout 5 minutes.Enjoy!
