SELECTION:• Fresh and dried portobello mushrooms may be found year-round in the produce department and are also available
canned for convenient pantry storage. • Portobello mushrooms range in many sizes. Small baby portobellos are about two inches. Large portobellos, which are
ideal for grilling, range from three to six inches in diameter. Choose portobellos that are firm to the touch with an even brown color. Avoid mushrooms with soft or discolored spotting.
• Dark colored portobellos tend to be more flavorful, whereas lighter brown portobellos are milder in flavor.

meat and are well-suited for BBQ grilling and wholesome veggie burgers.• Portobello mushrooms are the most popular mushrooms sold in the United States and account for
ninety percent of all mushrooms sales.• Large brown portobello mushrooms, small baby brown portobellos, and small white mushrooms
commonly known as white or button mushrooms have a lot in common because they are actually the same mushroom. The only difference between the common small white button mushrooms and portobello mushrooms is that the portobello mushroom is grown three days longer to maturity. The large mature version of the portobello was first marketed in the 1980’s to appeal to vegetarians as a meatless alternative!

NUTRITION/HEALTH/WELLNESS:• Despite their meaty texture, one cup of portobello mushrooms contain about 19 calories, less than a half a gram of fat,
and are low in sodium and cholesterol free!• Portobello mushrooms are an excellent source of Vitamin B, protein which supports muscle growth; and potassium which
promotes a healthy nervous system. • Rich in protein, portobello mushrooms contain almost twice the amount of protein found in raw carrots or cabbage, and
are a nutritious alternative for vegans and those seeking alternative sources of protein that is more commonly derived from meat.
• Use a sealed paper bag to store loose, fresh portobellos and place in the refrigerator crisper section. Paper bags allow the mushrooms to breathe, and discourage the accumulation of moisture which can cause the mushrooms to quickly decay. Small baby portobellos are pre-packaged to retain freshness and may be placed directly in the refrigerator.
• Remove large portobellos from any packaging and use a paper towel to gently lift soil or growing medium and refrigerate after cleaning without using water. Water and excess moisture can affect the flavor and texture of all portobellos.
• Sautéed portobello mushrooms can be frozen for about 2-3 months. Allow the sautéed mushrooms to cool before placing them in an airtight container in your freezer compartment.

Ingredients: 4 servings
• 12-16 medium to large whole baby portobello mushrooms
• ½ cup shredded mozzarella cheese• ¼ cup bread crumbs• 1 tsp. garlic powder• 1 tbsp. Italian seasoning• 8 oz. tomato sauce• 2 tbsp. fresh chopped basil leaves (optional)
Directions: Preheat oven to 350 degrees F.
1. Gently clean the mushrooms with a damp paper towel. Remove the steams and set aside.
2. In a medium-sized mixing bowl, add the tomato sauce, bread crumbs, garlic powder and Italian seasoning. Mix well.
3. Dice the mushroom stems and add ½ to ¾ cup into the tomato sauce. Discard the remaining stems or save for another use.
4. Gently spoon the mixture into the mushroom caps and place the mushrooms on a lightly greased baking sheet.
5. Place the mushrooms in the oven and bake for 12 minutes. Quickly sprinkle the cheese over the mushrooms and cook for an additional 3-4 minutes, or until the cheese melts and is bubbly.
6. Remove the mushrooms from the oven and garnish with fresh basil, if desired. Let set for 5 minutes before serving.

Ingredients: 4 servings
Meat Balls:• 1 tbsp. olive oil
• 1 lb. lean ground beef
• 3-4 oz. portobello mushrooms
• ¼-cup bread crumbs
• 1 egg
• 1 tsp. onion powder
• ¼ tsp. nutmeg
• Salt and pepper to taste
Gravy:• 2 tbsps. olive oil
• 2 tbsps. flour
• 1 13-14 oz. can low-sodium beef broth
• ¼ cup of cold brewed coffee
• 6 oz. plain Greek yogurt
• 2-3 tbsp. fresh, chopped parsley
Swedish Meatballs With a Surprising Twist

Directions: 1. Using a food processor or blender, add the mushrooms
and pulse until the mushrooms resemble the texture of the hamburger. This can also be done by using a knife to finely chop the mushrooms.
2. In a large bowl, add all the ingredients for the meatballs, to include the chopped mushrooms. Stir the mixture, gently using a wooden spoon or clean hands until all the ingredients are incorporated. Do not over mix. Roll the mixture into 12 equal sized meatballs.
3. Heat the olive oil in the skillet and add the meatballs in batches. Cook over medium heat until all sides are browned, (4 minutes). Transfer to a paper towel lined plate.
4. Discard the hamburger grease remaining in the pan and carefully wipe down with a paper towel. Add 2 tbsp. of olive oil and the flour. Gently whisk the mixture together while cooking over medium heat for about one minute.
Notes: • Replacing a fourth of the weight of ground meat with
chopped/minced mushrooms is a great way to lower the fat and calorie content and adds moisture. Try this technique the next time you make burgers.
• If allspice is desired for a more authentic taste, decrease the nutmeg by half and replace with allspice.
5. Stirring constantly, add the beef broth and coffee and cook until slightly thickened over medium-high heat for about 1-2 minutes. Turn heat back down to medium and add the yogurt. Stir to incorporate and then add the meatballs. Stir occasionally, and cook for another 6-8 minutes.
6. Serve over steamed brown rice or whole wheat/grain noodles garnished with fresh, chopped parsley.

• 2 cups instant brown rice• 1 lb. boneless, skinless chicken breast• 1 tbsp. paprika• 1 tsp. red pepper flakes• 1 tbsp. garlic
• 1 tbsp. olive oil• 1 lime• Sliced frozen peppers• 1 can black beans, drained• 1 can corn, drained
• 1 avocado• 1 lime• 1 cup nonfat Greek yogurt• Cilantro, chopped
1. Prepare the rice according to package directions.2. Combine the paprika, red pepper, garlic, olive oil, and juice
from half a lime into a marinade for the chicken. Evenly coat and let sit for at least five minutes.
3. Bring the frying pan to medium-heat and cook the peppers until tender.
4. Add the chicken and cook until no longer pink. Once it’s ready, slice the chicken into pieces.
5. Heat the corn and black beans in a separate stove top pot or in the microwave.
6. In a bowl put ⅛ of the rice, corn, and beans, then top with ⅛ of the chicken and peppers. Garnish with 1/8 of the avocado and some cilantro.

The large majority of registered dietitians and other licensed health professionals advise Americans the best way to promote optimal health is to build a healthy eating pattern that can be maintained long-term. Restrictive eating patterns or fad diets being promoted by untrained professionals may result in the desired weight loss and or gains in muscle mass; however, if these diets can’t be maintained, oftentimes people return to their old eating habits. More often than not, once old habits return, so does the lost weight along with an increase in body fat. When this happens, many will again go on a restrictive diet. Experts agree, this cycle is truly not the best habit for optimal health and may even result in causing poor health.
Another concerning diet trend is aiming for perfect eating or eating only clean foods. Placing a value on your worth if you eat perfectly, or demonizing foods as good or bad or clean vs. unclean, can lead to an unhealthy relationship with food.
Building a healthy eating pattern means more than eating optimally to nourish one’s body. A healthy eating pattern should also nourish your mind and spirit. This means that the very act of eating any food shouldn’t cause negative feelings, and the eating pattern doesn’t cause an extreme burden and stress. The fact is, a healthy eating pattern doesn’t mean eating perfectly all the time. It’s about adopting overall healthy habits that are easy to maintain and can be done most of the time. If you can’t maintain a diet, the benefits to your health are short lived. It is better to aim for the cumulative lifelong benefits of an eating pattern that is healthy rather than short lived perfection. To get you started on adopting a maintainable eating pattern for the long haul, aim to practice these suggestions most of the time:

• Fill ½ your plate with fruits and vegetables, ¼ lean protein, ¼ grains (with most choices being whole grains)• Cook and prepare most of your meals at home and eat mindfully (limit distractions and make it a point to enjoy meals and snacks). • Aim to sit at the dinner table with the TV off and don’t eat at your desk while working.• When eating out, practice portion control and know that it is okay to only eat half and take home or share the rest.• Consume indulgences mindfully and limit the amount to just one serving.• Water is best. Don’t drink your calories. Limit sugar sweetened beverages. Choose non-fat dairy products.• Most of the time, select products that are made up of mostly ingredients that you know.
