Summer Servings Ingredients(for the cake):

225g butter at room temperature

180g granulated sugar

3 eggs

225g self-raising flour

2 tbsp milk

2 kiwis (pureed with a fork)

1 tsp vanilla extract

(for the filling):

Strawberry jam (it can be replaced

by sliced fresh strawberries)

200g soft cream cheese

Lime juice

1 tbsp honey

2 kiwis (cut into slices)

Kiwi Sponge Cake with Cream Cheese, Lime & Strawberry Jam

The Method

Beat the butter and sugar until completely

incorporated and pale. Then add the eggs, one

by one, whilst continuing to beat between each

addition.

Slowly, and with the help of a metallic spoon,

gently incorporate the flour into the mixture.

Finally add the milk to get a smooth and uniformed

consistency, followed by the vanilla extract and

pureed kiwis.

Divide this batter between two identical round tins

(20cm diameter) and place them in a preheated

oven to 180C for about 25 minutes, or until the cake

is cooked through.

Remove from the oven and allow the cakes to cool

slightly before carefully removing them from the

tins. Leave them to cool.

Meanwhile, prepare the filling. Pour the cream

cheese in a bowl and add the honey. Beat this

mixture a little bit before adding a few drops

of lime juice, a little bit at a time, until you get

a consistency and flavour that suits your taste.

Refrigerate until it’s time to finish the cake.

Once the cakes are cold, place the first one on

a serving plate and spread the strawberry jam

on it, topping with the cream cheese and lime

filling. Arrange the kiwi slices over it. Place the

second sponge cake on top, sprinkle with icing

sugar and enjoy!

Summer Servings Ingredients50g unsalted butter, melted

and cooled

250g corn flour

125g plain flour

2 tbsp strong white bread flour

2 tsp baking powder

Pinch of salt

1 tbsp granulated sugar

570ml buttermilk

2 eggs

2 tbsp olive oil

Pinch of granulated garlic and

dried oregano

Top Summer suggestion...Grow your own lovely aromatic herbs! We love herbs all year

around but there’s something special about using them during

the summer, don’t you think?

The Method In a large bowl, mix the three flour types with the

baking powder, salt and sugar.

In another bowl, beat together the eggs and the

buttermilk with a fork and then pour this liquid

mixture into the dry ingredients. Stir well until

smooth and consistent.

Grease a loaf tin with a little bit of butter and line

it with baking parchment. Pour the batter into it

and place in a preheated oven at 200°C for about

45-50 minutes or until the bread is cooked through

(it’s ready when you insert a toothpick in the centre

and comes out clean). If it starts going too brown

on the surface, just cover with aluminium foil and

place in the oven again.

Remove from the oven and let it cool a while

before removing it from the tin and taking out the

parchment paper. Cut the bread into thick slices

(with about 1.5 or 2 cm each).

In a small bowl, mix the olive oil with the

granulated garlic and dried oregano (you can

use any other aromatic herbs and/or chilli flakes

as well). Generously brush the bread slices and

put them into the barbecue grill (or a pan grill)

until crispy. Brush again with the flavoured oil as

many times as you wish.

If you do not use all the bread slices, freeze

them prior to grilling. Whenever you fancy,

defrost and put onto the grill!

Wyldecrest Parks has just expanded its portfolio with the

acquisition of a new mobile home park. We’ve bought

Saltmarshe Castle Caravan Park, our first site in Herefordshire!

The brand new Wyldecrest site sits along 67 acres of land within

a peaceful rural setting, approximately 2.5 miles north

of the town of Bromyard.

The area is renowned for its scenic beauty and ancient towns and

cities, including Hereford, Worcester and Leominster. The park

itself is laid across elevated and gently sloping south facing land,

with many of the caravans enjoying views over the surrounding

countryside. It has been created in the grounds of Saltmarshe

Castle, a former country house. Although the Castle itself was

demolished many years ago, parts of the outer walls and turrets

still remain, together with various outbuildings and stables,

making this a historic, and beautiful park.

“This is a stunning park! Wyldecrest can’t believe that we’ve had the opportunity to find such a gem and are proud to add it to our portfolio” says Wyldecrest Parks’ Chairman Alfie Best.

With a capacity for over 300 people, the Club Complex, which

includes restaurant, lounge bar and a games room amongst

other leisure areas, is just one of the unique facilities of this park.

The site also offers the opportunity to enjoy outside activities

including play area, football pitch and fishing lake. And we are

already working on a development programme to improve and

upgrade the facilities of this unique park.

“We have already allocated a £1.5 million budget for the park’s upgrade over the next 2 years” explains our Chairman Alfie Best, who also adds that the money will be spent with local contractors and the company will look to employ local people to run the new acquisition as well. “This park will be a heavenly retreat for people to live and holiday” he guarantees.
