inspired me to create EnjOY® and, most recently, HBL Hair Care, a passion that
I look forward to every day. Through my travels for hair shows and the creation
of ENJOY LivE! TV, I have had the opportunity to meet some amazing people
and check out some pretty cool places.
We created this lifestyle magazine to celebrate these findings and embrace all
things positive, including travel, fashion, food and fun. I am excited to share these
experiences with you and invite you to accompany me as I journey through the

FROM INDUSTRYICON TO MASTERWINEMAKERAfter great success cultivating one of the most eminent names in hair care a few years
ago, industry great Alan Benfield Bush bought some hilltop land in Napa Valley and
established his own vineyard and winery. Being on the road for so many years and
seeing only the inside of salons and convention centers, he simply wanted to relax and
enjoy his land.
Alan fell in love with wine and the thought of owning his own vineyard since visiting
France and touring the wine country. He always appreciated the lifestyle and wanted a
place of his own. Although the interest was always there, Alan simply did not have the
background in raising grapes or making wine, so like any true educator, he set out to
learn what he did not know. His apprenticeship of sort is about a decade along now.
In The Beginning - Inspired by HairAlan’s interest in hair started around age 16 in his native England. He would go into the
local barbershop to have his hair done and he became intrigued by how much fun they
were having laughing, telling (naughty) jokes and getting paid for it all the while. Alan
thought it wasn’t a bad deal, so he jumped in headfirst and completed a three-year
apprenticeship at a local small town salon. He went on to own and operate several
salons in England, eventually honing his skills at Vidal Sassoon Academy in London,
where he achieved the level of master stylist.
In 1973 Alan traveled to California where he became the Managing Director of Educa-
tion for Vidal Sassoon’s first North American academy. There he found that his real
love was teaching hairdressers how to develop technical artistry, communication and
business management skills.
During a class one day, Alan wondered why the 10 people he was teaching were not
doing what he asked. He kept watching and realized that they were moving the same
way but were each coming up with different results. That’s when the light bulb went off
in his head and he came up with the technique he uses now. >>10 | ENJOY LIFE | FALL 2010

After leaving Sassoon in the late 1970’s, and with Vidal’s blessings, Alan founded his academies in San Francisco,
San Diego and Los Angeles, where he successfully taught his own techniques of condensed cutting, perming, color
and setting. By 1988 he partnered with jim Markham to form ABBA, one of the original natural hair care products
on the market. After working tirelessly for nine years, they sold the company and Alan took a step back from the
industry to find solace in winemaking.
Turning a New Leaf
Alan bought a ranch in Sonoma County on approximately 130-acres and planted five acres of Pinot Noir vines,
which launched what is now known as Bush-Field Estate Vineyards and Winery. On the property was a mid-century
inspired Bau Haus, which offered a sense of Los Angeles modernism in a rural northern California location. The
structure is very cubical with about 70% glass, allowing Alan to enjoy his magnificent view from his hilltop home.
Bush-Field is located above the cloud line at the top edge of the true Valley of the Moon above jack London State
Park in Sonoma County, California. These vineyards are in the center of three ancient and prominent mountain
peaks: Mount Diablo, Mount Tamalpais, and Mount Saint Helena. At 2,350 feet, Bush-Field is one of the highest
Pinot noir vineyards in Sonoma County. The microcosmic climate and blend of native plants and trees give the soil
the exceptional aromas and flavors found ideal to grow Pinot Noir grapes.
Touring the Winery
Walking through his estate with his 10-year old German Sheppard, Tanya, Alan points out his two separate vine-
yards. Although both are taken from the same Pinot noir rootstock or parent plant, the smaller of the two areas con-
tains three different clones or vine cuttings: two numbered or specifically pedigreed grape clones and a single Pinot
noir grape from the Pommard region in France. The larger vineyard features a single numbered clone or pedigree
grafting from the parent plant throughout. . Each vineyard yields its own distinct taste, with the smaller of the two
winning its first industry award in 2005.
The first area we come across while taking the tour is one and a half acres, which was Alan’s first vineyard at Bush-
Field. It was planted in the spring of 1999 and is in a protected area with a slight dip so the taste of the wine is differ-
ent than the other vineyard. This area obtains more mid afternoon exposure so the canopy is taken down to catch
the morning sun. Designed for a slightly higher yield, this vineyard has 8x4 spacing, which translates to an eight-foot
span between rows and about four feet between vines.
The larger vineyard was planted in the fall of 2000 and the spacing is 9x5 on three and a half acres, so there is more
room to work between the rows as well as the vines. This area acquires more sun exposure than the other vineyard
and is grown at a slightly different angle on the ridge. >>
Alan stops briefly on our walk to unveil some immature grapes starting to form on one of the vines.
He points out that after being dormant for the winter, the vines are pruned back around March and
then they grow to become very abundant. The vines form a green stem, blossom, and then green
berries emerge in sort of a helter-skelter pattern, which is the stage they are in now. Once fully
formed, the grapes go through veraison where they change into their signature red color and then
they are harvested in late August or the first week of September.
According to Alan, the success of a wine is really determined in the vineyard, not in the winery.
Knowing how to water the grapes, tend the vines and placing proper nutrients, much like with hair,
is absolutely essential.
To supply ample water, there’s a drip irrigation system in place at Bush-Field that leads to wells 650
feet underground. This system offers water to the vines at a rate of 33 gallons per minute. Alan
points out that there is plenty of water on his estate with five springs total and a nearby lake with

On a different part of the estate once hidden by foliage and used as a hunting lodge, sits a train caboose.
It came from the Grand Trunk railroad in Canada, and has its own bathroom, mini kitchen or bar area and
even a phone line. Looking to use it as either a guesthouse or private wine-tasting facility, Alan sandblasted
the rust and old orange paint on the exterior and remodeled the inside with all wood facings. There’s a
Douglas-fir ceiling and mahogany walls with teak and ebony insets for added personality. Alan opted to
cover the original wood of the train because he didn’t want to remove the integrity of the caboose itself.
As we wander even further around Bush-Field, we come across a barn where we find what Alan
affectionately calls his Tonka Toys - Vineyard-friendly, multipurpose tools that do everything from helping to
move the canopies, distributing the water sprayers and clearing the land. There’s a bucket for moving rocks
or other items, a forklift for pallets and even an attachment for drilling posts. As he sits atop his tractor with
a gleam in his eye, it’s very clear that Alan really enjoys his toys. He seems to take absolute joy in getting
out and working his land.
After spending so many years as a hairdresser, Alan now considers himself a vinedresser.
“It’s true,” he says. “You have to coiffure the canopy of the vines, make sure the sun covers the grapes in
the heat of the afternoon, and are exposed on the other side in the early morning sun. It’s a daily activity to
look after, to check it constantly, giving the right amounts of water, and holding back when needed to stress
it so the water rushes to the fruit at the right time and so forth. The complexity is really incredible but I do
have to say that it’s been a fascinating journey.”
Coming Full Circle
Alan maintains that he has not been out of the beauty industry all together, just not as prolific with it as he
once was. He has kept his hand in the field by offering consulting, occasional seminars and training people
personally, but he finds that he’s ready to jump back in as there is such a strong need for education.
Alan believes that young hairdressers coming up in the world and into a salon don’t realize that they’ll be
behind the chair for a long time throughout their career. He feels that the industry has got to be an inspiring
place for them and he wants to be a bigger part of that.
“I’m thrilled to take it up a notch by doing more,” states Alan. “Hairdressers really are smart, intelligent and
talented people and when we recognize that, we can give them common sense information and methods
that will turn them on and keep them motivated. I truly believe that the method I have is what everybody
needs. It is the official language of our craft.” >>

‘‘Apart from my two sons, my legacy is leaving behind the language of our industry. It doesn’t matter what product line you use. What does matter is that we can all converse with our own uniformly understandable language and that we don’t keep changing the words for our own benefit or ego and lose what it’s all about. This language is valuable and it helps people understand what is needed to survive and be successful in this industry and not just fade out at the end. It’s important to have a little pot of gold at the end of it all too.

Alan claims that he still loves seeing someone’s eyes light up when they realize that they’ve got something. It’s that ah-ha moment that puts everything into perspective.
“I get more out of it then they do, really,” Alan adds. “It’s very rewarding and that part of the business I miss terribly. Also, I’m not ready to retire, never will be. I’ll proudly drop dead on stage in front of hairdressers as it’s the only way to go…doing something I truly love.”

At his writing desk, Alan looks back at all of his awards and honors. Each is special in different ways. Some awards or plaques are from students, some by industry organizations, many for competing. We had the opportunity to sit down with Eddy james of Eddy james Salon in Studio City, California and chat
about life, finding true happiness, and yes, even doing hair.
Back in the early 80’s, Eddy recognized his passion for hair in high school
when he did garage cuts, giving kids in the neighborhood hip new looks
using the family poodle clippers. After his formal education, and overcoming
a few learning disorders, he eventually married into a hairdressing
family, with his wife and mother-in-law both in the beauty business.

Tell us about your salon.EJ: We have 14 stations for hair plus facilities for makeup, skin care, waxing and body treatments. It’s a full-service salon with a very comfortable feel. It’s got a sort of “Sexy- Romantic” vibe with plants everywhere, candles burning and lots and lots of natural light.
How about your clientele?EJ: Our salon caters to a wide variety of people: most very upscale, some celebrities.
What’s it like having a celebrity clientele?EJ: I’d actually rather not do celebrities because of how some of them can be sometimes. They tend to run late and feel like the world owes them something. Life is just too short and my time is just too valuable for all of the drama, so I’ve been very selective as to which I take on. Also, I treat everybody the same regardless of their walk of life. I feel that everybody is special and important, not just celebrities. I’d like to believe that’s why I’ve been successful here in the same location for 15 years.
What is your true passion in life? EJ: Stopping to look around at everything and taking it all in. Spending time with family and seeing beauty in everything. I love driving from home to surf very early in the morning and seeing nobody on the road. You just see the lights of Santa Monica pier and the amazing colors the sky turns at sunrise. It’s just so very beautiful and breathtaking.
What is your passion with hair?EJ: I’m truly excited by hair… I stare at it all the time, like on TV, or on the street. I do find myself focusing on color.
What is it about color that you are drawn to?EJ: I find that color really makes people very happy and feel good about themselves. I love that color is always evolving and how I can add dimension without a drastic change.
What is a perfect daylike for you?EJ: The perfect day is a beautiful sunrise on
the way to surf and then catching a few great
waves. It sets the tone of the day in the salon.

How do you work with color?EJ: When I work with color, I layer it on so it’s more like a watercolor, or like a blending of shades melting together. Lows and highs are worked in and then I bump the root to get multi-dimensional results. I also work very efficiently by giving my clients about three hours
worth of color services in just an hour’s time.
What, within color, would you consider to be your specialty?EJ: I love it all, but if I had to narrow it down even further, I’d have to say probably highlights since California is known for its blondes.
What is the best environment for observing color?EJ: There are big windows along the front of our building, so there is a lot of natural lighting in the salon, which really is best. It’s important because clients really do study their color for the first time in their rearview mirror. Not so much under artificial lighting. It’s all about stepping outside into the sun to see just how beautiful it all turned out.
What’s the best way for a client to communicate what they want?EJ: Don’t tell me what you want. Show me pictures, ads, whatever it takes, but don’t try to describe the color you want.It just doesn’t work as perception is everything.
To you, what is ideal beauty? EJ: I’m partial to simple and understated everything, including beauty.

What is, and what was it like, having to learn and work with Attention Deficit Disorder (ADD) and Auditory Processing Disorder (APD)?EJ: It was hard. I just didn’t quite get what was wrong in my younger days. I found that I had a hard time focusing and didn’t know why. The whole ADD and APD diagnosis came later and once I understood the problem, I was able to work around it.
When I went to beauty school, everything seemed to come naturally to my friends where I had to work harder. I found that repeating the process over and over helped to drive it home for me. I always loved color but the formulation and concentration it required really scared me. Once I learned the color wheel inside and out and truly understood what it does and how it works, it all came together for me.
What advice can you offer for others with the same issues?EJ: Keep at it and take it slow. Learn to go with the flow, versus rushing everything. Also, get
creative with what you’ve got. I find that I work best to go with it, balancing three different
clients at once. It keeps me on my toes and allows me to focus just long enough to do
what’s needed for each client. Otherwise I may get bored and my mind will start to wander.
Although these disorders can be tough to work around, they can also help unlock your
creative side and see amazing beauty in everything. just like anything in life, it all comes
down to finding your balance.
What do you mean by “don’t chase the money”?EJ: I try to make everyone happy versus always worrying about the money side. I do so many people from major directors to those with very little money, that if I think the color needs something more and they really can’t afford it, I just give it to them. It always comes back to me in other more important ways.
Do you have any words of advice to others in the industry? EJ: never stop learning and be open to new ways to learn. We offer and take classes all of the time, are always looking for new ways to do everything. Also, never take anything for granted. Keep on trend and always advertise. We keep the word out there by advertising in local publications and media outlets. My car is even fully wrapped and I drive it around town for constant exposure. When things slow down, you have to keep the phone ringing. So get creative with it.

Eddy James makeoverA die-hard surfer, james really loves his longer hair which he wears down while catching a wave and back in a ponytail for work. The ends were becoming a bit overgrown and ragged and it was evident that he clearly needed a trim.
james’ color also required help. It was leaning toward an orangey color and the highlights were becoming a bit brassy. Basically his hair needed some refinement, but he didn’t want to give up his precious length or signature surfer look.
Eddy took james’ hair from Rasta-ragged to rocker-chic in a few quick steps.
Starting with the color, Eddy applied ENJOY® Lightener in foils off the scalp and processed under a dryer for 10 minutes. In between the foils, he broke the root, feathering or bleeding color using 7A with 30-volume developer for a soft, natural looking, sun-kissed effect.
After cutting a choppy shag shape, HBL Straight & Style was applied all over on his damp hair which was blow dried with a round brush and flat ironed for control. A dime-size amount of HBL Texture & Style Cream was mixed with the same amount of ENJOY® Styling Gel for a tacky cream base, which was then worked through his strands to offer a piecey, edgy vibe.

In an inconspicuous, ivy covered building on La Brea Boulevard in L.A. sits La Brea Bakery. Fresh baguettes lie in the green-trimmed window, reminiscent of a French Boulangerie,
assuring you that you have found something special. La Brea Bakery is indeed something special. Peering through the screen of the pale green porch door and hearing the squeaking of the door as it opens immediately brings you back in time. For a moment, you almost feel like you are walking into your grandmother’s kitchen. What was started by nancy Silverton over 20 years ago has grown into the #1 artisan bread brand in the United States and to
this day, the bakery continues to set the standard for high quality, artisanal bread.
La Brea Bakery opened its doors in january 1989, quickly becoming a hit with locals and visitors alike. It was not uncommon in those days for the bakery to sell out of bread within the first couple hours of operation. A huge buzz about Nancy and La Brea Bakery bread began growing almost immediately; in 1990, she was nominated for, and won, the highly
coveted james Beard award for “Best Pastry Chef.”

It was around this same time that the American palette was changing. Food choices in supermarkets were expanding as people began to look for higher quality foods; consumers wanted their food to have that homemade freshness and taste. La Brea Bakery soon began selling their fresh baked loaves to local food markets and grocery stores with huge success.
It was not long before the folks at La Brea Bakery needed a way to share their high quality products with their ever-growing customer base across the country without
sacrificing what makes the bread so special. La Brea Bakery began utilizing the technique of par-baking. They partially bake the loaves at the bakery and then rapidly cool down the bread and freeze it, allowing the baking process to be finished on site. The bakers at La Brea Bakery spent a lot of time perfecting the technique to ensure that the same high
quality bread was produced.

8 ½-inch-thick slices La Brea Bakery French Loaf (Substitution: your favorite La Brea Bakery bread)
2 small zucchini, sliced ¼-inch thick lengthwise
4 roasted red peppers, sliced in half horizontally
½ eggplant, peeled and sliced into ¼-inch thick rounds (Substitution: Japanese eggplant, unpeeled)
½ red onion, sliced into ¼-inch thick rounds
8 ounces Fontina cheese, sliced 1/16-inch thick (Substitution: Muenster or Havarti cheese)
1 tablespoon olive oil
2 tablespoons butter or olive oil
Preheat panini grill to high setting or skillet to moderate heat. Brush onion with olive oil and set aside. In a medium bowl, toss eggplant and zucchini
with olive oil to coat. Grill vegetables until just tender, about 5 minutes. Butter one side of each slice of bread (or brush with olive oil) and place the bread
slices buttered side down. Layer half of the Fontina cheese, zucchini, roasted red peppers, eggplant, and red onions, and top with the remaining Fontina
cheese folding back the edges of the cheese if they extend past the edges of the bread. Place the top slice of bread over the cheese, buttered side up.
Grill the sandwiches in a moderately hot skillet or in a Panini grill for about 8 minutes until the bread is golden brown, the cheese has melted, and the
vegetables are heated through. If working in a skillet, turn sandwiches over halfway through grilling. Cut each in half on the diagonal and serve.

Raised in new Zealand, Dana Harvey’s heritage is half Maori, the indigenous Polynesian people of the land. His Maori grandmother taught him how to weave baskets, while his seamstress mother worked in a factory in the clothing industry. During much of his youth, he stayed in daycare at the manufacturing facility. So a fair amount of time was spent watching and learning. In time, sewing became second nature to Dana - a skill, along with basket weaving, that would come in very handy some day.
In his late teens, Dana came to the states on vacation with his family and simply never went back. Years later he met and fell in love with Melanie, a vibrant and fun-loving Southern California native. In 1996, they decided to tie the knot and Vegas was the venue of choice. At the time, they were restoring a classic 1950 Buick and needed to install seatbelts to make the trip to wed, well... legal. Dana shopped for seatbelt material and brought home an entire roll in a rich crimson red color simply because it was on sale. In the days to follow, the seatbelts were installed and the sin-city wedding went off without a hitch.
One night about a year later, Dana eyed the almost full roll of seatbelt material sitting in the corner of their garage. He decided to surprise his handbag-loving wife with a special gift. He stayed up all night sewing and weaving. In the morning, Melanie awoke to discover her husband’s beautiful handmade bag sitting on the dresser. It was a small red tote or everyday bag with interwoven panels and flight satin lining. She abso-lutely loved it and proudly took the bag to work where friends and coworkers ogled.
Through these friends and coworkers, the first Harveys test market was born. One friend, who happened to work for American Rag in Los Angeles, took her bag into work and returned with an order for 12 more. Melanie and Dana toiled at night and on weekends to fulfill the initial order. It was a tough endeavor but one that paid off with yet more orders. They continued struggling nights and weekends while maintaining their full-time jobs. A year and a half later out of determination and perseverance, their part-time craft emerged into a full-time money-making business.
The original production facility was the Harvey’s garage where eight employees would show up each day to make bags. In time, it became obvious that they had outgrown the facility and so they opted for an industrial location instead. While growing into the building they are in now, people would just show up to purchase bags. A separate area was set up to accommodate the flow of customers, but once they averaged about 10 sales a day, they realized that a retail location was needed. The first Harveys store location was opened in Santa Ana, California, near the production facility and then Chino Hills and Los Angeles stores soon followed.
Intrigued by art in all forms, the Harveys fashioned their trendy Melrose Avenue store in Los Angels into a half boutique, half gallery facility. One side is all bags and the other is a gallery for both established and up-and-coming artists to showcase their talent. now a local hotspot, Harveys caters to a very wide clientele ranging from the young and trendy to art-loving locals, style-savvy tourists and even vintage-inclined celebrities.
The Harveys feel that art is a very important part of our culture and
find it essential to give a fresh perspective to everything we do. Earlier
in the year, they launched the “Intro” competition for artists
of all mediums and received over 250 submissions. A panel of
distinguished judges voted for their top picks and then the public
chose the three final winners. Each of the three winners was rewarded
with their own exhibit in the gallery at the Harveys melrose location.32 | ENJOY LIFE | FALL 2010
Most days Melanie and Dana can be found at their Santa Ana, California production facility where all of their handbags are designed
and manufactured. Although both are designers, they also have a very creative research, development and design team in place. The group
forecasts based on what customers want and need and then they come up with ideas to pitch. Anything deemed worthy of consideration
lands on the idea wall, which holds various visuals used to spark or illustrate concepts. This wall works as a funnel to help the team
brainstorm as well as develop and evolve designs with the best ideas advancing into an early stage of production. >>
When an idea goes into development, Melanie takes the approved concept to Maclavio, their sample maker and very first employee, and he makes it happen. He starts with a sketch with all of the needed dimensions and details and then he produces a sample bag. From there, the prototype goes to costing where
it is analyzed to see if it will hit the margins or if it needs to be reworked. Once approved, marketing steps in, names the bag and/or line and
starts the advertising and promotions process. The sales department takes over and unveils the new item to buyers at the next trade show.
After orders are received, materials are requisitioned and the bag officially goes into production. According to Melanie and Dana, a handbag can go from concept to final production in about three months. The team at Harveys
designs new products a year in advance and produces them a season ahead. >>

‘‘We are committed to making an iconic product with our core values, but we find the need to constantly give the
line a new freshness. That is why some of the collabora-tions we’ve done with other
artists has been so much fun. We’ve worked with very well
known artists like Walt Disney or newer local talent like Cody
Lusby. We get to merge our brand with theirs and come
up with something with a fresh perspective.
‘‘The back room of the production facility holds all of the raw materials with over 60 different
colors and prints of seatbelt material represented. In this area, you will see every color imaginable with prints ranging from leopard, houndstooth, plaid, and snakeskin to camouflage and even a classic Disney comic strip. This fabric is genuine seatbelt stock, the same material we all trust our lives with while driving, which is rated for 6000 pounds of pressure. It’s a highly
durable medium which, along with nylon VT69 thread, gives the bags their longevity.
In the cutting area, the seatbelt material is measured and cut to precise strips based on the specifications for each bag. After color matching thread, the strips are stitched and woven to
form the shell of the bag. The lining is created and installed and then come the handles, clasps, footings, buckles, zippers and other features or details. The last stop is a quick trip through
quality control to double check craftsmanship and then orders are boxed up and shipped out. >>
For Dana, as head designer, the creative process starts from the construction side and evolves from there. “I think in terms of how a bag is or can be made versus how it will look. I have it my head and then we go in back and work it. Having an on-site sample making facility is a huge benefit
for us. It’s just not the same on paper as it is working with the actual materials,” he says.
Dana adds, “The design process will start out with an idea, and then comes the challenge of how to make it work for us with the seatbelt material. Although we make bags out of this specific fabric, we still look to see what else is go-ing on in trends to see how we can incorporate it into our product. It has to be distinctive enough to clearly fit our
brand, but the design and look has to test well before we’ll go into production with it. We are always trying new and
innovative things to keep the line fresh, and we are committed to keeping our products built in the USA.”
At the production facility, Rocky the Boxer and Charlie the Bulldog rule the roost like Arnold Schwarzenegger and Danny DeVito, an unlikely paring, but nonetheless com-
forting and inspiring. Melanie, Dana and the entire crew at Harveys find it enjoyable to have a carefree, family-oriented
and dog-friendly work environment.
“Rocky was our baby for nine years before we had our two daughters,” says Melanie. “He’s sort of our mascot
at work and has been featured in many of our advertising campaigns. now he’s a reminder of the cornerstone of our business. Family-oriented and run with a casual but highly creative atmosphere. We wouldn’t have it any other way!”
An unassuming pair, the Harveys don’t take themselves too seriously and find that they still love what they do after 13 years of working together. When asked about their secret
for success, Melanie said with a grin, “It’s important to follow your dreams but to appreciate your luck as well. Go with an idea, nurture it, hold on to your core values
and let determination take you there.”

Professional Hair Care, feels that the traditional weave is making a departure. Instead, this season she sees more tone-on-tone color taking over, like red on red, blond on blond, etc. It’s a soft, subtle contrast of color to go with the softness of current styles.
With geometric shapes, Pat envisions more strategic color placement to accent the form of the cut and infuse a sense of depth and dimension. There’s a hint of color underneath that pops through on occasion giving a splash of movement. The whole idea is for the color to accent and draw attention to the cut.
According to Pat, blondes naturally lean toward the darker side during the cool months and this season is no different. Look for cooler, subtle flaxen tones in the ashy or beige-blond range.
Brunettes will be very popular in the months to come and are leaning toward the tasty tones like coffee or mocha or warmer cedar browns with violet undertones such as burgundy or mahogany.
For reds, Pat sees darker hues for fall and well into winter. They are richer reds that are slightly cooler and definitely on the natural-looking side. It’s not a vibrant red, but a blendable tone-on-tone color that has soft accents for added character. If looking to go red this fall, think natural red oak or Irish Setter red.

The sun is shining as the morning rush begins at Union Station, considered by some to be the last of the great railway stations. Built in 1939 to consolidate passenger terminals of three different railways, Los Angeles Union Station still
serves as a major Southern California transportation venue.
Catch a guided tour to soak in the surrounding architecture and history of this famous transit hub. The L.A. Conservancy offers tours the third Saturday of every month at 10 am. Stop for lunch after at TRAXX restaurant, located in

In the very beginning, Piny came to the states from Israel as a professional soccer player but soon learned the exacting craft of wig making from his father-in-law. He opened his studio in Beverly

In the years to follow, Piny’s career literally soared as clients flew him around the world to work his special kind of magic. He became a favorite of rock bands in the 70’s and 80’s and worked inter-nationally with such performers as Earth, Wind & Fire, Metallica, Kiss and Duran Duran. Piny went
on to create many of the looks behind the movies Pulp fiction and Rain Man and provided makeovers for The Swan and Extreme Makeover reality shows. More recently he became a
consultant for shows such as Weeds, in Plain Sight and Burn Notice.
With 35 years of experience behind him and a strictly referral-based clientele, Piny is a master of his craft now with family-run studios in Beverly Hills and Sherman Oaks, California. Using the
finest quality virgin human hair sourced from Russia, he and his dedicated crew work tirelessly to create custom pieces that seamlessly match the color, texture, volume and style to his subject’s
natural hair.
One of Piny’s specialties and close-to-his-heart pet-projects involves working with cancer pa-tients. Many medical professionals refer patients on a regular basis knowing that he can help
restore their confidence with his expert abilities. He also donates a fair amount of time to making wigs for children who have lost their hair to cancer treatment.
When asked what he is the most proud of within his esteemed career, surprisingly, but without hesitation, Piny replied,
To simply make people happy! I see so many sad faces when people are thinning or losing their hair for medical reasons. To have
a client look in the mirror and smile from ear to ear because they know that
they look good, just warms my heart.‘‘ ‘‘
In the very beginning, getting the business going was difficult. I worked as a handyman between clients to make ends meet. I’d finish a project at someone’s home, get cleaned up and then would change clothes in the car on
the way back to the studio to do a client’s hair. It was quite a balancing act!”

With length that spans just past her shoulders, Shiry has naturally curly hair, which can be difficult to match for extensions. Once his choice of hair was made, Piny added three rows of custom extensions for volume and then cut the pieces to blend in with her natural hair. HBL Spray Mousse was worked in and her hair was diffuse-dried while scrunching with his hands. The end result is a head full of soft, swirling curls and a very happy client.
Rinat came to Piny from Israel with a desire for longer, thicker strands that would caress her shoulders and span further down her back. She also wanted the ability to wear her hair up for an upcoming wedding without seeing any tracks. Her mid length hair was naturally very straight and had a lot of breakage, especially on the ends. Piny added much needed length and volume with two rows of his custom extensions and then blended everything in by cutting. HBL Spray Mousse was worked in and her hair was blown out straight for a fuller, longer appeal.

A meeting with Dr. Paul Copeskey is not an appointment. It is an experience. Self-described as “the absent-minded professor,” he is a
complex character full of charisma and life energy. Lovingly called Dr. Paul by most of his patients, once you meet him, you are treated like an old friend
and cared for like family. With his meetings (yesterday it was with a top orthopedic doctor from UCLA) to public speaking engagements, to working with the USA National Track team, he is a man with an overflowing sched-
ule; yet working directly with his patients is still his top priority. His passion is giving athletes and non-athletes alike the experience of wearing his custom
made orthotics and seeing for themselves the difference they can make. Shin splints, knee pain, back pain and even headaches all become distant memo-
ries after meeting Dr. Paul.
Many people hear the word orthotics and mistakenly think they are just drop in shoe supports for senior citizens or those with specific foot problems.
Although they do correct many problems and relieve pain, Dr. Paul has also discovered the whole body benefits of improving foot stability and leg length equality, as well as the edge they can give an athlete. These custom made correction devices improve the function of the entire foot and create a more
symmetrical and efficient walking and running stride. In an athlete’s life, this is even more crucial due to the vertical forces which are applied to the ground
with each foot strike.
To label Dr. Paul a chiropractor would be as inadequate as calling Einstein a scientist. Although his medical background did begin as a Doctor of
Chiropractic, he has grown this profession into a complex study of enhancing athletes’ abilities and preventing sports injuries. He has combined the
specialties of non-surgical podiatry and chiropractic to provide his clients with a simple solution to injury and pain prevention as well as treatment. Although Dr. Paul is neither boastful nor arrogant, he is confident in the product that he has spent 30 years perfecting. He does not hesitate to say that his orthotics

After day three, I have been virtually pain free for six years. Dr. Paul literally saved my life.
It is still unbelievable - even to me!‘‘
‘‘It was early in Dr. Paul’s career when he was working with athletes who were training seven
hours a day to compete in Ironman Triathlons, that he had his “AH HA” moment. Each day
he would perform chiropractic manipulations on his athletes only to have them return the next
day with the same ailments and correct them again, temporarily. Even though the practice of
chiropractic is founded on the principle of recurring office visits, Dr. Paul did not like the feeling
of thinking he had “fixed” something only to have it “broken” again the next day.
As with many great discoveries, the solution to this seemingly complex problem turned out
to be surprisingly simple. According to Dr. Paul, “It is our bodies’ natural abnormalities that
cause biomechanical imbalances.” This is a fancy way to say most people are not
naturally symmetrical. On average, most of us have about 1/4” difference in our leg length,
which causes “unevenness” within our skeletal framework. It may not seem like enough to
make a difference, but Dr. Paul has spent his career proving it does and showing patients over
and over the difference 1/4” can make. Add to this the fact that over time, the arches in our
feet flatten out, and you have the ingredients for lifelong pain and discomfort. It would be simi-
lar to having different size tires on a car and wondering why it is not riding smoothly and why
one tire is wearing out more quickly than the others. Without symmetry in our body, one knee,
hip or other body part may give us constant irritation or wear out more quickly than the other.
Once Dr. Paul was able to identify the problem, he set about to create a solution through custom-made orthotics. He has not only discovered the solution, but perfected it. Custom-made orthotics raise dropped arches and align the feet properly under the knees and hips. By putting the body in the right alignment, it can perform at the optimal level, heal itself and we can “get more out of what we have.” Having good founda-tional support at the foot level is like having a strong, even foundation under a house or building. Without it, the framework cannot support the structure as it is meant to be. Understanding this concept was my “AH HA” moment.
One of the patients, who would call Dr. Paul a “life saver” in very literal terms, is his friend and neighbor, Raine Maida. Raine is a 40-year-old Canadian rock star and father of three young sons, who suffered from degenerative disks causing debilitating pain in his back. The pain from these disks resulted in years of doctor visits with few improvements. His
condition caused such agony. He could not even play with his young sons without wincing at the smallest of movements.
At the chance meeting of Dr. Paul in his driveway, Raine was a depressed and desperate 34-year-old who walked like he was 90. He had resorted to epidurals every six weeks and
they were becoming less and less effective. He was losing hope of ever living a normal life. With his history of pain, doctor visits and unfulfilled promises of health, Raine was naturally reluctant to believe that something as simple as orthotics could offer even a
tiny amount of improvement to his condition. At the time, even Dr. Paul did not dare to tell him that full, pain-free mobility may be in his future.
Raine’s immediate camaraderie for his new neighbor led him to agree to give it a try, even
though he held onto little hope that he could be helped. It was a simple decision that
turned out to be life-changing.
Thanks largely to word of mouth and secondarily to the internet, Dr. Paul is known and beloved worldwide. He has treated patients who have flown in to see him from all over the world
including his most recent visitor from Madagascar. He has been called “an angel,” a “life-saver” and “a miracle worker,” but Dr. Paul shakes his head at all of these names. “I have a passion to solve my patient’s pain so they don’t need to see me anymore.” It is a simple explanation to his tireless work and a philosophy not often heard or practiced in the medical community.

Raised in the Pacific Northwest, Romi Cortier came to Los Angeles to pursue a career in acting. Although that specific dream never came true for him, he met so many people in the entertainment industry that
he eventually found himself doing their hair instead. now, a 30-plus year beauty industry veteran, Romi
finds it funny how things work out. He spends four or five days a week at Romi Cortier Design, his
exclusive salon in historic Hancock Park, California, where he caters to his mainly entertainment
industry clientele in private suites with top-tier service.

When Romi first started doing hair, he simply could not grasp the art of color but
a mentor in the industry saw his potential and let him know that he clearly had a
natural eye for it. She walked him through the consultation process, which turned
out to be a priceless tool that he still uses to this day. With over 65% of his current
clientele having color services done, Romi spends a fair amount of time at this vital
step and urges other colorists to do the same. To him, a detailed color consultation
is absolutely essential as it shapes the entire color process.
Romi sets everything in motion by listening intently to each client’s color history. He
asks what they liked and didn’t like about previous color and where they think they
want to take their color next. He then holds individual swatches up to his client’s
skin to see what colors do and don’t work for them. They see what he sees, so
they discover options together. After building a modest stack of possible choices,
Romi rifles back through to find two or three ideal samples that offer a sense of
continuity for the base, highlights and lowlights.
“Once a client sees a color against their skin during the consultation,” states Romi,
“they realize what can work and are more open to trying something different. Also,
I always explain to women that if they have the right color, they don’t need to wear
quite as much makeup.”
Romi adds, “We choose colors that create harmony by using tone on tone hues
or create tension by using colors that are diametrically opposed. I think these are
some of the key factors that are at work on our subconscious on a daily basis. Our
gift as colorists is to understand how our clients want to be seen, and how they
want to see themselves, and then hopefully achieve that with our ability to
formulate color.”
Once the color choices are made, the rest of the process is all math, where
careful formulation and attention to detail help to reach the
perfect color for each client.
Known for his innate use of color, hair is only one of many mediums for Romi.
A self-taught, fourth generation artist, he’s an accomplished painter who has had
several of his works published. Two of his oil paintings, Red Marilyn and
Marilyn-In, were featured in Marilyn in Art, a book published in 2006 in celebration of
what would have been Marilyn Monroe's 80th birthday. This special edition
is a tribute to Mickey Song, Marilyn’s hairdresser back in the day.
Marilyn was chosen as a subject for Romi’s four-part series because she was
simply luminescent and was the epitome of beauty and glamour in his eyes. She also
represented a style of hairdressing that he feels has become a dying art: the one
process bleaching, pastel toners, roller wet-sets, and the final comb out
all being a work of art on their own.

The old days positioned hairdressers as sort of demigods, because most women couldn't style their hair on their own. That's
why the weekly sets were such a big business. I think that's also why so many hairdressers are obsessed with marilyn. No matter how we
try, we can never fully recapture that kind of alluring beauty. It's a different industry now, and I think so many of those kinds of skills are being lost forever. So we look to the past
to guide us into the future both in hair dressing and in art history.
‘‘ ‘‘When taking acting classes years earlier, Romi became very aware of the subtle
nuances that created a character. He saw something in the eyes, an expression or
a special moment caught in time that said it all regardless of the setting. Starting
with photographs, Romi lets his intuition guide him while interpreting his subjects.
He used this instinct to choose individual images that have been hand picked for
their unique spark, which he combines back into a single image that he captures
on canvas and paints in oils. He used this technique with the Marilyn series
combining several of her expressions from famous points in her history.
Romi creates a lot of atmospheric painting and finds himself drawn to strong
female personalities. The Singers is the working title for a collection on the
horizon where he takes his love for beauty and robust characters like vintage
Barbara Streisand, Ella Fitzgerald, and Billie Holiday, and creates a composited
image that captures the essence of each woman. It’s only when the singer gets
lost in their music that Romi feels their true spirit comes through.
Romi typically chooses to paint with oils, but recently has branched into
creating larger scale wall murals which requires the use of latex-based
paint. This medium can be seen in several of the interiors he has designed
as well as in a giant fresco spanning the ceiling above his shampoo bowls
in the salon. For the in-salon piece, Romi wanted his clients to look up and
have this dreamy, heavenly experience. Something relaxing and transforma-
tive that seems, to them, upward through the spiraling composition.

Romi credits art history, interior design and painting as the factors that have
kept him inspired as a hairdresser.
“There was a time that I couldn't imagine doing hair any longer,” says Romi.
“I went back to school and found new passions that kept me both interest-
ing and interested as a stylist. It gave me something new to talk about with
my clients and kept me vitalized in the salon. Sharing the new things I was
learning in art history with my clients gave us something new to talk about
and helped position me as an authority on a bigger scale. Clients frequently
ask my opinion on decor, furniture styles, paint colors etc., and I do my best
to steer them in a good direction based on my experiences. It helps me be
less easily replaced. The world of art can be very intimidating and I do my
best to break it down and make it more accessible for my clients. I'm also
constantly going to gallery openings and museum shows both to feed my
soul and to see how my own work measures up to 'the pros'.”
He adds, “Painting is my meditation, my time to focus on beauty and what
moves me. I believe there's a need for imagery that soothes our senses and
feeds our spirit. Taking the time to get lost in the world of a painting is one of
my most luxurious experiences. It gives me refuge from a world of visual
over stimulation... a world where images are meant to shock me or sell me
something, grabbing my attention from a billboard on the side of a building
or beside the freeway. For me, living with beautiful imagery is a must. I bring
it into my home and make it a part of my daily experience. A life without art
would be an uninspired life.”
He adds in closing, “I truly love doing hair and working with color, but I know
that I’ll paint until the day I die. I honestly believe that they’ll have to bury me
with a brush in my hand!”
For his makeover on actress Lauren Lovett, Romi wanted to create a sophisticated look and
snap up her color to work with her skin tone and brighten her eyes. He started with her fine
and wavy hair that had never been colored before, it was a virgin level 4 on the ashy dark
brown side. After cutting off several
inches and creating a classic short point cut
style, Romi applied two highlights. He used
a level 8 copper with 30-volume and did
thin slices alternating with level 9 natural
gold and 10n with 40-volume. He applied
the color, weaving back and forth to add
a splash of shimmery warmth. Between
the foils he applied level 5 warm brown
with custom formulated 15-volume
developer for a slight lift.
To style, HBL Spray Mousse was applied to damp strands before
blowing the hair dry using just his fingers. Romi added a light
mist of ENJOY®
Hair Spray to coax her style into shape
and provide a light all-day hold.
The end result is a timeless style with a warm brown base and subtle copper and gold sparks running through for dimension. The shorter
hairstyle draws attention to Lauren’s face, lengthens her neck and accents her features. The color looks beautiful against her skin and is not such
a major change that could make regrowth obvious.
Olivia Huss for Velveteen Vintage stepped in to provide clothing and wardrobe styling to complete Lauren’s classic look. Once makeup was done, Olivia fitted Lauren with a 1920’s style dress that was made from black silk crepe with heavy beading
along the bottom and on the bust line. Over the top, a genuine 1930’s era silver fox fur stole with a classic deco pin added just the right finishing touches.

Costa Mesa, California has been doing
Gretchen Rossi’s hair for about a year now.
He was originally called in as a session stylist by
Bravo to work alongside a makeup artist
friend, helping mainly with hair. While on set,
everything just clicked. He and Gretchen formed
a personal friendship and he has done her
hair ever since.
At some point, Victor has done hair as well as makeup for almost all of the women on the now
infamous show. In addition to working with both conventional and airbrush makeup, he is a haircut,
color and extension specialist with 27 years of extensive experience under his belt. In his time behind
the chair, he has also mastered the art of customer service, which coupled with his warm personality
brings a natural charisma to his session work.
When asked what it’s like on set for the Real Housewives of Orange County, Victor laughs, hesitates
slightly and then replies with a smile, “It really is a great cast and everybody is very personable,
despite the drama you sometimes see on the show. Imagine a room full of strong, beautiful and
confident women, many of which are Type A personalities, and you understand what my day is like.
Everybody wants and needs a piece of my time to help them look their absolute best, and each
woman knows exactly what she likes and wants. It makes for a very busy but rewarding day and
I’m quite exhausted by the end of it all!”
Session work differs greatly from doing hair behind the chair as you have to give 100% of
yourself to it. It’s much more detailed and you have to be a strong finisher, or forget it. As a session artist, you need to know how to read the situation, to know when to jump in and
how. There’s actually a specific etiquette to it and there is definitely no room for ego.
Working on set is not necessarily about what you like or want to do as a salon professional,
but about keeping the director and/or producer happy. Above all, you have to be able to listen, take direction well, play well with others and
be open to criticism. Although very rewarding, it’s an extremely demanding field.

For Slade, Victor used EnjOY® Hairdresser Power Haircolor and applied two parts 6AA and one part
6n using Demi-Gel Developer. The double ash series also controls red and the Demi-Gel Developer
imparts a softer, more translucent color for a very realistic finish. It’s not harsh, dyed-yourself color,
but instead a slight wash over the top to soften the grey versus cover it.
Victor started the application at the sides because that is
where most of Slade’s grey resides, and then he worked
around the back to the top finishing with the very front.
He processed for 15-20 minutes at room temperature
and then rinsed, shampooed and conditioned using
HBL Hydrating Shampoo and Conditioner,
and then styled.
According to Victor, doing this sort of color for male
clients is quick, as men typically don’t like to sit around
in the salon while processing. It lets them get in, get the
color on, process quickly and then move onward
so they are back out of the door in no time.
Once Slade’s hair was rinsed out, Victor blow-dried and
worked a bit of HBL Texture & Styling Cream through
to add a polished finish. The end result is shiny,
healthy-looking hair with a youthful, revitalized finish.

Gretchen has beautiful, full hair but a very tender scalp. Color needs to be gentle and styling must be
kept light-handed. Victor Paul lightened her color slightly using equal parts of 9n and 9BV with
30-volume developer. After processing, rinsing and shampooing off the color, Victor highlighted with
EnjOY Lightener and 10-volume developer, which was processed with low heat for 15-20 minutes.
For Gretchen, it was the first time trying the exclusive
HBL line and she was very excited about it. After her
color was done, she was shampooed with HBL
Hydrating Shampoo and conditioned with HBL Hair
Masque to soothe her porous strands. A small amount
of HBL Leave-In Conditioner was applied to towel-
dried hair and combed through to detangle the length.
HBL Spray Mousse was misted onto the root before
blowing her hair dry with a very large round brush. Victor
pulled up on top for lift from the root and then rolled the
brush several times while hitting the section with a blow
dryer creating a large bend. He flipped the hair the other
direction on the brush as he neared the ends,
leaving Gretchen’s signature swoop across
to one side.

MakingUpGretchen Rossi of the Real Housewives of Orange County is
venturing out on her own in many ways. She works tirelessly
on the reality show and spends a fair amount of time with the
Gretchen Project, which educates women about how to look
and feel their best. She is also very involved with charity work
for the Leukemia and Lymphoma Society, something she holds
very dear to her heart.
Most recently, Gretchen has launched her own line of makeup
called Gretchen Christine Beaute. Since the original
introduction online, the high-end makeup line has seen record
sales. Gretchen is very hands-on with her pet project and finds
herself constantly refining the brand and developing new
products and trends.
She adds, “For this shoot, I did my own makeup and used
some of my personal favorites. These are my ‘go to’ products
for my everyday, classic ‘Gretchen’ look.”
‘‘ ‘‘For this everyday look, Flawless Complexion Gel, a foundation primer, can be used as needed for lighter coverage or for a quick fix. Perfect Liquid Foundation with SPF 15 or Anti-Aging Foundation, Balanced offers more complete coverage. Depending on wardrobe, Gretchen picks from Blush Envy, Attract or Stare or from the You Make Me Blush series, she alternates between Believe, Fabulous and Copper Tulip. For overall bronzer, she goes for Swirls of Color in either Sandy Beaches or Vegas Desert.
Lip and Eye primer is applied prior to makeup application to help set Gretchen’s lips and eye makeup. This long-lasting, waterproof formula helps prevent creasing and feathering while neutralizing color.
For eyes, Golden Girl Color Palette is a favorite but Gretchen also changes things up, depending on wardrobe, using Creamy Eye shadow for a bold pop in Pink Frosting. For eyeliner, her lower lashes are done with Gel Eyeliner in Brownie, Prune or Smolder and the upper lashes in Eggplant, Attract or Masquerade. She often goes over her eyeliner with Red Wood or Brownie Eye Shadow for added drama. Gretchen finishes off her eyes using Curling Lash Mascara or Ultimate Mascara in Black and then fills in her eyebrows using Blondi Brow Pencil.

For overall growth, the second option, about three-inches of length seems to be a popular pit stop but a short bob shape is the ultimate goal. In the mean time, Angel suggests adding movement with flick-y bits kicked out here and there. Simply use the bevel of a flat iron to delicately roll the ends outward and piece with a dab of pomade or wax (we recommend Creamy Pomade).
For medium lengths this season, longer bobs or “Lobs” will graze the shoulder and all-over layers will take hold. At this level, Angel believes that it’s more about body and movement with tousled texture and bodified volume.
For those growing out their longer bobs from last season, Angel says to look for longer layers with softer movement. No more flat, stuck-to-your-head straightness. Instead smoothness is seen with lift on top and soft, wavy rolls through the length for all-over body. Texturized versions show off tighter waves and bends with a thoroughly modern non-uniformity.
On the glamorous side, Angel feels that evening hairstyles will offer a retro-inspired vision. Think classic 50’s texture, wave and bend with roller sets and pin curls. Add some modern volume and body for a polished and put-together style. no more overdone ponytails this season. Opt instead for classic French and Italian Rolls twisted up and neatly pinned in back with soft volume on top. For texture, think Marilyn Monroe and Hollywood glamour - Very pretty and thoroughly feminine.

According to Angel Del Solar, Artistic Director for
EnjOY Professional Hair Care, hairstyle trends for
this fall are absolutely transitional.
On the shorter side, he sees a growing-out phase
for last season’s popular pixie. In his opinion,
women have two options during this transition
phase. One option is keeping the sides and back
short and tight, and growing just the top out. The
other is allowing all-over length to grow, which is
eventually cut into a bob-like shape.
For the length on top version, Angel
sees a fair amount of styling versatility.
The length can be smoothed straight down
with or without lift at the root or side-parted
for a slight sweeping effect. With shorter
hair, layers can be spiked up on top or a
hint of natural texture can be allowed to
shine through. Messy movement can be
fun too. Body and volume can be added
on top, which for slightly longer versions
can be styled into a classic Pompadour
shape or coaxed into a youthful
Fauxhawk using wax

Gretchen Rossi is not unfamiliar with having guests in her kitchen, or her home for
that matter. As a cast member of Real Housewives of Orange County, she invites
millions of guests into her world every season. When she is not busy with her
makeup line (Gretchen Christine Beaute), keeping her audience up to date with the
latest trends on her blog (check it out at www.gretchenchristine.com/blog.php),
or working hands on with her newest project “The Gretchen Christine Collection,”
she enjoys entertaining and admits that cooking is not her first love. “When I cook,
I actually am pretty good, but it’s not my favorite thing to do."
ENJOY LivE! TV asked Gretchen to share with Patrick a couple of her never-fail
recipes. Gretchen entertains often. So spending a lot of time in the kitchen to
prepare for her guests is not an option. “If you have to entertain, you can put these
together quite quickly.”
1 SHEET OF PuFF PASTRY
6 SLICES GOOD quALITY DELI HAM
4-8 SLICED OF SMOkED GOuDA
EGG WASH: ONE EGG
2 TSP. GARLIC POWDER
1 TSP. SALT
1 T. MILk
Preheat your oven to 400 degrees. Prepare the egg wash. Whisk one egg with the garlic powder, salt and milk until combined; set aside. Roll out your
sheet of puff pastry gently on a lightly floured cutting board (about 1/2 inch on all sides), keeping the original rectangular shape. Brush the surface of
the sheet with the egg wash. Lay down the ham completely covering the puff pastry. Take the
smoked Gouda and place the slices in one layer covering the ham. Starting at one of the short ends,
begin rolling up with puff pastry from one end to the other. Once the pastry is rolled up, slice the roll onto 1 1/2” round slices. Place on a baking sheet
lined with parchment paper about 1 inch apart from each other to allow the puff pastry rook to expand while it cooks. Brush the tops of the rolls with the remaining egg wash and bake for 15 minutes or until golden brown. Remove from the oven and
place the rolls on a serving tray. Serve immediately.

Slice the tomato and buffalo mozzarella into 3/4” slices. Grab a platter (or four individual plates) and place each slice of tomato down. Top the tomato
with a slice of the mozzarella. Then top your tomato-mozzarella stack with a fresh basil leaf.
Dress each serving with the olive oil and balsamic vinegar, season with salt to taste and EnjOY!

recipe: Buffalo Mozzarella Caprese. With
a salad this simple, quality ingredients
are key. “I like to try and make sure I get
the most perfect mozzarella. The texture
and the feel is important." Gretchen also
pulls her basil right from her basil tree in
the kitchen ensuring that it is as fresh as
possible. This simple and refreshing salad
is a welcome alternative to traditional
salads and is always a crowd-pleaser.
You can also play around with different
types of every ingredient, from the basil
and tomatoes, to the balsamic vinegar
and olive oils for easy variations on
this traditional recipe.
