Definition of terms:

Food handler - a person who handles, stores,prepares, and serves food, drinks or ice or whocomes in contact with any eating or cooking

utensils and food vending machines.Food borne disease - an abnormality or illnessfelt or experienced by a person who ate or ingested a contaminated or spoiled food.

Vermin- a group of insects or small animals suchas flies, mosquitoes, cockroaches, lice,bedbugs, mice, and rats which are vectors of diseases.

Definition of terms:

Microorganism - usually bacteria or germs thatcause a disease.

S anitary permit - the certification in writing of thecity or municipal health officer that theestablishment complies with the existingminimum sanitation requirements uponevaluation or inspection conducted inaccordance with Pres. Decree No. 522 and 856

and local ordinances.Health certificate ± a written document issued bythe health officer certifying the health status of the person like food handler.

Food-borne infection ± disease producedby living organism such as certainbacteria, parasites, viruses, etc., enteringthe body with the foodFood poisoning or food intoxication ±disease is produced by substances called

toxins (produced by certain bacteria) or poisonous agents present in the foodbefore consumption.
