The Coconut...Fruit, Nut or Seed?Learning Curve

Coconutsareclassifiedasafibrousone-seededdrupe.Adrupeisafruitwithahard,stonycoveringenclosingtheseed(likeapeachorolive)andcomesfromtheword“drupa” meaning overripeolive. Thecoconutwebuyin the store does not resemblethecoconutyoufindgrowingonacoconutpalm.Anuntouchedcoconuthasthreelayers.Theoutermostlayer,whichistypicallysmoothwithagreenishcolor,iscalledtheexocarp.Thenextlayeristhefibroushusk,ormesocarp.Thethirdlayer,theendocarp,surroundstheseed.Generallyspeaking,whenyoubuyacoconutatthesupermarket,theexocarpandthemesocarpareremoved,andwhatyouseeistheendocarp.Somescientistsrefertothecoconutasaseed.Aseedisthereproductiveunitofafloweringplant.Inthecoconut’scase,ifyoulookatoneendofthecoconut,you’llseethreepores(alsocalledeyes).Thecoconutseedgerminatesandashootemergesfromoneofthepores.Theendosperm,orportionoftheseedthatnourishestheseedling,iswhatmakesupmostoftheseedand,inthecoconut’scase,istheyummywhitefruitweeat. Theword“coconut”itselfcanalsobeconfusingbecausetheword“nut”iscontainedintheword.Anutcanbedefinedasaone-seededfruit.However,acoconutisnotatruenutorfruit.Atruenut,suchastheacorn,doesnotopenatmaturitytoreleaseitsseeds.Theseedsarereleasedwhenthefruitwalldecaysoraredigestedbyananimal. CoconutFacts: •Everybitofthecoconutisused.Asaresult,coconutsarecalledthe“TreeofLife”andcanproducedrink,fiber,food,fuel,utensils,musicalinstruments,andmuchmore.•Whenintra-venous(IV)solutionwasinshort supplyduringWorldWarIIandVietnam,doctorsusedcoco-nutwaterasasubstitutionforIVsolutions. •Inthe16thCentury,SirFrancisDrakecalledthecoconut“nargils,”whichwasthecommontermuseduntilthe1700’s,whenthewordcoconutwasestablished. •Ittakes11-12monthsforthecoconuttomature. •CoconutgrowingregionsareasfarnorthasHawaiiandasfarsouthasMadagascar.

Irecentlyhadthefortunateopportunityto discoveracookingclassatRistoranteAntipastiinOceanCity.Iwasintriguedbytheideaofa cookingclasswithawell-respectedChef,soIdecidedtoexploretheevent,toseeifitwouldbeagoodfitforGrand Livingreaders.WhenIarrived,Iwasn’tquitesurewhattoexpect.Howwouldacookingclasstakeplaceinabusyrestaurant?Wouldwebeinthekitchen,whilemealswerepreparedfordinner?Wouldwebeseated,classroomstyle,watchingfoodpreparedfromanoverheadmirror?WhatIpleasantlydiscovered,wasthatmywarmwelcomefromMaster-Chef,FaustoDicarlo,wasfollowedbyaglassofwineandaviewing positionattherestaurant’sservingwindow.Fromhere,Icouldseethestovesandfoodpreparea,whilerelaxingwithmybeverageintheambianceoftherestaurant.Iwaspartofasmallgroupofeagerparticipantswhothoroughlyenjoyedthelesson.Fausto’s colorfulpersonalitymakeshiscookingclass,notjusteducational,butpurelyentertaining.HewalkedusthroughthepreparationofoneofhisfamousItaliandishes,offeringcooking suggestions and shopping tips to prepare a delicious,healthymeal,andallinarelativelyshorttimeframe.AfterChefFaustocompletedthepreparationofthedish,weallmovedtothediningroomtoenjoythefare.Itcertainlydidnotdisappoint.Thedishwasdelightful!Whilevisitingwithmyfellowdiners,I discoveredthatmanyhadbeencomingforsometimeandlookedforwardtothemonthlyeventintheoffseason.Therewereevenparticipantsthatcometotown,simplyforFausto’sclassanddinner.Ifyou’relookingforanewmealandtobroadenyourknowledgeofItaliandishes,looknofurther.ClassesareheldthefirstThursdayofeachmonthintheoffseason.Formoredetailsandtoreserveyourspace,callRistoranteAntipastiat410-289-4588.It’swellworthyourtime!

partofthecycleoflife.Yet,itremainssomethingmanyofusareuncomfort-ableindiscussing,particularlywithourlovedones.But,asasocialworkeraswellasafamilymember,Icansharethatmuchanxietymaybefeltshoulddecisionsneedtobemadeandyouarenotabletoshareyourwishes.Effectivein2012,MarylandwillbeinstitutingtheMOLSTorMedicalOrdersforLife–SustainingTreatment.TheMarylandMOLSTformisatwo-pagedirectiveaboutcardiopulmonaryresuscitation(CPR)andother life-sustainingmedicaltreatment.

Therearealotofdifferentexcursionoptions.OnmylatestcruisewechoosetogohorsebackridingontheislandofSt.Lucia.ThisexcursionwasdefinitelysomethingthatIwouldrecommendforeveryone.Itstartedwitharidethroughabananaplantation,andendedonalittleprivatebeach.Thereyouhadtheopportunitytoswimwithyourhorse,ifyouwanted,andtimeforaswimyourselfbeforeyouheadedbacktobarn.Throughoutmyislandhopping,St.Kittshasleftit’smark.Fromthesecondthatyousteppedonthatislandeveryoneissofriendlyandwelcoming.Theislandboastsgold-sandbeachesandalandscapethatiscoveredinoldplantations,reminiscenceofthesugarcaneplantations,thatwereonceastapleofthisislandcountry.Ifyouareonlyabletodoonethingwhilehere,youneedtogoontheSkySafariexcursion;whichisazip-liningexcursion.Itwasthemostmemorableexcursionfrommylastvacation.Wehadtheabsolutebesttourguides.Ourtripstartedwithabus-triptoWingfieldEstate.Alongthewayyoureceivedaguidedtour,passingplacessuchasBloodyPointandmanyofthesugarplantations.So,notonlydoyougettozip-line,youalsogetagoodtouroftheisland.OnceatWingfieldEstatewemetourtourguides,“MashedPotato”and“Pumpkin,”astheywantedtobecalled,andtheytookusonourhigh-flyingjungleride.Thisexcursionisamustsee,theguidesarebrimmingwithpersonality,theviewsareamazing,andyourharnessandguidesprovideforyoursafety.Withanareaofonly37squaremiles,theislandofSt.Maartenisthesmallestlandmassintheworldtobedividedbetweentwocountries.ThesouthernDutchportion,offerscasinos,duty-freeshoppingandislandculture.TheFrenchsideisallabout sophistication.Sinceyouonlyafewhourstoexploretwoseparatecountries,Iwouldsuggestatourthattakesyoutotheoppositesideoftheislandfromwhereyourshipdocks.Thiswayyouareabletoseetheothersideoftheisland;thenwhenyoureturntoport,youshouldhaveplentyoftimetoexplorethenearsideoftheisland.Islandhoppingaboardacruiseshipisthewaytogoeverywinter.Youcouldslipupnorthforaskiweekend,butit’sgoingtobecold!GLM

In1937,FishersPopcorndebutedontheOceanCityboardwalk,tradingasPixtonsPopcorn.Thenewbusiness, destinedtobecomeaboardwalkicon,servedgourmetpopcornmadewithonlythefinest,freshingredients.Thepopcorn confection,createdinauniquecopperkettle,wasavailableincaramel,blackwalnut,coconut,cheeseandbutteredflavors.DonaldFisherwassevenyearsoldwhenhisfather,Everett,openedthebusiness,andhecantellyouthatforthelast75years,eachbatchhasbeenhand-craftedintheverysameway,andwiththesamerecipe,thathisfathercreatedthatfirstbatchofcaramelpopcorn.ThereisatruecraftsmanshipbehindabatchofFishersPop-corn.Thebatchmastersyoucanseemakingthepopcorn,whileyouwait,spendagreatdealoftimelearningtechnique.It’sa confectionnevermadewithathermometer,butunderthe watchful,skilledeyeofthecook,thatmakesforatastesensation.Fishersproductofferingshavechangedjustabit,overtheyears.DuringWorldWarII,whenpopcorn,butterandotherstapleswererationed,Fishersofferedfreshfudge,caramelapplesandsaltwatertaffyalongwiththeirpopcorncreations.Youcanstillfindsaltwatertaffytoday,alongsidetheirpopcornline.Inthemid50’s,thenamewasofficiallychangedtoFishersPopcorn.That’sreallytheonlysignificantchangetothebusiness,overtheyears.It’sweatheredfire,rebuiltandexpandedjustabitattheoriginallocation,alwaysmaintainingexcellenceinproductandservice.In1972,DonaldFisherandhiswife,Calvina,tookthereinsofthebusinessfromhisfatherandmaintainedthefamilytradition.
