Sandor Ellix KatzSandor Ellix Katz is a self-taught fermentation experimentalist. He wrote Wild Fermentation: The Flavor, Nutrition,

and Craft of Live-Culture Foods—which Newsweek called “the fermenting bible”—in order to demystify home fermentation. Now, in his new book, The Art of Fermentation, he brings a decade more experience— troubleshooting unique questions and hearing count-less stories about fermentation practices. Katz is also the author of The Revolution Will Not Be Microwaved, an exploration of America’s underground food movements. Sandor is a much sought-after speaker and thought-leader. He lives on a farm in Tennessee. Sandor will be teaching a pre-conference intensive, giving a talk about Fermentation and leading a Big Ideas talk on Culture and Community.

Phillip Ackerman-LeistPhilip Ackerman-Leist, author of Rebuilding the Foodshed and Up Tunket

Road, is a professor at Green Mountain College in Vermont. He established the college’s farm and sustainable agriculture curriculum and is director of the Green Mountain College Farm & Food Project. He also founded and directs the college’s Masters in Sustainable Food Systems (MSFS), the nation’s first online graduate program in food systems. He and his wife, Erin, farmed in the South Tirol region of the Alps and North Carolina before beginning their sixteen-year homesteading and farming venture in Pawlet, Vermont. With more than two decades of “field experience” working on farms, in the classroom, and with regional food systems collaborators, Philip’s work is focused on examining and reshaping local and regional food systems from the ground up. At the conference, he will be teaching a three-hour intensive on Friday and a workshop on Saturday.

Lynn Byczynski Lynn is the Editor and Publisher of Growing for Market magazine, the popular publication for market gardeners and

small farmers. Lynn has published GFM since 1992 and it has become something of a Bible for small growers.

Lynn and her husband, Dan Nagengast, are long-stand-ing market gardeners on a small farm near Lawrence, Kansas. They have grown vegetables and sold them at farmers markets, through their own Community Supported Agriculture program, and to chefs and natu-ral food stores. They also grow cut flowers, which led Lynn to write The Flower Farmer, first published in 1997, and revised and expanded in 2008. Lynn will talk about cut flowers and about marketing trends.

Michael Bush Nationally-renowned beekeeper Michael Bush is author of the much-praised The Practical Beekeeper, an essential book

for non-chemical beekeepers. He has kept bees since the mid 70s, usually from two to seven hives up until the year 2000. Varroa forced more experimentation, which required more hives, and the number has grown steadily over the years. By 2008, it was about 200 hives. He is active on many of the Beekeeping forums with last count at about 50,000 posts. Michael will be teaching two classes at the conference, outlining his chemical-free methods.

Jeff Moyer Jeff Moyer is the Farm Director at the famed Rodale Institute in Pennsylvania. He is an expert in organic crop production

systems including weed management, cover crops, crop rotations, equipment modification and use, and facili-ties design. He has helped countless farmers make the transition from conventional, chemical-based farming to organic and sustainable methods. Moyer brings a farmer’s perspective and approach to issues in organic agriculture. He is a past chair of the National Organic Standards Board, which assists the USDA Secretary of Agriculture in developing standards for materials to be used in organic production. He is also a member of the Leonardo Academy’s committee on sustainability, board member of Organic Farming Research Foundation, and a founding board member of Pennsylvania Certified Organic. He will be teaching a class on no-till organic and one on weed management.

Friday Afternoon ToursAll tours leave from the Sheraton Hotel parking lot. Buses will leave promptly.

Chatham County Horticulture Experience 1pm – 5pmtouring Edible Earthscapes, Piedmont Biofarm and Screech Owl Greenhouse

Tour three fascinating farms in the sustainable farming mecca of Chatham County. At Edible Earthscapes, you’ll learn how they grow heirloom Asian vegetables, herbs and flowers on a small scenic farm near Moncure. In addition, for five years, farmers Haruka and Jason Oatis have been growing rice in flooded fields. Learn how they grow, harvest and process this staple crop. Next, we’ll head to Piedmont Biofarm where you’ll learn how they use moveable caterpillar tunnels for season extension and about their variety trials for locally-adapted veggies. You’ll also see the experiments growing cool season crops under large solar arrays. Our last stop is Screech Owl Greenhouse where you will see a commercial-scale hydroponic greenhouse. The houses are heated by waste oil and use innovative HVAC technologies.

Innovations in Livestock Management 12:30pm – 5pmtouring Center for Environmental Farming Systems (CEFS), Goldsboro, NC

This tour will explore cutting-edge research projects at the award-winning Center for Environmental Farming Systems (CEFS) in Goldsboro, NC. Dr. Steve Washburn, Professor and Extension Specialist at the Department of Animal Science at NCSU, will be your guide. The tour will involve a one-hour bus ride from the hotel, during which attendees will learn about the facility. At CEFS, you will tour the Pasture-Based Beef Unit, the Pasture-Based Dairy Unit, the Pasture-Based Meat Goat Unit and the Alternative Swine Production Unit. On the return trip, Steve will take follow-up questions and encourage discussion. Don’t miss this rare opportunity.

Participants from the east wishing to forgo the first bus ride may meet the tour group by 1:30 PM at CEFS. All participants, however, must register and pay the tour fee to reserve a seat on the bus for the actual tour of the farm.

Fabulous Farms of Efland 1pm – 5pmtouring Minka Farm and Fickle Creek Farm, Efland, NC

Learn about two impressive small farms that are integrating livestock with horticulture. Our first stop will be Fickle Creek Farm. We’ll check out their egg mobiles, pastured pigs, sheep, cattle and ducks. Nestled in the woods, the farm has a unique design using agroforestry principles. The livestock plus a market garden supply meat and veg-etables to a broad mix of customers. The next stop on the tour is just five minutes down the road. Minka Farm has a wide variety of livestock including chickens, ducks, beef cattle, goats and horses. Come learn about pasture and pond management practices; using goats to control weeds; and their hatchery. You will also see a large and impres-sive fruit orchard with dozens of fruit trees.

Urban Farms and Foods of Durham 1pm – 5pmtouring Rose’s Meat Market and Sweet Shop, Sweet Beet City Farm, and Bull City Burger and Brewery

Following on our popular tour of foodie spots in 2011, we will tour some new tasty destinations – all located a few blocks apart. First, we will head over to Rose’s Meat Market and Sweet Shop. This brand new shop features local farm-to-table, whole animal butchery and delicious pastry-making using locally-sourced fruits and ingredients. The second stop will be Sweet Beet City Farm, a new urban farm just north of downtown. Sweet Beet raises produce and chickens and sells to local restaurants. Last, we will head over to Bull City Burger and Brewery. Started in 2011, this award-winning eatery uses local pasture-raised meat and local produce and makes almost everything in-house. They also use many green technologies. Beer and burger samples will be served!

The workshop will also work on general issues of farm management, finances and planning what to grow and how to sell it. The workshop will not focus on vegetable growing tech-niques, per se. This hands-on workshop will cover the basics of how they go about planting gardens built for ecological benefit and human nutrition.  More than 250 plants reside at the Leigh Farm Park, including fruit trees and berry bushes, dozens of beautiful plants for pollinators, and many medicinal, tea, and soil-improving crops.

Advanced Horticulture Practices on an Organic Farm presenter Daniel Parson of Parson Produce

Come learn from experienced organic grower and expert trainer, Daniel Parson. Daniel runs a popular small produce farm in Clinton, SC and grows a diverse group of vegetables on small acreage. The session will cover three main areas. First, Daniel will talk about crop planning including rotations, the crop plan itself, dealing with different seasons and planting schedules for consistent harvest. Second, you will learn growing tips from soil prep to harvest, including weed control, diseases, insect management, irrigation and post-harvest handling. Third, Daniel will discuss advanced issues in marketing: farmers market, CSAs and restaurant sales. Bring your questions and issues. Basic material will not be covered.

Permaculture Design Workshop 2.0presenter Will Hooker of NCSU

Two years ago we offered a permaculture design workshop led by Will and his design students. This year we are taking it to the next level. Will is a noted permaculture teacher and well-loved mentor. He will lead the workshop and introduce key concepts. Working in a small group, you will work closely with a designer to create the best plan possible for your farm or garden. Bring your farm or garden plan to the class. You will work on your specific design issues during the afternoon. You may be surprised at what you come up with! Class size is very limited.

This year’s keynote speaker is Paul Holmbeck, Director of Organic Denmark. Born in the U.S. and a Duke University graduate, Paul is a leading voice in organic and non-GMO work, and an insight-ful observer of organic issues across Europe and the globe. As a lobbyist for the organic sector since 1995, Paul coordinated the successful European campaign for a total ban on GMOs in organic production. Paul has played a central role in developing most of Denmark’s public policies and financing related to organic market development, research, advisory services, conversion, product innovation, export promotion, consumer awareness, and public procurement—including the current government’s new goal of 60% organic food in all public sector meals.

Paul will speak about the amazing achievements regarding organics, GMO opposition and the preservation of local food traditions in Europe - and how we can apply this progress to the Carolinas. Don’t miss this important and exciting discussion.

Making the Conference More AffordableWork Exchange

Limited partial discounts are available in exchange for working at the conference. There are a wide variety of tasks that we need help with before, during, and after the conference. The exchange rate is $10 per hour for every hour you work up to a maximum of 7 hours, or $70.

To register for the conference with work exchange, e-mail us at [email protected] or call (919) 542 – 2402 as soon as possible. You must sign up for shifts before you can receive the discount. Payment in full is required at the time of registration.

note The Work Exchange discount is not available for CFSA members signing up with the Early Bird Rate; however, students may sign up for work exchange at any time.

Student and Apprentice Discounts

CFSA offers a discounted rate for high-school and college students, farm apprentices and interns to attend the conference. This low rate can also be combined with work exchange to make the conference more affordable.
