Beta Glucan Marilyn Lacy’s Oatmeal GranolaServes: 12

What you need:

4 cups old fashioned uncooked oatmeal3 cups assorted nuts½ cup beta glucan¼ cup light brown sugar¼ cup vegetable oil¼ cup sugar-free maple syrup (can substitute honey)

What to do:

In large bowl mix the oatmeal with the assorted nuts and Beta Glucan. In small sauce pan cook the brown sugar, vegetable oil and sugar-free maple syrup over medium heat stirring often until mixture is clear. Add cooked mixture to large bowl of oatmeal and nut mixture. Stir until thoroughly mixed. Spread mixture evenly onto 2 lined, rimmed baking sheets . Bake at 325° for 25-30 minutes, stirring occasionally . Remove from oven and let cool and enjoy . Franco’s slight twist: Add additional ¼ cup of light brown sugar, ¼ cup of vegetable oil and ¼ cup of honey to bind oatmeal a little more — especially, if you want to make granola bars. Add ¾ cup of raisins and ¾ cup of chocolate chips. After taking oatmeal out of the oven, let it cool for about 15 minutes and then put it in the freezer for about 30 more minutes . Take out and cut granola into bars as desired .

Beta Glucan Chocolate Chip CookiesServes: 48

What you need:

1½ cups flour¾ cup Beta Glucan1 tsp . baking soda1 tsp . salt1 cup butter, softened¾ cup granulated sugar¾ cup brown sugar, firmly packed1 tsp. vanilla extract2 eggs2 cups chocolate chips1 cup walnuts

What to do:

Combine flour, Beta Glucan, baking soda and salt in a small bowl. Beat together butter, sugar, brown sugar and vanilla until creamy. Add eggs one at a time, beating after each addition. Add dry ingredients and mix well. Fold in chocolate chips and nuts. Drop teaspoonfuls onto greased cookie sheet . Bake at 350° for 10-12 minutes .

Beta Glucan Oatmeal Raisin CookiesServes: 9 (1 cookie per serving)

What you need:

½ cup + 2 tbsp . Beta Glucan1½ tbsp . oatmeal7 oz . milk¼ cup egg whites½ cup brown sugar½ cup flour¼ tsp . baking soda¼ tsp . salt1 cup oatmeal

What to do:

In a large bowl, beat together Beta Glucan, oatmeal, milk, egg whites and brown sugar. In a separate bowl, mix together flour, baking soda, salt and oatmeal. Stir dry ingredients into Beta Glucan mixture. Bake at 375° for 20 minutes .

Beta Glucan Blueberry MuffinsServes: 6 (1 muffin per serving)

What you need:

1½ tbsp . Beta Glucan8 oz . + 2 tbsp . milk2 tbsp . sugar1/3 cup egg whites¾ cup + 2 tbsp. flour1¼ tsp. baking powder¼ tsp . salt½ cup blueberries

What to do:

In a large bowl, beat together Beta Glucan, milk, sugar and egg whites. In a separate bowl, mix together flour, baking powder, salt and blueberries. Add dry ingredients, and stir until moist . Bake at 325° for 40 minutes .

Beta Glucan Banana Nut MuffinsServes: 12

What you need:

2 cups flour2 cups sugar1 cup banana, mashed2 eggs½ cup water1 tbsp . Beta Glucan6 tbsp . milk2½ tsp. baking powder½ tsp . baking soda½ tsp . salt1½ cups walnuts (optional)

What to do:

In a large bowl, mix Beta Glucan, water, sugar and eggs. Add banana and milk. In a separate bowl, mix flour, baking soda, baking powder and salt. Fold flour mixture into wet ingredients. Pour into greased or lined muffin cups . Bake at 375° for 18-20 minutes .

What you need:

½ cup (each) strawberries, banana and mango1 scoop of Beta Glucan¼ to ½ cup ice½ cup apple juiceBlender

What to do:

Place ½ cup of each fruit in blender. Add apple juice, Beta Glucan and ice . Blend until even consistency .

What you need:

Hot waterInstant soup cup (healthy/organic version of any instant soup)1 scoop of Beta Glucan

What to do:
