Years ago when I was new in the cheesebusiness, I was invited with a couple friends togo up and see the competition and judging forthe World Cheese Awards in Madison,Wisconsin. It was a great experience; it reallyopened up the idea of traditions in Wisconsin tome. With the 30th anniversary of the AmericanCheese Society coming up, it really broughtthat home to me. One of those friends fromthat very trip was drawn even closer into thedepths of Wisconsin cheese, as he became anagent and eventually a cheese-maker for an oldschool, traditional family-owned Wisconsindairy, Brunkow Cheese.

We have carried their Scandinavian-style breadcheese, called Brunuusto, and their raw milkCheddar Cold Packs under the Fayette label foryears. Now with his expanded production andaging ability, my friend Joe Burns, is able torelease one of his precious artisan cheeses to us.This is how I define plain: plain wholesomemilk from local dairies made into cheese withnothing added, just natural curing in cavernouscellars, covered with unique wild molds and areal dusty natural rind! This brings us to ourfirst new addition, Little Darling.

The Little Darling is a tremendous cheese,made in the likeness of the traditional Tommede Savoie of France. The whole milk from thefarms is gathered and brought in for production,curdled and hand-ladled into forms. The realmagic begins in the caves where the rindformation begins, as the damp air brings

forward all the terroir of the simple pasturemilk of the patron farms of southwesternWisconsin. The spiciness of the cultures andwild moldsgives a littlebite, as wellas earthyflavors thatcomeforwardthroughcarefulaffinage and the cheese breathing in the dampcave air. Although I say simple, our second cheese isJack, a traditional American cheese originallymade in Monterey, California. Brunkow hasbeen making Jack for a very long time, apopular cooking and snack cheese throughoutthe country; the mild buttery flavor pairs wellwith many different foods and beverages. Old World CraftsmanshipPiller’s was foundedin 1957, by threebrothers whoimmigrated fromEurope. They openeda small shop inWaterloo, OntarioCanada and sold tolocal markets onSaturdays. Theirsalami became sopopular, they opened aproduction plant. Overthe years, theirbusiness continued to grow and their childrenbecame part of the business. There are nowfour manufacturing plants.

There are essentiallytwo types of salami: theair dried Italian styleswith the coarser grind,and the German styleswhich are smoked andair dried and groundfiner. Piller’s decided toexport truly uniqueGerman-style smokedsalami for the U.S.market. There are many

salami companies who make hard salami, butthe Black Kassel line is a must try.

Black Kassel salami are produced in the time-honored traditions of Central Europe. Anti-biotic free pork is finely ground and blendedwith select secret spices. It is then delicatelycold smoked in a special German-madesmokehouse with a unique blend of hardwoodsfor seven to ten days. Finally, the salami is airdried to perfection for a minimum of six weeks.The attention and care given to the productionof these salami produces a full flavor anddelicate texture. Enjoy Black Kassel salami ina sandwich, Panini or as an hors d’oeuvre.
