A favourite with the whole family, this lasagne is perfect to warm youup in the colder weather.

Hearty Lasagne

Ingredients

2 teaspoons olive oil1 brown onion, fi nely chopped2 garlic cloves, crushed750g beef mince800g diced tomatoes125ml dry red wine55g tomato pasteFresh lasagne sheets55g coarsely grated mozzarella

Bechamel sauce

1L (4 cups) milk 60g butter 50g (1/3 cup) plain fl our 70g (1 cup) fi nely grated parmesan

Method

Preheat oven to 180°C. Heat the oil, cooking the onion and garlic. Add the mince and cook through. Add the tomato, wine and tomato paste, and bring to the boil. Simmer uncovered for 30 minutes, adding salt and pepper to taste.

To make the cheese sauce, melt the butter until foaming. Add the fl our and cook, stirring, for 1-2 minutes. Remove from heat.

Gradually pour in half the milk, whisking constantly with a balloon whisk, until mixture is smooth. Add the remaining milk. Once thickened, add the parmesan.

Grease a rectangular ovenproof dish with oil. Starting with a layer of bechamel sauce, continue layering lasagne sheets and mince mixture, fi nishing with a layer of bechamel. Sprinkle with mozzarella. Bake in preheated oven for 40 minutes.
