The Gatehouse is finally in the final phase of construction which includes paving, curbs, installing the new gate arm, and finally landscaping. The new structure provides a more impressive entrance into Moss Creek. In case you missed the demolition of the old gatehouse, we are including a few photos in this issue. While paving is being done, a lane may need to be closed for rerouting of traffic, so please allow extra time for leaving and entering Moss Creek for appointments. Your patience is appreci-ated. Although there were a few minor surprises, the project remains under budget. We plan to review the total project cost in the year to date financial review at the fall Special Meeting October 21, 2014.

If you missed the weekly emails and announcements while you were away during the summer, below are a number of things that happened while you were gone:

Chef Lenny prepared a summer Chef’s Dinner in July which featured a light menu for the hot weather. My favorites were seared diver scallops with gingered pear puree and chilled watermelon gazpacho.

The Club also held a sold-out Women and Wine night on the verandah with excellent appetizers. For those of you who missed the event, we plan to repeat the event on a less humid and muggy evening.

Live entertainment at the pool over the summer was a great success! Many came out to enjoy the live music by Whitley Deputy for the August event.

We had 85 in attendance for the Summer Shrimp Boil & BBQ on August 13. You won’t want to miss the September themed dinner—Italian Bistro.

Fall is one of the busiest times of year at Moss Creek so the important word to remember is RESERVATIONS. For weekly din-ing including Sunday, Wednesday, and Friday night, reservations are accepted a week in advance. Because of the size of the kitchen, we require staggered seating for a la carte dining in order to get meals to the tables in a more timely fashion.

Sunday Breakfast (10:00 a.m.‒1:00 p.m.) continued to be very popular through the summer. With more people at Moss Creek in the fall, we expect seating to be full in the Blue Heron room so reservations are recommended if you want a table with a view or to accommodate a large table.

Now to highlight a few of the special events planned for September and early October:

The Italian Bistro Theme Night, September 10th, will be offering a choice of appetizers, salad, and dinner entrees. Reservations are required. For special events like this, we require notice of any cancellations 72-hours in advance or your account will be charged, unless we have a waiting list and your reservation is taken by someone else.

Sunday, September 28th, is the Picnic in the Park. A DJ will start the music at 4:30pm with a live band and food at 6:00pm. This is when Hargray provides the barbeque and sides and Dunes Marketing will be providing beer and wine. Bring tables and chairs and anything you might want to drink or eat. The event is complimentary to Moss Creek Members, but you need to call and confirm your attendance with Melissa at 836-6121 or [email protected] by 5:00pm on September 22nd, so we have enough food on hand for everyone.

While we are talking about the Bostwick Recreation Area, the pools will be open and heated through November 30th. Mackay’s Creek Grill hours through September are Saturday and Sunday 11:00am—7:00pm, so there is still plenty of time to enjoy the pool facilities.

Trivia Night begins again on Thursday, September 18th, so be sure to call and reserve your table.

October 9th-11th will be the Mixed Member-Guest. The event chairs are Carmela and Paul Juenger so you can anticipate an exceptional event in which to invite out-of-town guests or relatives or another couple from a nearby community. Entry fees are due to the Juengers by September 21st. Space is limited, so don’t delay!

Details for upcoming events can be found on the Moss Creek website at http://www.mosscreek-hiltonhead.com. Also watch the MCOA weekly notices for updates on events, including when events are full.

Have you caught-on to the theme of this month’s letter? If you are planning to participate, we need to know. To make reserva-tions call 837-2230 except as noted above.

There are many more events scheduled this fall including the 9/11 Remembrance Service, Patriot’s Golf Day, Couples’ Golf Championship, the MCYC Oktoberfest, and the Rally for the Cure. It’s impossible to mention everything being planned on one page. There are certainly many choices available and something for everyone.

Community News

Last month we covered the importance of being prepared for emergencies and having a plan should the need to evacuate become a reality. So far this year, two storms have threatened the east coast of South Carolina. We need to always be prepared. I have visited with a few Members since the last meeting and have learned that they really have not given any thought about a plan. So make sure you visit Moss Creek’s website (mosscreek-hiltonhead.com) and read our articles on the Member Central page.

I recently spoke with the Bluffton Fire Department and I will have a supply of “Vial of Life” packets that will be available for our Members. Please contact Security or Faye Barnard to pick one up. This is a free service pro-vided by our local Fire Department. Finally, the Sheriff’s Department wants to remind every-one that scam phone calls are on the rise. So, be aware and let’s not become a victim.

A couple of months ago I was watching a webinar from Syngenta studying the decline of bees and other pollinators. At the end of the seminar, I felt that it would be good for Moss Creek to be a part of the program that Syngenta has started worldwide called “Operation Pollina-tor.” The program involves designating areas on the golf course for wild flowers. These areas would be free of maintenance and located out of play. The two areas we chose are

located on the back of #17 South Green near the lagoon and be-tween #12 North Green and #13 North Tee. Both areas will be marked as a lateral hazard and average 8,000 square feet a piece. The process will begin by spraying out the areas this fall. We will then mow the areas down to ground height, and then aggressively rake the areas. We will then seed the area with three different wild flower seed mixes selected by the same company that Syngenta uses. We have a South Carolina blend that will be used behind #17 South and a Bee Feed mixture and Honey Bee mixture for the area between #12 and #13 North.

Club Championships Registration for the Club Championships are in full swing! The dates for each event are as follows: Singles (Sept. 15-20), Mixed Doubles (Sept. 22-27), and Doubles (Sept. 29- Oct. 4). This is the MCTC premiere event of the year. Registration will close on Monday, September 8th. The Kick-Off Party will be held at the Tennis Center on Wednesday, September 10th. This year, we will also hold a round robin draw on Saturday mornings prior to the start of the finals for players already eliminated from the tournament. Sign up will be the week of the event and there will be no charge for players already participating in the Club Championships. Masters Tennis New to not only Moss Creek, but the entire state of South Carolina, is the first Masters Tennis Program. Mas-ters Tennis is a new way to enjoy the game of tennis by playing with a slower moving ball and making the court a little bit smaller. It is great for all levels and abilities. The format is amazing for new and beginning players as the ball is slowed down and gives players more time to get their technique and form just right. It is great for those former players that found the bigger court was just too much for them to cover. By bringing the baseline in 9 feet on both sides of the net, players with limited mobility are now able to cover more of the court. Lastly, for seasoned players, it really puts an emphasis on shot placement. The program will start Tuesday, September 16th and will run until October 21st. There will be two levels to begin with—Beginner level which is for players with little to no tennis experience and the Intermediate level will be for players with USTA team and league ex-perience. This will be a precursor to the area wide league that I will be rolling out in October which will be a similar format to USTA league tennis. Please stop by and talk to Tom for more information on this great pro-gram. Mixed Doubles Team Competing at States This year we will have two teams that qualified to participate in the State Mixed Doubles Tournament in Flor-

ence, SC. The 8.0 Mixed Doubles team captained by Chatts Zeletes and the 7.0 Mixed Doubles team captained

by Sonja Wesseler will both be traveling up to Florence September 12th-15th to compete for a state champion-

ship. Good luck to both teams.

Tennis News

exàâÜÇ Éy fxÜäx

Every point in tennis starts with a serve and a return. We tend to practice our serves often, but forget to practice our

returns. We need to make sure we have a shorter backswing on our returns of serve, especially against a harder

serve. One way to help with this is to make sure to extend your arms while you are waiting in your ready position. This

will shorten your backswing and allow you to make more consistent returns. It is also important to make sure that we

prepare early for the approaching ball. The best way to do this is to make sure we make a split step as our opponent is

making contact with the ball. The split step is a balancing step that gives us the ability to move either left or right in

order to make a clean and consistent return. This split step or “rebalancing” step should actually be made every time

your opponent strikes the ball, not just on the serve.

Fitness & Pool News

Becky Morgan

Fitness Center Manager

Exercise is an easy item to chop from the calendar in challenging times as it offers back a nice chunk of time, usually somewhere between 20 and 60 minutes, and easy to "get back to later" when life "calms down".

The challenge then becomes to "get back to it later" as when exercise is out of sight it’s out of mind. But, the good news is, when it's time to get back to exercising it is easy to get back to and stick with following some very simple and effective strategies.

1. Pick Up Slightly Below Where You Left Off – It is vital when returning to exercise that you resist the tempta-tion to start back where you discontinued. When exercise is discontinued the body's fitness gains from training slowly begin to diminish to a level equal to the where the body currently needs to perform. This is less than it was required to when exercising regularly.

2. Don't Try To Catch Up – When resuming back to exercise, there's the over-whelming tendency to try to catch up to your previous level too fast that most often results in burnout, excess soreness and needless injury. The best fitness gains will occur when you maintain a regular fitness program that balances the ideal exercise to rest ratio that leaves at least one day between similar workouts. 3. Praise, Rather Than Beat Yourself Up – An all too frequent personal response to discontinuing exercise and then resuming is to beat one's self up for discontinuing exercise in the first place. If you've ever felt like this then welcome to the club as it is a deeply ingrained human nature reflex we all have that never serves us well. It can paralyze us from moving forward, creating the erroneous belief that we don't have the self-control and capacity to move forward. 4. Show Up On Time – The fastest way to get back to regular exercise is to show up and start exercising on time. Being on time is your single most important sign of respect for yourself, and belief in self is an essential ingredient in gaining and maintaining fitness momentum. 5. Write Training Times Down – Always write your exercise sessions into your calendar as when it's written it’s more likely to get done especially much more so than if we try to commit it to memory. Most have found that if they write their workout times in their calendars, at least for the next two months running, it provides the best level of commitment to maintain long-term fitness habits. 6. Attend A Regular Class – A great way to re-enter the world of exercise is to attend an exercise class regu-larly. There are many advantages to taking an exercise class. Usually, there are people in the same boat of getting back to exercise and this creates a fellowship of group support to make that transition easier than if trying to go it alone. Check out the website for an updated list of classes offered at the Fitness Center. We look forward to seeing you soon!

Clubhouse News

I always have a reminder on my calendar each month to write my monthly Advocate article. I write them a year out when I get my brand new planner and every August I put that my September article will cover upcoming holidays. I know it is hard to believe, but we try to get information out 90 days from the events if possible which for some of them is right around the corner.

As always, you will start to see an abundance of flyers make their way into your email boxes. First off will be Halloween. Moss Creek will be having the entire celebration on Friday, October 31st. The theme this year that our wonderful Melissa Sheire has planned for us is “Willy Wonka and the Chocolate Factory.” As you can imagine, since the movie is centered on candy and chocolate, it will be an amazing event. We are planning on having themed stations that night for everyone that attends. It is always a showcase event and this year will be no exception.

As you are reading this we have already started taking Thanksgiving reservations. We will have as usual two seatings at 12:00pm and 2:30pm. Space is limited to 150 for each seating, so please get your reservations in early.

Alright, now we are in the nitty gritty, the Tree Lighting. We will again be having our two tree lightings one on December 3rd and the other on December 4th. The forms will be mailed to all Members early next week. One thing that has changed is that we will not be accepting faxes this year. It appears that sometimes faxes do not always come over in the best quality and make them hard to read. Who knew right! This year because the calendar works out favorable we have a week be-tween our Tree Lightings and our Annual Dinner Dance. Our Dinner Dance reservations will start to be taken on September 13th. Look for menu and details in the coming weeks.

Ok, now for the one that everyone has been waiting for NEW YEAR’S EVE. This year’s event will be held like last year on December 31st. We will again be having Casino Night and a DJ so Moss Creek can rock the night away. This event sold out last year and I am still receiving comments about how great it was. Because we are anticipating another sell out we will be holding a raffle for the event. We will be mailing out reservation forms and holding the raffle the first week in November for people to make their plans.

The last order of business that I would like to discuss and I know I sound like a broken record is dress code. All these events mean one thing—families in town. Please keep in mind that our dress code is as follows:

“In general, casual sports attire is acceptable throughout the clubhouse. During evening meal hours, resort or dressy casual attire is acceptable in the Blue Heron and Egret Dining Rooms: casual and sports attire is acceptable in the Grill Room. Dress jeans are considered casual attire, but are restricted to the Grill Room.” Please feel free to contact me with any questions or concerns.

MCOA Halloween Party & Trunk-or-Treating

Don’t put those ice cream makers away yet! Last month, I tried to

talk some of you into digging out your ice cream machine and

trying Moss Creek’s “Rum Raisin Ice Cream” recipe. I hope some

of you did, and this month I’d like to put this semi-frozen treat out

there for you to try. “Granita”, some might say is your original

“Italian Ice”. This is a very easy, very refreshing treat, which by

the way in addition to being a great dessert, makes an interesting

salad ingredient as attendees of our July “Chef’s Dinner” series

found out!

Clubhouse News

Granita • Zest of 20 lemons • Juice of all lemons, plus enough bottled juice to total 4 cups • 4 cups of sugar • 10 cups bottled spring water 1. Using a micro planner, zest the lemons 2. In a saucepan, bring water and sugar to boil—stirring, until

sugar is dissolved 3. Stir in zest and remove from heat 4. Transfer to another container and cover and allow to cool

to room temperature 5. Once room temp, add lemon juice and then strain through

fine sieve to remove zest 6. Refrigerate until cold 7. Process in ice cream maker until spoonable 8. Immediately serve or transfer to freezer For Western Sicilian Style, do not process in ice cream maker. Freeze in metal bowl, stirring every 30 minutes for 3 to 4 hours, until granular, yet still slushy.
