RecipeCorner

This recipe will work with any cut of chicken. By the time this is done, it does not have a strong mustard flavor, the brown sugar and spices will mellow the taste.

Ingredients: 8 large bone-in, skin-on chicken thighs1/2 cup Dijon mustard 1/4 cup packed brown sugar 1/4 cup red wine vinegar 1 teaspoon dry mustard powder 1 teaspoon salt

1 teaspoon freshly ground black pepper 1/2 teaspoon ground dried chipotle pepper 1 pinch cayenne pepper, or to taste 4 cloves garlic, minced 1 onion, sliced into rings2 teaspoons vegetable oil

Directions:1- Make 2 slashes crosswise into the skin and

meat of each chicken thigh with a sharp knife, cutting to the bone. Cuts should be about 1 inch apart. Transfer thighs into a heavy resealable plas-tic bag.

2- Whisk Dijon mustard, brown sugar, red wine vinegar, mustard powder, salt, black pepper, ground chipotle pepper, and cayenne pepper in a bowl until smooth. Whisk garlic into marinade.

3- Pour marinade into bag over chicken thighs and massage marinade into chicken, coating each thigh thoroughly and working the marinade into the cuts. Seal bag and refrigerate at least 4 hours to overnight.

4- Move a rack to the center position in oven. Preheat oven to 450 degrees F. Line a baking

sheet with aluminum foil and lightly oil the foil.5- Scatter onion rings onto prepared baking

sheet. Place chicken thighs on top of onion rings. Spray or brush thighs with vegetable oil; sprinkle thighs with additional salt and cayenne pepper if desired.

6- Roast chicken in preheated oven until the skin is browned, meat is tender, and the juices run clear, 35 to 45 minutes.

7- Transfer chicken and onions onto a serving platter. Pour pan drippings into a saucepan, bring to a boil, and continue boiling, stirring often, until drippings are reduced by half, 3 to 4 minutes. Skim excess fat from pan sauce.

8- Spoon reduced pan sauce over each chicken thigh and serve.

March 5th is the 2nd annual “Hear Tell” at the Morrison Public LibrarySecond Annual “Hear Tell” Sto-

rytelling Fest at Morrison Public Li-brary will be held Saturday March 5th at 10:00 am.

A Free event, the focus for this year’s “Hear Tell” Storytelling Fest will be Uncle Dave Macon.

Uncle Dave himself said “the first time I ever played and sang in public” was in 1921, at Morrison, Tennessee; “the Methodist Church there needed a new door. I gave a show, then passed the hat and col-lected the money, $17.00”.

A great grandson of Uncle Dave Macon, Dr. Michael D. Doubler will be guest speaker on March 5th. While there is no admission to at-tend, books and CD’s will be avail-able for purchase.

Joining us again this year for the 2nd Annual “Hear Tell” Storytell-ing Fest is musician Dr. Sam Young. He will perform immediately fol-lowing Dr. Doubler’s presentation. Like Uncle Dave Macon, Dr. Young has also played at the Methodist Church in Morrison, Tennessee.

Michael D. Doubler served twen-ty-three years on active duty as a Regular Army and full-time Army National Guard officer. He is a graduate of the U.S. Military Acad-emy at West Point, New York, and holds a doctorate degree in military history from The Ohio State Uni-versity. From 1985-1988, he taught

military history as a faculty mem-ber at West Point. Afterwards, he was assigned to the National Guard Bureau in Washington, D.C., work-ing in the Pentagon. Following his military retirement, he headed Doubler Enterprises, a research and writing firm, for over a decade.

Mike Doubler previously au-thored Closing With the Enemy: How GIs Fought the War in Eu-rope, 1944-1945, which received two national book awards and was included on the Chief of Staff of the Army’s professional reading list. He is also the author of Civil-ian in Peace, Soldier in War: The Army National Guard, 1636-2000, considered the definitive history of the Army Guard. Dr. Doubler has appeared on several national me-dia outlets, including The History Channel, CBS News, ABC World News Tonight and National Public Radio. In addition, he has authored over twenty special studies and re-ports for the federal government and is a frequent lecturer.

A great-grandson of Uncle Dave Macon, Mike is currently under contract with a major publisher to complete Dixie Dewdrop: The Un-cle Dave Macon Story, the first, book length biography of the Grand Ole Opry superstar, and is a consultant for the upcoming stage production Walking In Sunlight, a musical of

Uncle Dave’s life. He also heads the Macon-Doubler Fellowship and participates in the leadership of the Uncle Dave Macon Days festival. Mike currently resides in Murfrees-boro, Tennessee.

During the event, attendees will be invited to share stories and memories about Uncle Dave Macon and his music.

1872 YELLOWSTONE PARK ESTABLISHED

President Grant signs the bill creating the na-tion’s first national park at Yellowstone.

Native Americans had lived and hunted in the region that would become Yellowstone for hundreds of years before the first Anglo ex-plorers arrived. Abundant game and mountain streams teaming with fish attracted the Indians to the region, though the awe-inspiring gey-sers, canyons, and gurgling mud pots also fas-cinated them.

John Colter, the famous mountain man, was the first Anglo to travel through the area. After journeying with Lewis and Clark to the Pacif-ic, Colter joined a party of fur trappers to ex-plore the wilderness. In 1807, he explored part of the Yellowstone plateau and returned with fantastic stories of steaming geysers and bub-bling cauldrons. Some doubters accused the mountain man of telling tall tales and jokingly dubbed the area “Colter ’s Hell.”

Before the Civil War, only a handful of trap-pers and hunters ventured into the area, and it remained largely a mystery. In 1869, the Fol-som-Cook expedition made the first formal exploration, followed a year later by a much more thorough reconnaissance by the Wash-burn-Langford-Doane expedition. The key to Yellowstone’s future as a national park, though, was the 1871 exploration under the direction of the government geologist Ferdinand Hayden. Hayden brought along William Jackson, a pi-oneering photographer, and Thomas Moran, a brilliant landscape artist, to make a visual re-cord of the expedition. Their images provided the first visual proof of Yellowstone’s wonders and caught the attention of the U.S. Congress.

Early in 1872, Congress moved to set aside 1,221,773 acres of public land straddling the fu-ture states of Wyoming, Montana, and Idaho as America’s first national park. President Grant signed the bill into law on this day in 1872. The Yellowstone Act of 1872 designated the region as a public “pleasuring-ground,” which would be preserved “from injury or spoilation, of all timber, mineral deposits, natural curiosities, or wonders within.”

For a nation bent on settling and exploiting the West, the creation of Yellowstone was sur-prising. Many congressmen gave it their sup-port simply because they believed the rugged and isolated region was of little economic val-ue. Yet the Yellowstone Act of 1872 set a prec-edent and popularized the idea of preserving sections of the public domain for use as public parks. Congress went on to designate dozens of other national parks, and the idea spread to other nations around the world.

The 2016-17 Tennessee hunting and fishing li-censes are now on sale.

Licenses are available at Tennessee Wildlife Re-sources Agency regional offices, license agents, on the TWRA website, www.tnwildlife.org, and at the TWRA “On the Go App” and charged to a credit card. Licenses may also be ordered by telephone and charged to a credit card by calling 1-888-814-8972.

The new licenses an-nually go on sale each Feb. 18. The 2016-17 li-censes are valid through February 2017. License sales provide the primary funding for the TWRA, which does not receive any funding from the state’s general fund. The 2015-16 licenses expire

Feb. 29. Resident licenses may

be purchased by persons who possess a valid Ten-nessee driver license; per-sons who have lived in Tennessee for 90 consec-utive days with the genu-ine intent of making Ten-nessee their permanent home (but do not hold a driver license in another state); military person-nel on active duty in this state and their immedi-ate families, who reside with them, regardless of resident status; students who are enrolled in a Ten-nessee school, college, or university for at least six months. A Social Secu-rity number is required to purchase a Tennessee hunting or fishing license.

All licenses purchased by credit card will be

charged a processing and handling fee. The fees over the telephone are $7.50 for those li-censes mailed and $6.25 for those not mailed. Through the Internet, charges are $4.25 for those licenses mailed and $3 for self-prints.

To expedite telephone orders, the caller should have ready the name, address, physical de-scription, Social Security number, driver license number, TWRA ID num-ber (if renewal), and credit card number.

Licenses are printed on a special tear-resis-tant, water-proof paper. In case of a lost license, duplicate licenses can be obtained from any TWRA license agent for an $8 fee.
