RESI NEWS Issue 1 RESI NEWS Departure dates; Studio Apartments; 12 noon, Monday 17 th November 2014. Hand in your fob at Reception on check out day. If you are leaving prior to the end of your lease agreement you can return your fob to reception during office hours 8:00am-5:30pm. For weekend departures please return your key to the key drop box located outside building P entrance. It is important that your Fob is tagged with the Studio apartment or room number clearly marked. It is also important that you leave your room in its original state. Charges will be applied where there is damage beyond normal wear and tear. Please note that a late departure fine of $50 per hour applies to all late check-outs. Resi Recipes

Pumpkin, chickpea and zucchini burger Ingredients

• 600g butternut pumpkin, deseeded, peeled, coarsely chopped • 1 x 400g can chickpeas, rinsed, drained • 1 large (about 180g) green zucchini, coarsely grated • 1 egg, lightly whisked • 2 tablespoons plain flour • 1 1/2 teaspoons sweet paprika • 1 teaspoon ground cumin • Salt & freshly ground black pepper • Cooking spray • 1 x 200g container natural yoghurt • 1 x 450g loaf Turkish pide • 2 tablespoons fresh continental parsley leaves

Method 1. Cook pumpkin in a saucepan of boiling water for 10 minutes or until tender. Refresh under cold water. Drain. Place in a bowl with chickpeas and mash. Add zucchini, egg, flour, 1 teaspoon paprika, and cumin. Season with salt and pepper. Stir until combined.

2. Apply cooking spray in a non-stick frying pan over medium-high heat. Spoon pumpkin mixture into pan to make four 8cm patties. Cook for 4 minutes each side or until brown and cooked through.

3. Combine yoghurt and remaining paprika in a bowl.

4. Split pide and cut into 4. Toast and place on plates. Top with a pumpkin patty and paprika yoghurt. Sprinkle with parsley.

Easy tuna risotto bake Ingredients (serves 4)

• Cooking spray • 1 medium brown onion, chopped • 1 1/2 cups arborio rice • 2 cups salt-reduced chicken stock • 410g can cream of celery soup • 425g can tuna in brine, drained, flaked • 1 medium zucchini, trimmed, cut into

matchsticks • 1/2 cup frozen peas • 1/4 cup chopped fresh flat-leaf parsley

leaves • 1/4 cup grated parmesan cheese

Method 1. Preheat oven to 180°C/160°C fan-forced. Heat spray in a large flameproof, ovenproof dish over medium heat. Cook onion, stirring, for 5 minutes or until softened. Add rice. Cook, stirring, for 1 minute. 2. Add stock and soup to rice. Stir well to combine. Cover. Bake, covered, for 15 minutes. Fold through tuna, zucchini and peas. Bake, covered, for 15 minutes or until rice is just tender and liquid has almost all absorbed. 3. Stir in parsley and parmesan. Season with pepper. Serve.
