The Abbotsford Food Bank continues to push towards its goal of raising $600,000 worth of food for those in need this holiday season.

Food Bank director Dave Murray says it’s been a very tough year and even the people who manage to donate are saying that they wish they could do more.

“We are at a record number of people who need help, about 1,000 more than last year, and yet have only managed to raise $40,000 worth of food,” says Murray.

“Financially, we are really behind and I believe it’s a re� ection of the economy, so we just have to pray that people support us as we continue to do the best we can during these times.”

At this time of year, Murray is waiting to see what comes in from local schools that generally hold their food drive right before Christmas break. He is also excited about the Abbotsford Heat Teddy Bear Toss on Dec. 14 that not only raises money, but donates hundreds of teddy bears to families with children over Christmas.

Festive wine options tantalizePractically everything you’re going to read about wine between now and Dec. 24 will be telling you what to serve with your turkey-dinner spread.

But what if you’re not celebrating the season with a turkey dinner?

Fear not. Here are wine options to accompany two other holiday menus.

FONDUEIf you’re gathering people around the table for a fondue with pots of hot oil, then you’ll likely have all sorts of foods to pair with your wine: beef and poultry (some marinated, some not), vegetables, shell� sh, and a variety of dipping sauces—spicy, salty, sweet.

You might think it would be a nightmare to pair that lot with a single wine, but it’s not.

Pick a sparkling wine that is either dry or off-dry. Prosecco, an Italian sparkler, is one of my favourites with food that has been cooked in oil. It is juicy enough to clear away

the coating left by the oil in your mouth, preparing it for the next bite, and usually has enough residual sugar to complement sauces that have a bit of a sweet edge. Plus, you get bubbles.

Prosecco is available at most B.C. liquor stores and rings in at $14 and up, depending on the brand.

PRIME RIBPick a red wine with good tannic structure to go along with your rare roast beef. The protein in the meat will soften the tannins and smooth everything out, allowing you to enjoy the wine and food equally.

Prime rib is our Christmas Eve dinner and this year I will serve LaStella Maestoso 2006 as our premier bottle. I � rst sipped this vintage in 2009. At that time, according to my notes, the wine was rich, tannic and earthy, with aromas and � avours of red and black fruit, sweet spice, herbs and dark chocolate. I can’t wait to taste it now.

The high-calorie food extravaganza often begins in early December and lasts right into the New Year with the Christmas parties and family gatherings. With a little help, you can keep from eating too much during the holidays

1. Don’t go to a party hungry. We tend to eat faster when we are hungry so consider having a healthy snack before going to a party.

2. Pace yourself. Slow down when you’re eating at a party. Taking small bites and fully chewing food helps you digest it better and control your portion sizes.

3. Drinks. Between high calorie drinks and coffee/alcohol that can dehydrate your body, this is an area to really watch. For every one drink, aim to drink one glass of water as it helps keep you hydrated and slows down the calorie consumption.

These days the majority of people will attend a number of holiday dinners between the in-laws and your own extended family. By the time the New Year arrives, most of us are getting tired of eating turkey and stuf� ng. Consider something different this holiday season. I � nd that a crown rack of pork makes a beautiful centerpiece for a dinner. There are a number of amazing local options, from Gelderman Farms Ltd., to Lepp Farm Market to Johnson’s Meats to source quality pork racks. Instead of cranberry sauce, try a peach or apple compote to complement the meat.

FOR THE PEACHES:

• 1 large jar of preserved summer peaches, stones removed, chopped• 2 tbsp extra virgin olive oil • 2 large shallots, sliced thin• 4 sprigs of thyme • 2 cloves garlic minced• 1 cup of white wine • 1 tbsp honey• Salt and pepper to taste

Method:In a medium heavy-bottomed saucepan, sweat the shallots in the olive oil to soften. Add garlic and thyme, saute for 2 minutes more, deglaze with white wine. Add the chopped peaches, honey and salt and pepper to taste. Simmer the compote until fruit has softened and the juices have reduced to a thick consistency. Spoon over roasted and sliced pork.

Serve this with a German or Alsace Riesling or a Viognier wine. The crisp acidity of the Riesling will cut through the meat’s natural oils and the Viognier will pair with the peaches. If you are serving a red wine, make sure it has a light body and low tannins so it doesn’t overpower the white meat.

Wine Pairing

FOR THE PORK:• 1 - 6-bone centre cut fresh pork rack• 12 strips of bacon• Salt and pepper for seasoning

Method:Season the pork rack liberally to taste. Wrap the bacon around and in between the bones. Tie with butcher twine. Place in a pre-heated 365º F oven (convection on if possible). Roast for approximately 40-55 minutes (depending on thickness) until internal temperature reaches 148º-150º degrees. (Pork can have a bit of pinkness and still be safe to eat).

A very merry Santa Claus has travelled all the way from the North Pole to Sevenoaks Shopping Centre, where he will meet with his beloved fans until Christmas Eve. Wearing the traditional Santa out� t, he beckons eager children over tow his plush green and red chair. Once huddled around, he spends a few moments reading each Christmas list aloud, many scrawled in crayon, before a helper elf collects them to bring them to the North Pole, of course.

This particular Santa, who has been visiting the shopping centre for the past � ve years, says that he likes returning because the people of Abbotsford are “very, very nice.”

“The children’s smiles and the joy on their faces lets me know that I’m making them happy, and brings me the most pleasure in return,” he says. “Nobody could have a better job than I do.”

Although there are the occasional tears when it’s time to sit on Santa’s lap, he handles it with a smile, and shares a jolly laugh with the parents.

Naturally, one question on everyone’s mind, is how Santa can possibly make it all around the world to deliver toys in one night? His response is simply, “magic” – something that he says is around us every day.

“You just have to believe, because you never know when a piece of magic is going to touch you. I am so privileged over all these years to experience all the magic that has touched me, and I just want to give it back in any way that I can.”
