Prepare 4 cups of sugar

Cook 1lb of medium grain rice according to the package instructions

Raisins

1 cup of raisins will be sprinkled over the batter before placing in the oven

4 cups of milk

Vanilla Extract

Lemon Flavoring

1 Tablespoon of Lemon Flavoring

Eggs

7 large eggs

Instant Pudding/Pie Filling - Lemon

3.4 oz package of Lemon Instant Pudding/Pie Filling

Butter

2 sticks of butter

Cooking Process

Step 1

• Cook the rice according to package directions.

Step 2

• Once rice is finished cooking remove from the stove, add two sticks of butter and stir to melt the butter.

Step 3

• Add 4 cups of sugar and mix with mixer

• Add 2 tablespoons of Vanilla Flavoring, add 1 tablespoon of lemon flavoring, add 1 small box of lemon flavored instant pudding/pie filling, add about 1 tablespoon of nutmeg (optional) and mix well.

Step 5

• Add 7 eggs and continue to mix well.

Step 6

• Add 4 cups of milk and mix well.

Cooking Process

Step 7

• Pour into pan: 2 aluminum pans(12&3/4 x 10&3/8 x 2&9/16 - inches) or 1 aluminum pan(20&3/4 x 12&13/16 x 3&3/16 - inches)

Step 8

• Sprinkle raisins (optional) into mixture as desired

Step 9

• Place into a preheated oven at 350 degrees and cook for 1 ½ hours or until golden brown.

Family Significance

My mother’s rice pudding is an anticipated desert at family gatherings, particularly, Thanksgiving and Christmas. Its distinct taste causes rice pudding lovers to become long-term fans! It is a recipe passed down to my mother by her mother. The purpose of this presentation is to preserve the recipe and pass it down to future generations.
