CABERNET SAUVIGNON - MERLOT 2005 Appellation: Okanagan Valley (VQA) HARVEST NOTES e naturally low crop yields of the 2005 growing season produced some of our most concentrated reds to date. Careful vineyard management ensured the maturation of both colour and tannins, essential for the structure of a truly great red wine. ese factors combined resulted in optimum maturity and flavour development of both our Merlot and Cabernet Sauvignon. WINEMAKING Our estate Merlot was harvest by hand then crushed and destemmed to bins on October 25th. e estate Cabernet Sauvignon was harvested 11 days later. Carefully selected yeast strains ensured the preservation of unique varietal characteristics of each wine. Both lots were fermented and aged separately. Each variety was aged for 18 months in barrels, before the final blend was put together. e extended barrel aging of each of the components allowed for the full varietal expression to develop, maximizing complexity in the finished wine. e wine was bottled in late April 2006. WINEMAKERS NOTES Colour: Deep crimson. Bouquet: Rich dark cherry and blackberry notes, hints of vanilla, layers of earthy cedar, and eucalyptus. Palate: Full bodied, with rich toasty oak, spicy notes of cinnamon and cloves, a hint of acidity gives structure and vibrancy to the mid-palate, leading to a long smooth finish. Food Pairings: Lamb, steak, hard cheeses.
