    A special case of the Broken "U" is wnat is sometimesknown as a separate center assembly. It is made up of threeone-wall sections on separate walls, all isolated bydoorways. This arrangement is not recommendedbecause I) there is traffic in the 'NOrk triangle, 2) centersare isolated from one another, 3) more counters arerequired because the advantage of multiple use islost 4) doors are likely to contlia with use of appliances,cabinets, or other doors.5.     oL- ~ _I I~The "G" shape kitchen is a new approach gainingpopularity. It is an extension of the "U" shape, with an extrawall for cabinets and appliances. The tighter work triangle ofthe U-shape kitchen is loosened up and expanded, makingthe area comfortable for more people or activities.

    IIsland kitchens are space maximizers. They are most effectivewhen combined with an T'-or "lJ'-shaped kitchen. Thisplan shortens the work triangle making it very manageable.It also gives added storage space, increases work surfacesand can accommodate an informal dining area close towhere the food is prepared. Oftentimes, the rangetop isinstalled in the is land; this may necessitate a specialventilation system built in above the island. The majordisadvantage of an island kitchen is that often the island hasbeen squeezed into a kitchen area where there is notenough square footage of space fo r it. As a result theclearances between the island and the other working areasare too narrow. This inhibits working ease. The minimumclearance for a working island should be 36 to 39 inches.

    Work Triangle ';' l W . :Appliance placement is the first consideration after thekitchen layout is determined. The main appliances - sink,refrigerator, and range - form the work triangle whenconnected with imaginary lines. The appliances are thepoints of the triangle and the paths between them the sides.The total length of this triangle should not be less than 12feet nor more than 22 feet. This size allows for enoughcounter and storage space so work isn't cramped, yetarranges appliances and their related centers so the cookwon't cover great distances during meal preparation.In determining the work triangle, include the built-in range,but not necessarily a built -in oven. A separate built-in ovenalong with extra storage, activ ity space, and traff ic bypassshould be outside the tr iangle's configurat ion. Because moretrips are made between the sink and the range than anyother work center, this leg of the triangle should be theshortest. Recommendations for distances betweenappliances are:

    Sink and range Four to six feetSinkand refrigerator Four to seven feetRange and refrigerator .. Four to nine feet

    Plan adequate aisle space, allowing at least four feetbetween opposite work counters - more, if more peoplewill regularly be working in the kitchen.
