Outdoor dining o� ers exactly what customers are looking for in a summer meal experience—sunshine, warmth, and the casual mood of the season. Patios are humming and customers are relaxed, enjoying good food and good times. If you have outdoor space, set the mood for warm-weather dining with patio tables, � ickering candles, and strings of so� lights. If you don’t, you can bring the summertime experience indoors with menu options that showcase interesting, unusual, and fresh seasonal � avours.

Fresh is the buzzword for summer: fresh ingredients, fresh ideas, and fresh opportunities to capitalize on today’s hottest trends. We’ve focused on solutions that take advantage of all the season’s agricultural bounty, satisfy the summer craving for grilled items, and complement your outdoor patio or deck operation.

Chopped salads. Their many ingredients allow you to layer � avours and textures for a unique and satisfying salad. Simply toss to order any variety of lettuce, along with a garden’s worth of produce, such as beets, avocados, apples, pears, celery, onion, or peppers, with a light vinaigrette. Use cheese or bacon to add a touch of indulgence.

The wedge salad. A classic that’s typically composed of a quarter head of lettuce with blue-cheese dressing, chunks of blue cheese, and bacon. Update and enliven it with a green-goddess dressing, substitute pancetta for bacon, and top it with a shower of crispy fried shallots.

The Italian Caprese. This beautiful, easy-to-share salad—with its sliced tomatoes, fresh mozzarella, fresh herbs, and a drizzle of balsamic vinegar—makes a fresh accompaniment to other dishes.

Salads with heartier greens. Braising greens, such as kale and chard, are making their way into salads. By cutting out the ribs and chopping the leaves, you can serve them as is, or tenderize them by massaging in a bit of olive oil and salt. Just a light sprinkling mixed � rmly into the greens breaks them down slightly and they can be combined with other salads.

Root-vegetable salads. Once reserved primarily for the soup pot, root vegetables (shaved paper-thin on a Japanese mandoline) are now showing up in robust salads. Squash, beets, fennel, turnips and carrots are deliciously paired with hearty grain-salads prepared with faro, quinoa, and barley.

Grilled salads. Add a smoky � avour to hearty greens like radicchio, endive, romaine, and escarole by quick-cooking them on the grill with a drizzle of olive oil. Grill them just long enough to add a light char, but not so long that they get hot.

crave-worthy SaladSRetro salads are enjoying a resurgence, especially when marketed as an appetizer or shared plate. Here are just a few opportunities for creating crave-worthy salads with signature � avours.

5SALADS

SUMMER CHOPPED SALADYield: 1 Serving

Preparation InstructionsPlace romaine lettuce on a large cutting board. Rough chop salad components into ¼" to ½" pieces. Do not overchop. Place romaine lettuce, cucumber, tomato, apple, grapes, and beans in a mixing bowl. Drizzle your choice of dressing over the salad. Mix together using a rubber spatula. Place chopped salad in a chilled serving bowl. Top with pine nuts, avocado, and Parmesan cheese.

the power of Side diSheSOperators have begun to recognize the power of side dishes to o� er variety, enhance perceived plate value, and help diners customize their meals. The days of plain steamed or stir-fried vegetables are over. The major trend in sides is big, bold � avours using better cooking techniques, more creative seasonings, sauces, and overall � avourings.

Make room on the grill for veggies. Caramelizing � ames and a touch of smoke do wonders for vegetables. A lot of vegetables do well on the grill, but some really stand out—asparagus, corn, eggplant, mushrooms, peppers, onions, even cabbage.

Marinated vegetables. Most vegetables cook better and are less likely to stick when marinated � rst or brushed lightly with cooking oil. For added � avour, sprinkle grilled vegetables with fresh herbs.

Grilled fruit. Grilling tends to bring out the natural sugars in fruit, and there are few fruits that can’t be put on the grill. Even those that appear too small or thin can be threaded on skewers, wrapped in foil or put in a grill basket. Ideal fruits for the grill include bananas, mangos, peaches, pineapple, melon and papaya.

Potatoes. Small, redskin potatoes on a skewer are a simple and quick recipe that is sure to complement any choice of grilled meat or chicken. Whole potatoes also can be wrapped in foil and placed directly on the grill. To intensify your grilled baked potato, add a tablespoon of oil and season with salt, pepper, or herbs. O� er specialty varieties such as Yukon gold, purple, or � ngerling.

Preparation InstructionsCut � ngerling potatoes into halves lengthwise and transfer to a mixing bowl. Add ham, celery, carrots, and green onions. Crack the egg into a food processor. Add the lemon juice, vinegar, mustard, and salt and pepper to taste. Drizzle the vegetable oil slowly into the food processor to combine and emulsify. Add the dressing to the potato mixture and mix carefully to avoid mashing the potatoes.

flavour enhancementSPresentations have changed from the days when a sprig of parsley would do for a garnish. Creating a memorable dining experience takes imagination and creativity. Try incorporating rubs, marinades, and compound butters to create a new classic.

Rubs and marinades. A simple rub or marinade can infuse mouthwatering � avour into your beef, chicken, pork, or seafood. Easily added prior to cooking, this has great potential to help you di� erentiate the entrées you serve. Creating your own spice blend is an easy way to create a signature presentation.

Compound butter. These easy-to-make compound butters add a � avour boost to entrées, sauces, and soups, as well as to the breads you serve at the table. Use these � avoured butters to top o� steaks just before serving for added taste and luscious plate appeal. Unique compound butters like horseradish or roasted garlic and herbs can really wow your guests.

Toppings. There recently has been a great deal of emphasis on unique toppings for grilled items, from roasted garlic to bold blue cheese. The trick to a topping is � nding a � avour that will complement and accentuate the natural � avour of meat:

Fresh chevre with herbs—The mild � avour of the goat’s cheese and herbs goes well with a grilled steak.

Mango salsa—Fruit might not be the � rst thing you think of when it comes to steak, but the � avours of mango and � nely chopped red onion, red pepper, and black pepper blend nicely with bold beef � avours. Other fruits to consider are fresh peaches or nectarines.

Bold reductions—Reductions are a simple way to add another layer of interest, again keeping to the principle of complementary � avours. Reductions like garlic and balsamic vinegar, veal jus and red wine, or a port wine reduction teamed with a Stilton topping can create opportunities to be bold with your menu.

9FLAVOUR ENHANCEMENTS

CILANTRO-LIME BUTTERYield: 2 Pounds

Preparation InstructionsPlace the butter and cilantro in the bowl of an electric mixer � tted with a paddle attachment. Set the mixer on medium speed and gradually add the lime juice until mixed thoroughly. Place one-pound portions of butter on sheets of parchment paper and roll into two-inch cylinders. Wrap rolls in plastic to preserve � avour and refrigerate up to one week, or freeze up to six months.

SteakS that sizzleDiners are seeking adventurous ways to enjoy steaks, and the key is to o� er high-quality, value-oriented, craveable items with stepped-up � avours that are extraordinary in some way. The opportunities in steaks right now are in value-cuts and innovative presentations. You want to o� er value to get people in the door.

Steak enhancements. One excellent option is to o� er enhancements that help hold the line on food costs because they allow you to reduce the steak portion by an ounce or two without sacri� cing eye appeal or perceived plate value.

Create specials centered on steaks that are more than just grilled meat. Sauces, butters, and toppings enhance a steak’s � avour and also create something that’s not easy for dining consumers to prepare at home. For example, when a steak comes o� the grill, top it with a thick pat of compound butter that melts over the steak and onto the plate for a � avourful and luxurious sauce.

Steak as a component ingredient. Add excitement to your menu byusing pieces of value cuts of steak for signature dishes such as steaktacos, fajitas, kebabs, salads, and sandwiches. Used in appetizers or as a main course, � avourful thin strips of beef make an excellent item for a share plate. Brush with a spicy Asian chili sauce and garnish with toasted sesame seeds and chopped scallions.

Portion options. There’s an opportunity for creativity using smaller portions that create perceived value while keeping prices in check. If you have a bar menu, o� er smaller portions of big sellers for customers who want to come in for a drink and a quick bite. Or, if you serve an eight-ounce top sirloin on your regular menu, consider a four-ounce option.

Surf and turf. You also can control pro� t margins by pairing seafood and meat selections. Look for more economical pieces of beef, such as the ball tip and shoulder tender, to be paired with seafood.

BRAISED BEEF WITH CUBED BACON Yield: 4 Servings

Preparation InstructionsPreheat the oven to 160˚C (350˚F). In a casserole dish or braising pan, brown the bacon cubes in olive oil. Next, sear the beef well on both sides. Add the celery salt and garlic. Add the tomatoes with juice, tomato paste, demi-glace, onion soup, rosemary and pepper. Mix well. Cook 2 to 3 hours to desired doneness. Remove the meat from the sauce and keep warm. Warm up the sour cream with a little bit of sauce. Add the warm sour cream to the sauce, whisking gently. Season to taste. Garnish the plate with grilled vegetables, top with meat and sauce.

burgerS relaxed, but refinedGo for casual-style gourmet without the fuss. Guests enjoy elevated menu items like gourmet burgers and vegetarian burgers served in a casual setting.

Better burger buns. Since burgers might be shrinking a bit due to the rising cost of meat, attention will turn to what the burger is on—the bun. Instead of o� ering a basic bun, o� er patrons a selection, just as you o� er various types of meat for their burgers. Look out for ciabatta, multi-grain rolls, pretzel buns, and more.

Alternatives to beef. There's no telling what else you'll � nd in a burger these days besides beef, including lamb, pork, turkey, and combinations thereof. The other big news on the burger front is a new wave of high-quality or housemade veggie burgers for a more inclusive approach to dieters, vegetarians, and vegans.

Over-the-top toppings. If bacon is so common that it's considered just another condiment, consider other proteins, like a fried egg, ham or prosciutto, pancetta, deli meats like corned beef or paté to add � avour and premium appeal to the build. Chili burgers are always popular; the theme can be expanded with toppings ranging from macaroni and cheese to french fries or cottage fries.

Preparation InstructionsMix together all ingredients except the bun. Divide into 3 patties and season to taste with salt and pepper. Grill to desired doneness. Serve on a grilled brioche bun with lettuce and tomato and toppings of your choice.

the humble chickenLong regarded as the most versatile protein, chicken has always been a canvas for diverse culinary applications.

Chefs will take chicken to new heights this year, according to Technomic’s 2013 top � ve Canadian restaurant trends. Building o� the burger trend, chefs will turn to the humble chicken as the next workday food primed for a gourmet update. Look for increasing use of high-quality birds raised locally, naturally, and humanely. More chefs will call out the supplier of their poultry on the menu as well.

Flavourful preparations. Other factors that will play into the better chicken trends are highly � avourful ethnic in� uences like piri piri, Peruvian and Mexican. Also look for artisan-minded approaches to cooking methods like rotisserie, frying, and roasting.

Marinated/grilled chicken—This combination produces chicken that is fully � avour-infused and smoky with a satisfying texture. Change up your marinades to add variety to the menu, particularly with global � avours.

Ground dark meat chicken—Use this instead of traditional meats for everything from meatballs to meatloaf to burgers, and nachos.

Churrascos—Marinated grilled chicken that’s especially popular in Spain, Portugal, and Latin America.

Preparation InstructionsSlice the chicken on one side close to the thickest part of the breast, turn the chicken breast over and slice near the thinnest part of the breast. Fold together and wrap with bacon, using skewers to hold it together. Season with Montreal chicken seasoning and bake at 190˚C (375˚F) in the oven until cooked through. Bake the sweet potatoes until so� . Peel and mash, then season with salt and pepper. Hold for service. Blanch the baby carrots in boiling water until just cooked, cool and hold for service. Grill the vegetables in the oilve oil until cooked through. Toss with pesto sauce and hold for service. To assemble place the heated sweet potato mash onto the plate. Top with chicken mignon. Garnish with grilled vegetables and drizzle with sun-dried tomato pesto.

Seafood sellsOn restaurant menus, seafood always sells. Perceived value is high, the � avour is delectable, and most consumers aren’t comfortable preparing it at home. Sales-building opportunities run deep across all segments, but fresh approaches are key to keeping an operation competitive. O� er di� erent types of seafood and prepare it in ways that are out of the ordinary.

Shrimp makes a big splash on menus. Shrimp tops the list of most frequently featured types of seafood in entrées on Canadian menus, according to Technomic MenuMonitor data. This popular crustacean � ts into any restaurant budget. Update shrimp cocktail presentations with a medley of dipping sauces. Use shrimp as a � avour-boosting component for other dishes—as a stu� ng, sauce or topping for a � sh � llet, steak, bruschetta, or crostini.

Salmon. Salmon is o� en viewed as a healthy option because it is rich in protein and healthy fats. Salmon can be prepared in many di� erent ways—broiled, grilled, roasted, seared, or smoked. ABC Country Restaurant, for instance, o� ers a West Coast Wild Salmon Burger featuring a grilled salmon � llet with pesto mayonnaise on a toasted multigrain bun.

Tuna. Tuna is also one of the most widely used types of seafood in entrées on Canadian menus. Varieties of fresh tuna are available seasonally from late spring into early fall, and frozen and canned tuna is o� ered year-round. Like salmon, tuna can be prepared using almost any method. Many of the menued entrées featuring tuna are tuna-salad sandwiches; others are Asian o� erings like sushi and sashimi.

Nontraditional seafood for the grill. Operators are going beyond shrimp or seafood steaks and are grilling to kick up the � avour of items that were traditionally steamed or broiled, such as clams, oysters, crab, and lobster.

SALMON GRAVLAX WITH MAPLE SYRUP & VODKAA Swedish dish consisting of raw salmon, cured in salt, sugar, and dill. Gravlax is usually served as an appetizer, sliced thinly and accompanied by a dill and mustard sauce, with bread or with boiled potatoes.

Preparation InstructionsCombine vodka and maple syrup and pour over the salmon. In a bowl, mix dill, salt, powdered sugar, and pepper together. Evenly cover the salmon � esh. Put one � llet on top of the other, � esh-to-� esh. Tightly wrap in foil, then again in plastic wrap. Refrigerate for 36 to 48 hours. To serve, wipe o� the herbs and spices from the salmon � lets. Pat dry and thinly slice. Serve with crisp bread or crackers, lemon, capers and diced red onion.
