The course identified in this handbook will attract a fee; where a fee applies it has been mentioned in the course brief throughout this handbook. All subject fees are outlined in the Student Resources Handbook, which is available at the office.

Fees will be invoiced in November prior to the commencement of the program. Invoices will be sent home with payment instructions and due dates and must be paid prior to student commencing the program.

Some courses will only proceed if sufficient numbers of students enrol at the time of Subject Selection process.

Graduates from our Programs of Excellence thrive post schooling as life-long learners who are adaptable, critical thinkers, ready to face the challenges of the changing society they live in.

Program Overview The Culinary Program of Excellence course has been developed for students with a strong interest and enthusiasm for food preparation and culinary arts. Corinda State High School’s culinary program is one of the first Culinary Excellence school programs, across Australia. This revolutionary program will enhance the exposure to hospitality and food skills within the industry. Culinary Excellence will directly link to celebrity chefs and media, food stylists, catering production and other high quality culinary arenas.

The Culinary Program of Excellence will build students’ skills and knowledge to gain confidence in a kitchen setting. Basic industry procedures and skills will support the development of design processes, use of technology and engagement with the hospitality industry. By the end of the course, students will be able to design and present a vast scope of seasonal, regional and international cuisines and highlight their skills. Students will be encouraged to formulate modern cuisine inspired by fresh seasonal produce, locally grown on the school farm and market garden.

Computational thinking skills are embedded into the program as students will design and interact with a range of modern digital platforms to help promote, grow and develop their culinary portfolio including exposure to entrepreneurial and technology excellence projects and other digital technologies such as app development, digital menus, expert blogs and ePortfolios.

The students in the Culinary Program of Excellence are challenged to exceed all expectations through experiences in:

Year 7:

Skill building including basic methods of cookery, basic pastry techniques, stocks, sauces and soups, food styling and presentation.

Year 8:

Wider exposure to the culinary industry through international cookery and event planning.

Year 9:

Elaborating on basic skills through exposure to cakes, chocolate, patisseries and breads skills including the exploration of farm to fork principles.

Regular commercial pop-up events and functions to highlight student development to a variety of audiences.

A range of incursions and excursions to support and enrich classroom learning.

The units and program provided are an indication only. The program is tailored from year to year to match the interests and needs of the learners enrolled in the program. The units of work also change depending on the expertise and availability of incursions and excursions available.

Philosophy Students selected into this Program of Excellence will be challenged to advance their skills in a commercial kitchen setting. They will be exposed to a knowledge of the culinary industry, a range of guest chefs, industry delegates and successful food businesses over the course. Using the technology curriculum, they will have the opportunity to investigate options, develop criteria for success, consider sustainability, apply project management skills and create solutions while working safely both independently and collaboratively.

During the program, students will have access to a range of state of the art culinary competition and industry facilities such as the Salute to Excellence Competition.

A Culinary Excellence Student Timetable Students are enrolled in the Culinary Excellence program for three lessons per week. Students in the class study the same core subjects as other Junior Secondary students. They take Culinary Excellence on their elective line.

Culinary Excellence Fees Current course fees are aligned to the fee contribution scheme. The cost for the Culinary Excellence program is $150 for year 7 students. Students will be required to purchase a culex black polo shirt, hat, and apron. The prompt payment of fees enables the program to run efficiently.

Fees are non-refundable. Prices are approximate at time of print.

Pathways into Senior Schooling Students will have the opportunity to continue their development through a range of senior school pathways.

Placement of Students in the Culinary Program of Excellence Applications for the Culinary Program of Excellence should be sent to [email protected]. Students will be accepted on their application and current achievement in effort, academics and behaviour at their current schools.

To remain within this program, students are expected to maintain a ‘C’ standard in achievement, effort and behaviour, as a minimum. Failure to meet this requirement may result in removal from the program.
