This week’s recipe

Fresh pea salad with marinated feta and

lemon

INGREDIENTS

1/2 Lemon

1kg Fresh peas, shelled

1 370g Lemnos full cream feta

1 bunch fresh basil leaves

Salt and freshly ground black pep-

per

METHOD

Step 1 Place the lemon in a small saucepan and cover with plenty of cold water. Cover and bring to the boil over high heat. Reduce heat to medium and simmer, uncovered, for 40 minutes or until the lemon is soft. Drain and set aside to cool. Step 2 Meanwhile, cook the peas in large saucepan of salted boiling water for 7 minutes or until tender. Drain and refresh under cold running water. Set aside until required. Step 3 Use a spoon to scoop out the flesh of the lemon and discard. Finely chop the lemon rind. Step 4 Combine the peas, lemon rind, feta and basil in a large serving bowl. Taste and season with salt and pepper. Gently toss until combined.
