All item numbers beginning with BL belong to the "blisters to fill" range. Just pipe your own chocolate into the blister moulds to get wonderfuldecorations. Using them is a snap. Just fill the moulds with chocolate, let cool for 20 minutes at 6°C and then turn out. Make decorations when you needthem. Half Shells

PCB has developed a unique concept to easily make filled candies.Place the first half-shell blister sheet in the magnetic mould. The second blister sheet is placed in the other half of the mould.Pipe the filling of your choice into the half shells, remove the protective edge cover around the half-shell (no waste/no mess).

Then simply close both sides of the magnetic mould together and leave to cool for 4 hours.This will give you wonderful decorated filled candies. See instructions on p. 308

The desserts presented are all made in the same way: lay down the transfer sheetsat the bottom of the mould. Once hard, frozen 12 Hours at -18°C, the sheets are snapped off immediately.

The sheets are adapted for mould (KT185 & KT187 p. 238) but you can useyour own mould if size is suitable. See technique p. 309

Chocolate StripsThese chocolate strips can be used like the classic rolls. All you need to do is surround the inside of your mould with

this strip and fill in your cream desserts as usual, to obtain an ideal decoration with an incredible thinness. Place in the fridge.

The blisters are easy to use.Just pour one layer of chocolate into the transfer-lined blister tray.

Once the chocolate begins to set (3 to 4 minutes), the excess chocolate is removed and the tray is left to coolat 4 to 6° C for 15 to 20 minutes.

After turning out the halves and sticking the back half to the front, the figure is ready.

5. Nicolas Bernardé created a concept of chocolate tablets which ease the production of the tablets as well as the sales of them.Fill the chocolate in the mould. This same mould can be used also for the packaging.

The idea: deposit the tablet moulds in the support prepared for it.Pour the chocolate in the mould. Shake. After the chocolate is crystallised, add the cover on each tablet.

Procedure: melt the cocoa butter, add some powder colouring and mix with a brush. With this base, you can colour your products.This mixture can be stored: all you need is to melt it before using it again.For your chocolate gun: mix 50% of dark chocolate and 50% of cocoa butter.Add the powder colouring.

To colour sugar, almond pastes…These colouring can also be used with airbrush.Process: dissolve in boiling water or alcohol.

Put a structure sheet at the bottom of your frame. Prepare your entremets. Freeze. Take off the sheet when you take out of the fridge.

Entremets: put your circles on the printed sheet. Fill in. Freeze. When you take out of the fridge, pull off immediately the sheet very quickly.

Advice: After filling the mould with chocolate, put a plastic sheet on the back side. On removal, let the sheet on the chocolate and take it off only when the chocolate isremoved.

Place the coloured side of the transfer sheet on the chocolate plaquette. Write the name or message using a normal pen or a stick. Remove the transfer sheet.

Keep your Décor à Modeler at a temperature of about 25 ° C. Knead it well before use, softening it will make it easier to shape.

Start by taking off 3 cm strip along the edge of the sheet, then gently peel off by slowly pulling the rest of the sheet.

Once upon à time, in the little town of Benfeld in the heart of Alsace, a great event was being planned:an enchanted celebration for pastry lovers. This year it would take place in a magic forestwreathed in frost and snow with fairy-tale animals, magical trees and thousands of snowflakes.

Once upon a time there were six magic pastry chefs: Julien Alvarez, Christelle Brua (Maison Lenôtre -Pastry Chef of Pré Catelan), Cédric Grolet, Vincent Guerlais, Camille Lesecq and Guillaume Mabilleau,

who brought all their talent and passion to bear to make this celebration the bestand most delicious of all.

They did such a good job that joy, beauty and flavour filled the enchanted forest and the news spreadthroughout the world: pastry is magic and brings happiness to all who taste it!
