Board the Black Dagger and set sail on a pirate adventure!

From beginning to end, the action is non-stop as the kids are trans-formed into a Pirate Crew. The adventure starts in Harbour Town, where each little mate gets to put on some pirate gear and learns to talk like a pirate. Once they’ve sworn their allegiance to the boat, they are officially part of the Crew and get to join in the hunt for loot.

We’ve got a map that leads to a sunken treasure chest, but Stinky Pete knows about it too and he stole the key.

The race is on to find Stinky Pete and get the key back before he can steal the treasure for himself. Once we find him, our new Crew is going to have to man the water cannons and blast the stink right off of Pete until he gives us the key!

Fortunately, at Pirates of Hilton Head, we always beat Stinky Pete and every little pirate always gets a handful of the loot. We celebrate the victory with some music and dancing before heading back to port.

PIRATE LINGOEvery little pirate needs to know how to speak like a real bucca-neer. The most important thing for any aspiring pirate to know is that we shout pretty much every-thing! Those who can’t turn up the volume will be insulted with the lowest, most terrible of pirate nicknames, such as Mermaid or Guppy!

Some words you may want to brush up on in advance of your pirate cruise:

AHOY – Pirate for “hello” or “I see something.”

AYE, AYE – Pirate for “Yes, Sir.”

ARRGHH! - Always said with extreme emphasis, this is the one word a pirate simply can’t do without.

The entire experience with the crew of the Black Dagger lasts about an hour and a half. The first fifteen minutes are spent on the dock getting the little pirates ready and then we board the ship and head out on the Calibogue Sound.

Trips leave daily, reservations for all passengers are required. Please arrive at least 20 minutes early to get your pirate name and a tattoo.

Established in 1985, the Coastal Discovery Museum offers hands-on exploration of the Lowcountry‘s diverse cultural heritage and complex natural history with an array of programs, presenta tions, exhibits and tours for all ages.

The last significant parcel of open space on Hilton Head Island, the Coastal Discovery Museum at Honey Horn opened to the public in 2007.

Comprising 68-acres of salt marsh and maritime forests, centuries-old live oaks, open fields and a dozen historic structures, Honey Horn is located at the inter section of Highway 278 and the Cross Island Expressway.

Over its 300-year history, Honey Horn has been home to Indian tribes, indigo and Sea Island cot ton plantations, Gullah families who hunted and farmed the land, a hunt club established by northern busi-nessmen and, starting in 1950, Fred Hack’s private residence and farm.

In the late 1990s, the Town of Hilton Head Island purchased the site and leased it to the Coastal Discovery Museum for 95 years.

Construction of the 6,000-sq.-ft. hunt-ing lodge began in 1859 and, today, known as the Discovery House, is complete with permanent and tempo-rary exhibits, a Kids Zone and gift shop.

Self-guided tours of the property via salt marsh boardwalks and an oys-ter shell trail include the Karen Wertheimer Butterfly Enclosure, a Lowcountry Heritage Garden and a Camellia Garden. Guided History/ Nature Walks & Talks, live animal programs and seasonal kids camps are offered on a regular basis. Off-site tours and programs include the Forts of Port Royal, Beach Discovery, Turtle Talks & Walks and much more.

This historic property is also avail-able to rent for wedding receptions, corporate events and is home to some of the Island’s annual festivals.

EVENTSHISTORIC FORT MITCHEL TOUROn this history tour, you’ll visit a well preserved example of a Civil War Era coastal artillery battery. Learn about what life on Hilton Head Island was like for northern soldiers during the Union occupation from 1861-1866. This guided walking tour addresses the origin, construction and operation of the earthworks and describes day-to-day life in the garrison during the occupation of Hilton Head Island and surrounding islands of the Lowcountry. Thurs. 10-11 a.m. March-November (seasonal) $12 adult; $7 child (ages 7-12). Please, no children under 7.Reservations required. Call or register online.

BIRDING AT PINCKNEY ISLANDTour participants will be guided through a walking tour of Pinckney Island National Wildlife Refuge by an experienced bird watcher. With a combination of natural habitats includ-ing Salt Marsh, Maritime Forest and open fields, the site allows participants to see many different species of birds. Depending on the season, diverse birds can be spotted: Summer Tanager, Eastern Kingbird, Painted Bunting, Yellow-bellied Sapsucker, Egrets and many others. Meets at Pinckney Island. DOLPHINS, DOLPHINS, DOLPHINS, everyone wants to see them! Of course, they are wild animals, so we can’t guarantee to see them on every tour we do, but we are located in one of their favorite feeding spots, so our percentage of seeing them might just be the highest on the Island! Blackbeard, Nick and little baby Stripes are a few of our favorite dolphins. GET OUT ON THE WATER!

For exciting family offshore fishing excursions, shark fishing, dolphin watching trips and hands-on kids cruises, head to South Beach Marina Village in The Sea Pines Resort.

Departing from the closest marina to the ocean, The Drifter is a 60-foot party fishing boat featuring the finest in electronics for safety, navi gation and fish finding. Family-owned and operated for more than 25 years, U.S. Coast Guard-certified captains and a friendly and experienced crew offer personalized service for both novice and experienced fishermen.

Head offshore to a man-made reef where first-time anglers, as well as experienced fishermen, can catch black sea bass, trigger fish, porgies and, occasionally, shark and barracuda. Rods, reels, bait, instruction and fishing licenses are included in these four or five-hour deep sea fishing excursions.

Those who prefer to stay closer to shore can opt up for a Shark Fishing trip. A mere 15 minutes from the marina, the local shark fishing grounds boast black tip, dusky, hammerhead, lemon, sharp-nose, bonnethead and bull sharks. The number of passen gers for this three-hour trip is limited, call for reservations.

Aboard The Gypsy, Atlantic Bottlenose Dolphins are guaran-teed to be seen during a relaxing, narrated tour of the Calibogue Sound.

Home to a large, year-round population of these playful aquatic mammals, watch the dolphins swim and surface alongside this large, stable boat, while you relax in the sun or shade and enjoy a cold drink or snack.

The well-liked and entertaining, “Dolphins & More” cruise is available for all ages. Learn about the salt marsh and marine animals, birds and fish, including dolphins – their feeding habits, how they communicate and how they raise their young – then pull a crab pot and throw a cast net. Regulations Reminders:

Freshwater fishing is prohibited; saltwater fishing and shellfishing are permitted in waters adjacent to the refuge.

All of the refuge’s arche-ological and natural resources are protected. Antique and artifact hunt-ing are not allowed. Do not pick or cut vegetation.

Dogs, cats and other pets are not permitted on the refuge.

Some areas may be closed seasonally to pro-tect wildlife from human disturbance. Such areas are posted “Area Beyond this Sign Closed.”

Safety Reminders:

Drinking water and rest-rooms are not available

on the island.

There are no shelters for visitor pro-tection from the sun or inclement weather.

The graveled road from the park-ing area to Clubhouse Pond is well maintained, but in the summer, overgrowth on the grass trails may conceal snakes, poison ivy, or sting-ing insects. An occasional alligator may be encountered near any pond or on the adjacent trails. Do not molest this reptile in any way. Hikers are urged to stay on the paths at all times. No off-road or off-trail biking is permitted.

Bicyclists should be cautious of loose gravel, potholes, and puddles.

The blue goose is the symbol of the National Wildlife Refuge System.

the ocean to the high water mark. Access to the beach,

how ever, is often private.

The Town of Hilton Head Island provides nine beach

accesses: Alder Lane Beach Access, off South Forest

Beach Drive; Coligny Beach Park, off Coligny Circle;

Driessen Beach Park, at the end of Bradley Beach Road; Chaplin Community Park, off Wm. Hilton Pkwy.; Fish

Parking and Facilities: There are 23 metered spaces at Alder Lane; 54 metered spaces at Folly Field and 13 metered spaces at Burkes Beach Road. The parking fee is a QUARTER

for each 15 minutes.

Additionally, there are 207 spaces at Driessen Beach Park for long-term parking. The fee

is a QUARTER for each 30 minutes during the week.

Parking spaces at Islanders Beach Park are ALWAYS

reserved for annual beach passes. Parking at Driessen

RULES FOR THE ROAD:Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws.

Travel the pathways at speeds that allow for the safety of pedes trians and other users.

Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles.

Please do not ride on roads where a pathway is available.

Please ride single file and keep a safe distance from other bicyclists.

WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you.

Please yield to pedestrians. When resting or stopped, please move off the pathway.

Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flash light. Bicycles must have a red rear reflector and a headlight when biking at night.

When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left.

Bicyclists should always wear a helmet, especially children 12 and under.

Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the pathways.

Be courteous, alert and predictable.

If you’re looking for a bit of adventure on Hilton Head, don’t miss the opportunity to explore the Island’s extensive rivers, tidal creeks and lagoons by sea kayak. After all, much of the area’s wildlife simply cannot be seen from land. Kayaking provides visitors of all ages with the opportunity to get “up close and personal” with the Island’s unique flora and fauna.

Like canoeing, kayaking offers a quiet, non-invasive way to navigate Hilton Head Island’s waterways, offering the opportunity to observe wildlife at close range.

Using a two-bladed paddle, the kayaker sits comfortably in the bot tom or on top of the sea kayak, dipping the paddle to the right and to the left of the boat in a steady, constant motion. You’ll feel a mil lion miles away from the hustle and bustle of everyday life as you observe dolphin, alligators, birds and other wildlife in their wetland home.

On Hilton Head Island, visitors can rent a kayak, take kayaking lessons or go on guided kayaking excur sions. A sunset or sunrise paddle offers the perfect opportuni-ty to see the marsh as the sun shines its burnished light over the surface of the sea. A full moon paddle allows visitors to paddle by the light of a full moon, which is actually quite bright when reflected off of the marsh’s smooth, mirror-like water.

With nearly 60 miles of paved public pathways

and nature trails, in addition to 12 miles of hard-packed, white-sand beaches, one of the best ways to explore Hilton Head Island is on a bicycle.

An activity the whole family can enjoy, area bike rental compa-nies feature not only the stan-dard beach cruiser for all ages and sizes but children’s seats and carriers, tandems, mountain bikes, adult tricycles, carts and cargo trailers, as well.

Rentals are available for a few hours to a few weeks and it’s always a good idea to make reservations ahead of time for the best selection. Most compa-nies offer free Island-wide deliv-ery and pickup and be sure to ask about locks, baskets and helmets.

Plot a route before you leave or pack a map in case you head off the beaten path. Large maps can also be found at various locations along-side the pathways with one side displaying the entire Island and the other providing zoom detail of the area with inter national symbols indicating places of interest.

Motorized vehicles, except electric wheelchairs and emergency

vehi cles, are prohibited on the path ways. Pathway markings include White Diamonds indicat-ing a restricted travel lane – travel with the flow of vehicle traffic; White Stripe and a Stop Sign for a road crossing – stop and look for motorists; Yellow Center Line for two-way traffic – keep to the right; and Several White Diagonal Stripes marking a crosswalk – watch out for others.

It is important to obey all traffic signals and pathway mark ings, especially stop signs.

Travel at a safe speed staying in a single-file line and keeping a safe distance from one another. By law, bicycles must have a sound ing device and you should sound a warning before passing others. Most pathways are not illumi nated at night, so wear light clothing and carry a flash-light and make sure your bike has a headlight and reflectors.

THECRAZY CRAB

The Crazy Crab boasts two pic­turesque water front locations on either end of Hilton Head Island.

This longtime local favorite opened in 1984 on Highway 278 over look-ing Jarvis Creek. Two years later, the second restaurant began serving hungry patrons in Harbour Town.

Destroyed by fire in 1998, the North-end Crazy Crab was rebuilt to twice its original size and now accom mo dates nearly 250 people inside the spacious, nautical-themed restau rant, with another 80 seats outside on the deck.

Open daily for lunch and dinner, both locations offer similar menus featuring made-to-order Lowcountry specialties.

Share a complimentary basket of freshly-made hushpuppies while enjoying a bowl of She Crab Soup, shrimp cocktail, jumbo lump crab cake, oysters on the half shell or Caesar salad.

During lunch, the variety of salads, sandwiches, burgers, seafood plat -ters and daily specials are sure to please every palate. Steps away from the Harbour Town Playground in Sea Pines, with an enclosed outdoor play area and huge indoor saltwater aquarium at Jarvis Creek, kids are always wel come at these casual, family-friendly establish ments.

The special “Minnow’s Menu“ in cludes macaroni & cheese, fried shrimp, chicken fingers and pizza with a selection of locally-made ice cream, homemade Key Lime pie and chocolate mud pie for dessert.

According to co-owner Peter Kenneweg, the secret of the restau -rants’ success is three-fold.

“It’s more than one thing,” he explains. “It’s got to be good food, good service and the price has to be right.”

Decide where you want to eat long before it’s time to leave and call ahead to see if reservations are accepted. PROVIDE DISTRACTIONSWhat might seem like a reason able wait for an adult can be an unbearable eternity for a hungry child. Pack some portable snacks, a few small toys and accept crayons if offered. If there is a wait, spend some time outside exploring the immediate area and looking for lizards, birds, dolphins and other Lowcountry critters – unless there is a lobster tank inside. Please keep in mind, small toys make excellent projec tiles and crayons will melt if left in a hot car.

Method:Caramelize sugar and put in muffin pans. Place on 1/2 sheet pans and water bathe. Blend additional ingredients and place mixture over caramelized sugar in the muffin pans. Bake for 25 minutes at 230 degrees. Flip and bake for another 25 minutes.

As complex as wine tasting seems, it can be boiled down to three things: How does the

wine look, smell and taste? In “wine-speak” that means appearance, aroma/bouquet and taste.

When assessing the appearance of a wine, hold the glass by the stem before a white background. Tilt the glass at a 45˚ angle and observe the depth of color and the way the light catches it. Appearance would be described as cloudy, dull, clear or brilliant.

A white wine should almost sparkle with brilliance and the color can give you an idea of what grapes are used. For instance, oak-aged Chardonnay will have a golden color and Sauvignon Blanc can have a straw color with a slight green tinge.

The appearance of a red wine can reveal a lot about the wine. For instance, you can get an idea of wine’s age by noting the color of the wine’s rim when you tilt the glass. If the rim reveals a purple tint, this indi-cates youth, while an orange to brown tint may indicate the wine's maturity.

Now onto the aroma and bouquet. There actually is a difference between the aroma and the bouquet of wine.

An aroma is the smell directly from the grape. Bouquet is the smell created by the wine-making process or fermentation. When you smell fruit in wine, that is the aroma. A yeasty, oak smell is the bouquet.

Gently swirl the wine to release the

aromas by coating the inside of your glass. After a few swirls, put your nose just inside the rim where the aromas are most concentrated and take a couple sharp sniffs. The aromas are the most important part of wine, since smell is an integral part of taste. For the most part, descriptions of the aroma and bou quet can be described as floral, fruity, vegetal, spicy, woody, nutty, caramel ized or abnormal/unpleasant.

The taste, as well as the aftertaste, are the last things you would observe. Take a small sip of wine and hold it in your mouth – don’t swallow yet. Move the wine around your mouth and feel its weight, or body. How thick, heavy or juicy does the wine seem? This is your first clue to the wine’s body. Concentrate as your tongue deciphers the flavors. After about 30 seconds, spit or swal-low the wine.

Also note the wine’s finish (aftertaste); it may be brief or it may linger. The aftertaste is important because it is your final impression of the wine. Note whether it was balanced or unbalanced (too much sugar, acid, tannin or alcohol). Note whether the aftertaste was pleasant or un- pleasant; and, finally, note if the finish was long or short. Use the following rule of thumb: more than 8 seconds is very long; 5-7 seconds is long; 4-5 seconds is medium; and under 3 sec-onds is a short finish.

The best way to become a good wine taster is by practicing. Tasting wines in flights is a great way to hone your skills. A wine flight is when several wines are served at the same time, usually with a theme, so you can compare and contrast them.

Barbeque is serious business in South Carolina.

The Palmetto State is the only place in the country home to all four saucing traditions – vine gar and pepper, mustard, light tomato and heavy tomato – and the process of slow-cook-ing pork began right here in Beaufort County.

“Barbeque is always properly reserved for pork,” notes Lake E. High, Jr., the "go to" man of the South Carolina Barbeque Association.“ People were eat-ing barbeque in South Carolina even before that name had been applied to the area by the English.”

In 1566, Spanish colonists brought pigs when they settled Santa Elena, on nearby Parris Island. Local Native Americans showed them how to slow cook the meat with smoke and a new Southern tradition was born.

The “original” barbeque sauce – vinegar and pepper – was pre pared by Scottish families who settled in the Lowcountry. This sauce dates back hundreds of years and is still found along the coastal plain.

German immigrants, who began arriving in South Carolina around 1730, brought their traditional farming meth-ods, religion and fondness for mustard, which moved with them as they settled along Upcountry and Lowcountry riv-

ers. Today, Bessinger, Shealy, Hite, Sweatman and Sikes are just a few of the many German families renowned for their mus-tard-based barbeque.

Around 1900, as ketchup became a widely available condi ment, the light tomato sauce was born. Usually a com-bination of vinegar and pepper with ketchup, this sauce is most often associ ated with North Carolina barbeque, although it is popu lar in parts of South Carolina.

Relatively new, heavy tomato sauce is the one most Americans associate with barbeque.

“While a heavy tomato sauce is a legitimate type of sauce, it is almost always used by the aver-age American incorrectly,“ explains High. “That is, slath-ered over various meats that have been grilled over high heat.”

HOW HILTON HEAD GOT ITS NAME

Many people here on a first visit make a basic error in assuming that somehow the name Hilton Head has to do with the Hilton hotel chain. While the late hotel magnate, Conrad Hilton, may have been related to the man from whom the name sprang, it is certain that he was unaware of the Island’s existence during most of his lifetime.

Hilton Head gained its name from some notes on navigation made by the British explorer and seaman, Capt. William Hilton, who investigated the lower coast of South Carolina in 1665 for a group of Barbadian planters who were interested in expanding their New World holdings.

His sighting of a particular bluff or “headland” as a way of finding the entrance to Port Royal Sound while still at sea was noted in his papers and the name of that headland soon applied to the entire island.
